To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 店內以日式簡約為主,有張大吧枱,店員服務殷勤。麻雀雖小五臟俱全,師傅正忙碌地為客人準備食材。我哋揀咗14貫壽司週年祭有特價。已包前菜、壽司、湯和甜品。前菜三貫粟米蓉大黃芋蓉加醋水雲日本支豆要順時針食,由淡味食到濃味。壽司開動了鮮帶子好鮮味,清甜。伊左木壽司滿滿油脂的香,鮮味清甜。水八爪魚比較煙韌, 上面有青檸汁,酸酸地。深海池魚軟滑得來有趙口。赤背上面又有柚子皮,食到清香,魚質爽脆。文革魷魚炙燒過更爽脆,甜甜地,有份焦香。間白魚魚味比較濃,上面有麵豉醬,更添惹味。牡丹蝦飯撈左燒過的蝦膏,多咗份焦香同層次感,好特別。赤身吞拿魚浸咗醬油令魚質滑啲,魚味濃好鮮味。超拖羅在中間位置,呈漸變色。食到魚味之餘又有魚油。北海道馬糞海膽超級新鮮,份量超多滿足。銀鱈魚炙燒過,油脂滲出嚟好香好滑,而外皮有啲咬口鯖魚有塊透明昆布搭在面頭,再用紫菜墊住,賣相特別。黑陸魚皮比較韌,所以燒一燒會易啲入口,也有魚油滲出,加咗紫蘇葉更加香濃。麵豉湯抹茶奶凍黑豆經煮過甜甜地,奶凍相當軟滑,抹茶是師傅自家的,苦澀奶凍的甜互相中和。
