Chef Peter也算是香港Ritz-Carlton餐饮部的开国功臣, 离开之后并没有继续行政工作, 而是经营自己的Heimat餐厅, 在香港吃德国菜也就是啤酒, 猪肉肠和猪手这些比较平民的菜式, 而他希望令我们了解德国菜也可以做得精致. 食材其实也不是很奢华的那种, 例如是头盘的希灵鱼, 以及主菜的猪肉, 但精致就是在于处理上, 例如是前者味道甘香完全没有腥味, 红菜头沙津配煎蛋看起来很简单, 但酸庋的调节配合蛋汁, 味道变得活泼. 猪腩肉的烟熏木香以及直接烤的肉质细致而够肉汁, 脆皮如烧肉一般, 也比起平时德国菜更为复杂, 黑森林蛋糕的表达同样如此.
