It is a traditional Basque dish featuring an unusual part of the fish - lower part of the Cod’s chin, literally the throat. The cod’s chin is fatty and have several contrasting textures, a bit chewy, springy, and somewhat soft and gelatinous. Pair it with potato, bonito and German Spaetzle (德式麵糰) making the dish full of hearty flavours.

Scooped out the beautiful marrow and spread it onto the bread, this extremely unctuous yet decadent treat can get a bit messy, but the interplay of crisp and buttery, rich and savoury was totally irresistible!
