Born and Bred是首爾韓牛燒肉店中,其中一間最Descent的, 憑着主理人出身於韓牛供應商的背景, 提供著更高質素的韓牛,常常說韓牛的肉質介乎和牛和美國牛中間,所以烹調的手法可以更多元化,除了燒肉,也可以放湯,所以這家Born and Bred在香港的分店,提供的不是燒肉,而是牛腩麵,是要動輒百多元的清湯韓牛牛腩麵,相比起九記更為天價。午市的清湯牛腩麵配上沙律和甜品芝麻卷,作為韓國人竟然對芝麻卷有興趣,甚至將它放在自己的菜單,這也是主理人對香港的欣賞之情,芝麻卷不會太甜,略嫌芝麻香味比較單薄,整體味道比較淡然。主打的清湯韓牛牛腩麵,湯底清澈,沒有太多油花,味道就是清純的牛骨高湯味,蘿蔔腍而無渣,麵身用上香港常見的銀絲麵,沒有過濕,整體表現合格。牛腩看起來有點乾,但吃起來相當腍,而且上層的皮和脂肪也是夠彈和香,吃得算是舒服,但只有四大塊的牛腩,吃完不夠飽,性價比差了一點。Born and Bred, a renowned Seoul-based Korean beef restaurant, offers premium Hanwoo beef thanks to its o
