I Love how they fully utilised the different parts of the abalone and made it into a 3 way dish
The First one comes with the sliced centre
Topped with a creamy white wine sauce , together with the pouched abalone liver to bring out the umami flavour
The head and tail part is slightly softer and best to pair with xo sauce
Lastly one can enjoy the trim , a stronger hint of briny flavour together with a lemon dip

Not the first time to enjoy this dish but definitely The very first time to see it being cooked right in front of you
The chef is extra skillful to execute this on the teppan. ( usually it’s cooked inside the kitchen with extremely hot oil to give you that elegant flying amadai scales )

The warm sake broth is extremely soothing after all the hardcore dishes

Am never a beef fan
But this roll is seventh heaven
The beef at perfect medium rare
Together with onion and garlic crisps
Were all balancing real well

Do leave rooms for the caramel toast and Yakult cotton ice dessert
