說起中菜的款式,的確是五花百門,要品嚐的菜式很多,前陣子友人就為我慶生,來到遙遠的天際萬豪酒店。雖然位置有點遠,但交通其實很方便,一程機鐵就到了,加上環境帶點清幽,暫時脫離繁囂也不錯。 來到萬豪中菜廳,有一種似曾相識的感覺,可能每隔幾年我也要到博覽館工作,而工作過後會到這兒享受一頓飽餐,有點回憶。而現在餐廳正做著「鄉土濃情客家菜」的推廣,令小弟更有多一點懷舊的思念。 相信說起客家菜,不能不提【梅菜扣肉】這味菜式,它不但是客家招牌菜,更是每家每戶客家人喜愛的菜式。可是由於做法繁複,加上較為油膩不健康,很多現代人也敬而遠之,但為食的我又怎會錯過呢?做法會先將肥瘦相間的五花腩泡油炸過,將之與梅菜同蒸,令腩肉肥油盡去,肉質變得鬆化,而油脂混合梅菜香淋在白飯上,一絕也,同時由於梅菜有分咸與甜,這兒調得比例,吃來香氣撲鼻,濃香惹味,實在好吃。 回到頭盤的【鹵水牛脷拼煙燻素鵝】,平常吃到的是鹵水豬脷,不過改用牛脷卻得到更佳的效果,軟綿腍滑,入味非常,與帶點脆口的煙燻素鵝相映成趣,縷縷的煙燻香氣圍繞著口腔,美味。 接著的【客家算盤子】的賣相精緻,以竹纖串起炒蝦仁、茨菇及蒿筍,擺放整齊在木

接著的【客家算盤子】的賣相精緻,以竹纖串起炒蝦仁、茨菇及蒿筍,擺放整齊在木盒內,貌似算盤,寓詫精打細算,配合茨菇添丁的寓意,是一道非常有意頭的菜式。就味道方面,由於用了南乳汁來炒,十分惹味,爽口的口感也帶來了滋味。

此時,來一道湯羹的【月滿西樓】,師父指出是一道意境菜,要用點想像力去幻想一下鵪鶉蛋黃好比月亮,映照在湖泊內,我們一眾人士則坐在西樓上賞月,有點詩情畫意。用料方面,除了鵪鶉蛋外,還有燒鵝肉、筍絲及蛋花等等,味道不錯。

可是,再來一道【蕎菜炒肉絲】,在別人眼裡只是一盤簡單的韭黃炒肉絲,可是在小弟的媽媽眼中卻另有一番意境,就是相當爽口,蕎菜並非現今時令的菜種,此時能找到這種菜,真是難能可貴。

【客家釀豆腐】是每家客家人也會弄的菜式,簡簡單單將魚肉釀在豆腐上煎香,吃的是豆腐的香。配合以豆醬來炒的時蔬,吃的是醃豆的香,在種種豆香下,形成了這道菜式。

另一重頭戲的【客家咸湯丸】送來了,吃以為只是將丸子搓成粉紅色及放在咸湯內就是師父的得意技倆,師父用心的將肉餡包進混了紅菜頭汁的粉糰內搓成,湯丸煙煙韌韌,以惹味的湯頭來配合,令人回味。

在上【陳皮紅豆沙】前,友人預備了驚喜給小弟,就是外型精緻的壽桃公仔給我,每個做型都不同,令我十分感動。吃過壽桃及接受祝福後,就享用了用料充足的紅豆沙,陳皮的香味名清幽,為是晚劃上完美的句號。
