Sushi sase is a high end sushi joint in central. It's a small restaurant with simple decor, but the food is amazing! It was my friend's birthday, so we decided to splurge a little came here for lunch. We both got the Hokkaido sushi set ($400).  The meal also comes with miso soup, and a salad. First item that came out with our set was this uni/salmon roe with rice! This huge bowl of rice was fully covered with delicious uni! The uni are very fresh because we see the chef cleaning them in clean water right before serving it to us. The chef explained how uni preserved in salt water is better than the ones stacked on a plate because those are chemically preserved. So at sushi sase, they only use the best quality imgredients.

Then 6 pieces of sushi was prepared separately and served to us one by one. We had a wild salmon, snapper, hamachi, mackerel, fresh crab meat, and house-made tamago. What makes these sushi so different is that the chef usually adds a unique sauce or some condiment that compliments each fish so well and brings the best flavors out.

Then we were served with a udon soup to end the meal. The udon was simple, but the noodle was smooth and the soup was so delicious that you can drink the whole thing along with the udon.

I love how sushi sase gives you an intimate environment for you to see the chefs at work as you eat your meal. I also like how the chef will make your sushi freshly as you finish the sushi piece by piece. The service is also very good here. Although the price is on the higher end, I definitely feel that sushi sase makes your money worth it. It is a must that I will return to try out the omakase with chef table!

相比其他日本料理,鮨佐瀬的午餐價錢,不大便宜,$480一客十二貫Deluxe sushi set,另外還有Omakase,$1450,中午時段沒可能吃那麼貴啦。

首先奉上熱辣辣,香滑的茶碗蒸,幸好這天不是賽馬日,吃著銀杏的話,那就弊傢伙了。

正所謂食之有序,尤其是吃壽司,由淡至濃是常識吧,若然一開始便來個海膽,只證明你是門外漢。魶魚是十二貫之先頭部隊,魚肉的纖維細嫩,入口帶有彈性,本身魚肉鮮美已很突出,加上點點青檸汁,更添爽朗氣息。

接著便起雙飛,深海池魚充滿油潤的脂香,加上點點醬油,味道更臻鮮美。喜之次與池魚形式強烈對比,後者剛,前者柔。喜之次當然不及池魚般肥美,肉質來得更幼細。

中場時間,店員奉上麵豉湯暖場,清而不混囑,鹹鮮中帶昆布清香。

通常在日本壽司店,見到有三文魚壽司的話,會忍不住搖頭唉一聲。如果是來自北海道野生的三文魚呢?用醬油醃過的北海道野生三文魚,鹹甜之間亦阻止不了魚肉的鮮甜與肥美,很久也沒試過那麼美的三文魚刺身料,妙極。

用醬油醃的吞拿魚,鹹鮮見柔軟,拖羅很肥美,魚油在口內瞬間爆發,結果,吃得忘形,忘了拍照。夏天是吃鰻魚的季節,此海饅顯得特別肥美,細嫩的肉質,惹味的燒汁,在口裡縱橫交錯,剩下的,只有回味。

甜蛋是名乎其實的甜,蛋身與少女肌膚一樣,滑得彈破,無須用上甚麼SKII之類。不得不提的壽司醋飯,握得緊而不死實,感覺鬆軟,與海鮮們水乳交融,愛到最後也不分離。

普羅港人最愛將山葵與醬油混在一起,用來沾壽司,在這等壽司店,此舉還是不必要,皆因太過失禮。
爽滑的稻庭烏冬,掛上清鮮的湯汁,雪幾聲便吃得碗底朝天。

絕對稱得上滿足的一個中午,埋單時問問店員,晚市吃Omakase的價錢如何,原來大約千五元一位,不連酒水,如果想佐瀨師傅親自主理的話,更要提早預訂,因為他的檔期,實在非常緊張。

千多元一個頭的消費,吃一頓正宗的壽司料理,並非甚麼大不了,而且,是鮨佐瀬的級數,看來我要省下買球鞋的錢,找個晚上再與佐瀬師傅浪漫一下。

Sushi Sase has a very discreet entrance and you cannot expect anything from the outside, including quality and price!Lucky it was a Saturday lunch only and I can at least select the cheapest lunch set, that is HK$480+.  Well, I have to say it's very expensive but once for awhile, just a treat for myself.The 12 piece sushi set include a variety of fish and all the seafood quality is superb.  But you have to be careful about which sushi chef made your sushi.  The first time I had the Japanese lady

The 12 piece sushi set include a variety of fish and all the seafood quality is superb.  But you have to be careful about which sushi chef made your sushi.  The first time I had the Japanese lady who made my sushi and the rice was intact while the 2nd time I had a Chinese chef who made the sushi, the rice was a bit loose.

