We were lucky to have made reservations when we visited Tabibito on the second night of its "Grand Opening" - the place was full and a small crowd was waiting outside. We were whisked in and shown to a tiny table for two that butted up against a table for six on one side and another couple on the other. Tabibito is not your typical sushi/teppenyaki/yakitori place. All of the dishes have a more modern, fusionist update to them than typical simple Japanese fare. We ordered 4 dishes:
Wagyu Steak Tartar:
This was fantastic. A generous helping of heavily spiced, uncooked, ground wagyu crowned with a raw egg, served with tapioca/shrimp chips. The accompaniments were nicely displayed alongside, allowing you to mix it to your liking (I for one did not need quite so many capers). This was really tasty and did not have the slimy texture that can plague some beef sashimis.
Baked Scallops:
My personal favorite. 3 big fat scallops each served on their own shell that has been filled with a blend of minced garlic, mushrooms in something like a white wine sauce. Seriously, after savoring the scallops I used the mix as a complement for the other dishes.
Twice-Cooked Ox Tongue:
2 skewers, each with 3 good sized cubes of extremely tender tongue. If you've never tried tongue before, this is a great place to sample it for the first time as it is not covered up in a whole lot of other flavors and sauces. Could have been cooked a touch longer in my opinion, but still a delicious dish.
Vegetable Dish (sorry, can't remember the name):
This was the weakest dish on our table. It's not that it was bad, it was just underwhelming when compared with the other choices. It's a broth with daikon and bacon-wrapped-potato. Again, it was good, but nothing special.
The service was friendly and helpful throughout the entire meal. All the staff seemed to know the menu quite well, and were happy to make suggestions or explain things to us. We also received some complimentary sake, as we were there for the grand opening.
Grand total was about 480 HKD.

The restaurant is very small, so make reservations!
Drinks were a little steep. Based on the food, I'm sure the cocktails are also delicious and made with care, but they all rang in at 118 HKD, and the menu didn't list any other beverages like beer, juice, soda, etc.
The decor sticks a little too closely to the classic Japanese wooden box, almost to a claustrophobic fault. All the food is updated, so why not add that touch to the design, too?
