It is all about being healthy and eating light these days.Verde Mar has been whipping up healthy and vegetarian dishes every since the owner started yoga.They now serve omnipork as well as other tasty vegetarian dishes.I was there recently for the cactus, the only place you can get it in Hong Kong.The cactus is low in fat and high in fibre.It only needs a little lime juice and salt to bring out the flavours.The texture is a little bit like green bell pepper with some sliminess like okra.Next was

Next was the Mexican style prawn cocktail, where you put all the freshly chopped coriander, onions, cucumber, tomatoes, avocado etc in the glass. You eat this with the crispy tortilla chips.
This is definitely a great dish for summer which is similar to gazpacho but Mexican style.
Next was the [omnipork Quesadilla] Quesadillas are delicious and the omnipork and vegan cheese made it more satisfying especially the vegan cheese which had this awesome mochi texture which goes really well with their creamy guacamole.
For desserts, there is avocado icecream or avocado pancakes.
Both vegan friendly.
I had the Avocado Apple Pancake because it was really cute.
The pancakes are eggless, made with buttermilk so they were fluffy.
Each layer was filled with avocado mousse, fresh avocados and sliced apples.
The pancakes weren't too sweet as the chef has mixed a whole avocado in the mixture and reduced the amount of sugar and butter in the recipe.
Definitely healthy and worth recommending.