One of the sushi was wild salmon and I usaully do not eat salmon.  But their salmon tastes unusual as it is soft and the fatty party is not obvious.

The best is the toro and uni sushi.  The fat on the toro is evenly spread and the texture is very soft and melt in the mouth.  Although the uni isn't taken out from the shell but from a frozen box, the quality is still very good, fresh and with the smell of sea water.  There are a lot of times lower quality uni is stinky.

While many decent mid-priced Japanese restaurants can be found in Hong Kong, our Japanese fine-dining scene still lags far behind that of Tokyo. There are only a handful of upmarket Japanese restaurants that are truly comparable to those in Japan, and Sushi Sase is widely regarded to be one of them.
Sushi Sase is a smart, understated Japanese restaurant on Hollywood Road that specialises in kaiseki cuisine. Named after Chef Sase, a courteous, knowledgeable chef who was the former head chef at Sapporo’s Sushi Zen, the restaurant has a simplistic and neat interior, decorated with light wood and bamboo surfaces, which resembles sushi restaurants in Japan; a large open kitchen gives the small restaurant a more spacious feeling.
As Chef Sase is not at the restaurant everyday, it is worth asking for Chef Sase's Table when you make the booking. While the other chefs at the restaurant are accomplished, I would prefer having food personally prepared by Chef Sase himself if I am paying the same price for it anyway. The lunch sets at a lot of Japanese restaurants in Hong Kong are very reasonably priced in comparison with the dinner menu - the reason is that the Japanese raw fish wholesalers in Hong Kong only deliver the fish to Japanese restaurants in the afternoon, which means that the fish that you eat during lunch is almost always delivered the day before. Sushi Sase, however, source their sashimi directly from Japan, therefore the fish is impeccably fresh even at lunch time. This is also the reason why they are able to serve a Chef Omakase Course ($1,450) and a Mini Kaiseki Course ($600) at lunch, whereas the majority of the other Japanese restaurants only serve Kaiseki at dinner.
I went there for lunch with my friends, and we each ordered a Deluxe Sushi Set ($480), which comprised of 12 pieces of sushi freshly made right in front of us. Even though the prices seem hefty, the top-notch food was worth every single penny!

Even though Sushi Sase is by no means perfect, especially considering the level of prices that it charges, the restaurant certainly has a level of finesse and precision that distinguishes it from most other high-end Japanese restaurants in Hong Kong. With a sleek setting, attentive service and a touch of its own class, Sushi Sase is one of my top recommended Japanese restaurants in Hong Kong.

海膽刺身,可能吃了左口魚&吞拿魚腩後,立即顯得非常平凡,但其實都是非常creamy而且鮮甜的。

鰹魚刺身!由於本人著實太喜歡吃鰹魚剌身,所以先吃了一片才記起要拍照
非常非常的美味!鰹魚是魚味比較重的魚,帶有獨特的甘香,而且是季節性的,並不常見。能在生日的時候吃到,真的很開心!

八爪魚是漬物,味道在鹹之中有一點酸甜,很有趣,這個味道也跟八爪魚四邊彈牙有嚼勁而中間柔軟多汁的質感非常配。

黑松露蒸蛋以及其他的食物,不過不失,也沒有什麼驚喜。

When we got there, no body was there and we were sitted at the sushi counter. (Dining at the Sushi Counter is a very good dining experience) Times went by and more and more people were here. I am actually surprised that there were walk-ins, and they could not come in because all table

I thought Sushi Shin in Tin Hau is already good enough ! Surprisingly, Sushi Sase is even way better than other Sushi restaurants.

We reserved the table at noon. When we got there, no body was there and we were sitted at the sushi counter. (Dining at the Sushi Counter is a very good dining experience) Times went by and more and more people were here. I am actually surprised that there were walk-ins, and they could not come in because all tables were booked. (So, RMB to reserve)

For their lunch sets, there are 6 optins. The Chef Omakase Course (Sushi Chef picked the best sashimi, suchi for you) is a WOW price and we afriad that we cannot finish all the yummies.So, we ordered Deluxe Sushi Set and Hokkaido Set!

Firstly, we were served with Miso Soup and steamed EGG ! The steamed EGG is so good ! Its steamed with right amount of time, not too watery nor dry.
Then, for Hokkaido set, I got the SASHIMI on SUHI RICE- " Salmon Roe/Uni ** HIGHLGHT of the Meal!

The UNI and Salmon Roes are were so fresh! =D You can taste the freshness by just smelling them. (they are from Japan, sushi chef mentioned exactly where they are from), but I forgot.

After the sushi bowl, there were pieces of eggs, and 6 pcs of sushi.
I ordered an extra of Yaki Toro !! Its so good !
There were hints of fresh grapefruit on top of the Yaki-toro sushi, it gave a sense of freshness !

