銅鑼灣最近新開了一間日本料理餐廳  「山 YAMA 」,日系裝潢非常雅致舒適,一整排落地玻璃,氛圍感不錯。是夜安排在吧枱位置,可以欣賞到師傅的料理過程。餐廳提供六款分別以雞、黑豚、和牛、海之幸、魚和蟹為主題的 omakase,價錢由$688至$1388 不等,我們這次就點了以特選毛蟹、松葉蟹、鱈場蟹、花咲蟹等入饌的蟹omakase 🦀✨  🔸先付け 毛蟹柚子啫喱,師傅在蟹肉上面了金箔作點綴,賣相💯!啖啖嫩白蟹肉,加上酸甜的柚子啫喱,開胃之選  🔹前菜 雲丹明太子白海老,底下放了片檸檬增添一抹清新香氣🍋 富山白蝦肉質甜糯,配上雲丹及鱈魚子,風味十足  🔸吸い物 蟹出汁 🍲  大廚將蟹殼焗製磨成蟹粉,再倒入虹吸式咖啡壺中烹調,加入利尻昆布及松葉蟹肉煮得滲透入味,喝一口溫熱的蟹湯,滿嘴都是細膩的鮮甜味道~  🔸お造り 季節刺身三點 🐟有帆立貝、金目鯛和牡丹蝦。上菜時仙氣般的白煙徐徐流淌下來,真的是視覺和味覺的享受✨  🔹揚げ物 釀上海蟹蓋蠻特別的!用上大閘蟹及松葉蟹,釀入甘旬和洋蔥等,裹上麵包糠再炸,配搭蟹肉芡汁,味道濃郁  🔸箸休め 吃完濃味的料理,就送上季節雪葩清清味蕾。這次是酸爽的紅桑
