I found this place by accident (it is slightly hidden, downstairs next to a German bar Bier Garten opposite K11) and it was awesome! Seriously, this is the best German restaurant in Hong Kong. Inside the atmosphere is interesting and fun, complete with giant sized beer barrels (shipped over from Germany). We got one of the sausage platters (there are three different platters to choose from) and truthfully, I haven't had sausages this good anywhere outside of Germany. Odd but sausages are the area all other German restaurants fall down (surprisingly terrible experience with sausages at Brozeit for example, do not even talk to me about Ludwigs). Also had the herb crusted lamb rack, crispy and perfectly cooked. Finally, the snails. Delicious if you like that sort of thing. You'll notice this is German plus international, but it's all pulled off to perfection. Service was friendly and attentive, I was asked if I spoke German a few times too so double plus if you are actually German. Final thing to note, they serve steins (1 liter jug-glasses) of beer and as mentioned, you can start/finish in the great bar upstairs. A hidden treasure in TST, worth the trip from HK island.