CANNOT get enough !!-- we ordered desserts ! Usual jap ice cream like sesame...
But, the Chees Ice-cream was quite interesting, tastes of cheese and milk!
It was served with a tomato and some jellly ! Quite intersting combinations in a Jap Restaurant!

前時已知需預定所以一星期已定位當天是星期六,所試的魚生十分新鮮及美味,值得一試,價格約為每位干多元不連清酒,亦屬正常^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^

由於需要長期訂位的關係, 不是特別日子也不會那麼有心, 今次多謝有心的友人AW預早三訂, 訂位加訂師傅訂自己, 一次過滿足我三個願望。
「鮨佐 瀨」位於中環荷里活道, 店內裝修以木為主調, 壽司枱以檜木製成, L型的壽司枱有十多個座位, 食材都放在揭蓋的冰盒, 沒有小雪櫃的阻隔, 讓客人可以欣賞師傅的刀藝。

晚餐有三種, Chef Omakase ($1480), Sushi ,Kaiseki Course ($1400), Omakase Sushi ($1080), 明碼實價。我們選的是Chef Omakase,有前菜, 刺身, 熱食, 壽司, 湯, 甜品

這裡的食材是由北海道來的, 之前看過介紹, 令人振奮的食物有海膽和三文魚子, 但由於兩者不是我的朋友, 沒辦法之中也要選擇放棄。
前菜是梅酒蕃茄,甜酸中和, 好吃; 不吃海膽, 換來鮑魚, 鮑魚之中我最愛就會日本的汁煮鮑魚, 又腍, 又有鮑魚味, 好吃;八爪魚, 是鬚的部份, 厚切,鬚會這樣粗, 可想而知那條八爪魚有多大條, 平常吃的要嚼上三五分鐘, 這裡的煮得剛好, 配上調味的柚子,好吃。
刺身來了, 左口魚和中吞拿魚腩, 那CHU TORO ,香,甜,適量脂肪只溶喺口, 再來是深海池魚, 半生熟的深海池魚我沒有吃過, 好吃。毛蟹來了, 老實說, 原本我是想跟師傅說, 我不吃海膽, 三文魚子及蟹膏, 我怕他把我掃出門口, 所以保留了蟹膏這部份。這裡的毛蟹是拆了肉, 混上拆了出來的蟹膏, 我覺得那是天堂的入口, 幸好沒有錯過。

回說海膽, 雖說我不吃, 但看到友人那砵海膽, 完全是色誘, 友人見我露出色狼之態, 於是給了我一片海膽,放膽入口, 是應該那麼甜的嗎?平時見的海膽是一板板放在雪櫃, 這裡的是一群群浸在海水, 所以可以保持得如此鮮甜。我決定, 下一次, 下一次我會要海膽。
毛蟹之後, 壽司之前出現了熱食, 我不知道原來刺身壽司之間, 夾一個熱食也是正宗的吃法。燒牛舌是燜腍之才去燒, 好吃, 汁燒三文魚, 賣相好, 不過燒得太熟, 還是留位吃壽司

天堂的中央放了 左口魚邊 ,沒有經火灸,入口即溶的左口魚邊是甚麼貨色來的? 秋刀, 帶子, 喜知次, 北海道三文魚,赤身漬,燒拖羅, 海鰻,件件精品。必需要說, 這裡吃壽司毌需怎麼用wasabi 或醬油, 因為師傅都已經把壽司上了味,如果你是嚴重地需要魚除了有魚味, 就只有魚味, 接受不了調味便不要來, 無謂浪費。 我們都經常陰謀論說要火灸的, 調味的皆因魚不新鮮才會用這些技倆, 但佐瀨師傅對每一件壽司都如藝術品一樣, 我們只有欣賞的餘地。更值得一提的是那蛋壽司, 平日的只是甜蛋, 但那天的如蛋糕,好吃。

吃過了最後一件玉子壽司之後, 佐瀨師傅問我們夠不夠, 其實是飽的, 但由於不知幾時再見, 於是便追加了兩件, 第一件是脂肪程度介乎中拖羅與大拖羅之間的魚鮫位置,肥, 嫩,鮮, 好吃;另一件是燒三文魚腩,肥味非常, 但著實太咸, 有點過火。
甜品點了綠茶奶凍及焦糖布丁,是自家製, 非常有一手, 好吃得想再安哥 。

有這一間「鮨佐 瀨」提升了香港壽司店的水平, 同時很多名店都比下去。

本人對那粒像肉丸的東西沒有太大好感,9唔搭8之餘~亦破壞整碗湯的應有味道

味道偏甜,不太合本人口味!

總結:人生總要豪一次,更何況難得地在香港亦能品嚐到如此高質數的日本料理~絕對無憾!

