今次試咗間隱世潮州菜館,專登叫咗幾款傳統嘢試真啲。 ——————🐽 老菜脯豬肚湯湯底重重胡椒香,一入口就知係陳年老菜脯嘅功勞,甘香唔澀喉。豬肚炆得淋得嚟保留少少咬口,最驚喜係完全冇臊味,落足心機處理。 🐽 青蒜炒鹹肉鹹肉切得透薄,半肥瘦比例啱啱好,醃得夠鹹香但唔死鹹。青蒜炒到斷生,爽脆得嚟帶少少甜味,食完碟底唔見油浸🐽 冬菜蒸九肚魚魚肉滑到夾起嚟要就住力。冬菜碎鋪面吊出鮮味,底下既粉絲吸曬d魚準,蒸嘅時間掌握得準,魚骨都軟到食得,老人家都啱食。🐽 芋頭炒香飯芋頭粒外層微微焦香,咬落粉糯得嚟唔散。飯粒分明唔黐埋,睇得出用隔夜飯炒嘅功架。淡黃色嘅飯身應該落咗少少鹹蛋黃吊味,香口得嚟唔油膩。
