Mr. Bing is opened by some Western Guy who adores Chinese food and can speak really fluent Mandarin.. .老金北京煎餅 $30 - Original Jian Bing The Hoisin sauce was quite Sweet and there was an apparent Chinese Rose Wine which overwhelmed. On the other positive side ... The crepe base was done well and the inner crispy layers were decent. It could have had more cilantro, chili paste and of course more eggs to follow the original. . The Beijing 煎餅 are virtually equal to 吉林餡餅. Both of these can also be roundish rather than squarish.

It was obvious to me that the base sauce here was too sweet and rose wine based compared to the original versions. I mean I still liked the mixture between crispiness and dough crepe texture enough, yet it could have been more eggy within. Customers need to pay extra for their eggs, it is just so wrong when you aren't providing enough in the 1st place at all..

Mouth Feel was great. But Taste wise after talking to the owner, please don't be so defensive but we know what we are saying even if HongKongers aren't part of Mainland China. Original Beijing bings are more rounder in shape and quite a lot more eggier, they are also less sweeter yo ! Here it has room for some further improvement but getting there