懷石宴則有燒牛舌照燒汁、魚翅茶碗蒸,天婦羅,加四、五件壽司便完了。老實說,我吃也未吃飽,以「懷石」應具的創意也不足,吃懷石還是去灘萬好!同樣,懷石宴的食物的先後上桌次序並不合理,影響味覺層次感。
反而值得一提,是這裡的自家製子薑!哈哈!

Some may find my title a little exaggerated but this was really how I felt the first time I tried Sushi Sase! *I have been to Sushi Sase several times now, for both lunch and dinners. I usually book to have Chef Sase to prepare the meal but if he is not available, I find that Chef Jason does a really good job too! I have been to Sushi Sase several times now, for both lunch and dinners. I usually book to have Chef Sase to prepare the meal but if he is not available, I find that Chef Jason does a really good job too! My most memorable experience would still be my first visit to Sushi Sase.

Yes, it is extremely expensive but Sushi Sase's decor is exactly what a sushi restaurant should be like. A nice clean space with a very welcoming counter, a few tables on the side and a very clean bathroom with a high-tech japanese toilet - definitely a plus if you are a clean freak!

The service in Sushi Sase is great and staff are very courteous. I like the omakase course with hot dishes for some variety.

The first time I went I had .. .

* Amuse Bouche - Visually appealing snow crab jelly
* Hokkaido Uni with sea salt - a bit of sea salt complimented the sweetness of the uni very well!
* Grilled Kinki ... DELICIOUS!! Their Kinki fish are all caught by hand line fishing unlike other Japanese restaurants.
* Sauteed abalone - Super tasty!
* Saba sashimi - something I normally don't eat but this was definitely the freshest I've had in HK. I actually liked it.
* Snow crab chawamushi - even this was exceptional!
* Mushroom tempura - Batter was perfect not too thick not too soggy.
* Japanese salmon sushi - this was one of my favourites! The salmon was blanched in hot water then marinated in soy sauce for 12 hours .. amazing ♥
* Chu-toro sushi - very fresh.
* Eel sushi - probably the BEST eel sushi I've ever had in HK
(Note: The eel sushi they serve at dinner is much better than what they serve at lunch)

Our meal ended with a bowl of miso soup with kinki head.. super delicious.

Sushi Sase also does AMAZING puddings!! We had both the matcha pudding and caramel pudding for dessert. So SOOOOO GOOD!

We really enjoyed our dinner and felt like we were back in Tokyo for a few hours. That, in my opinion, is a restaurant worth going back for!

I must add that I had the Freshest shrimp sashimi EVER at Sushi Sase. I don't usually like raw shrimp but these were huge and extremely fresh.. with their heads chopped off seconds after they were whipped out of a large bowl of water (where they were swimming in).
Kind of mean but oh-SO-fresh *!!

A note for those who cannot get reservations for dinner, you can also order the dinner menu if you go at lunch.

Overall, I would say that though Sushi Sase is definitely more on the expensive side, for authentic sushi it is still worth a try. Remember to book Chef Sase or Chef Jason! Both extremely gentle and friendly chefs.

This is to the most a sushi senryo with better plates, better setting but 8x the price! 1) Hear your customer! We ordered the Chef Omasake meal, when we told them that instead of the Ootoro, we would like more clams, they took out the Ootoro but nothing special was done for the clams. 2) Plain ingredients! You can get the same from Sushi Senryo, very everyday like salmon roe, flounder. Forget about geoduck, abalone, surprisingly, they don't even serve scallops.3) $1400 per head bought us 5 sashi

We dont' mind paying this price at some v nice places in Ginza or at Imamura and Sushi Hiro. But tonight, we felt being conned.

Really better off somewhere else, waste of time, waste of money.

However given the price tag ($1,800 per head with sake), it lacks a signature dish and some surprises to ensure that the meal was as memorable as the price tag. My wife and I thought the sushi was very fresh and good quality indeed. However given the price tag ($1,800 per head with sake), it lacks a signature dish and some surprises to ensure that the meal was as memorable as the price tag. We ordered the chef Omekase menu, however I was a little bit disappointed to learn that there was not enough food for me. They had to charge me extra for a hand roll and couple of more sushi. I thought they can do better by serving hot food i.e. udon in the end to ensure not only fine food are being served but they also had to fill up my stomach (isn't it a bit strange that I still felt a bit hungry after the meal at this sort of price!!!).

Overall dining experiences were average, decor was simple. We had the master chef made the sushi for us (which i had to book for 2 months in advanced). I can understand why people says he is not very friendly. I think he could have done a better job interacting with his customer but I accept why he acted like this given he's such a high profile celebrity chef and don't speak much english.

It's a great restaurant with great quality sushi, however we seriously don't think it worth the premium. We would rather go back to their sister restaurant (Sushi Kuu). At least they don't charge me extra when I asked for more food with the Omekase menu!
