The pork trotter was fall-apart tender, it’s ultra succulent, fatty, literally fell off the bone when I took a bite, so much collagen. Served with a thick sweet-savoury gravy that’s wonderful to pair with rice or buns. It’s definitely one of my comforting favourite.
