Restaurant: Fat Belly Butcher & Gin House

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 之前有網媒推薦這間大埔扒房,說是由前酒店總廚親自操刀開鋪,再配合外國訂製的燒烤焗爐。咁大陣仗當然要試一試這間隱世扒房的手勢。在店的中央有一個放滿牛扒的冷櫃,是每天即日解凍的。供客人親自選購自己心儀的牛肉。而我選擇了一塊Dry-aged 45days striploin 325g,是店主的今日推介。Dry-aged 的牛扒比即時解凍的多一種味道,平時食medium rare 會有一點點血的味道。而Dry-aged 就將那種味道轉化為獨特的香味。這個橫切面就看得出肉的顏色變得更鮮紅色,肉質都比未dry aged的更鬆軟。Black Angus Prime Rib Eye 345g black Angus 的肉眼就比dry aged 的那塊肉質嫩一點。Beef Fat Fries with Garlic Spice and Herbs 這個是薯條,即炸幾好食。如果硬要說用到牛脂肪炸,我又食不到牛脂的香味。不過有三種不同的芥末醬可選。Mini Beef Rice好像是用了切牛時的一些損耗位置,重新煮一個飯出來,是一個牛飯,不過不失。Mixed Green Salad草就沒什麼好說。Soup o
