To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. I have a lot of memories at Cafe 100% , including one which was my first time trying a bowl of mixian I liked when I was young , which was at their Ming Tak Estate branch a long time ago .  One day, I decided to try the same bowl of mixian again and see if the taste had changed a lot already or not .  I went to their branch at Nan Fung Plaza, and we were quickly seated at a sofa seat as it was teatime during a weekday !Upon being served, I already noticed a big difference: the bowl was no longer

Upon being served, I already noticed a big difference: the bowl was no longer the deep, black bowl for noodles 
, but a much more shallow hybrid of a bowl and a plate 
...  I prefer the old more as it gave more of eating a bowl of noodles at a cha chaan teng feeling; this new one doesn't have that much of that feel anymore 
.

Anyway, I dug in 
.  The broth was still the same, milky white with a bit of fish taste 
, and the fish cakes were still in a triangle shape, as I remember 
, and they were pretty chewy, too, with a fish taste, good 
!  The mixian, however, let me down a lot 
.  Every strand of noodle was broken up and, therefore, very short and hard to eat 
, and what made it even worse was that it was so soft with no chewy texture at all 
Making it feel like baby food!  Not good at all 
!

It's pretty challenging bearing to see the place which brought me into my journey with mixian 
, fall like this.  Sure, the fish cakes are still up to standard 
, but the mixian, the main character, has gone wrong, which ruins everything 
!  I will soon go to another branch of Cafe 100% of Tao Yuen to see if it's just this specific shop's problem or not
