There haven't been much noise/comments since Bakudan-ya moved to this new location. I came here at about 10:00 pm, after doing OT, and was quite pleased that it was rather quiet and comfortable. They had about 3 bar tables and about 10 counter seats overlooking the bar counter. It felt more like a bar than a ramen place.
There were a few Japanese customers enjoying their drinks at the time.
First things first,
sochu: They don't seem to do ramen in soup now, focusing instead on the spicy tsukemen with customable levels of spiciness. A significant advantage over other ramen joint is that they have a comprehensive drink list and quite a lot of good side dishes, such as chicken tataki, Hiroshima fried oysters, fried fish cake and chicken tataki.
I ordered "Tsuke Soba with Karamiso" with Level 50 spiciness and chicken tataki. I ordered the "small" portion. This portion is just right for late night drinks and snacks.
The noodles were round, yellowish, springy and had a pretty good egg taste. No complaints about the egg, which tasted quite bland before I dipped it into the sauce. Some may find the char siu a bit tought though. The menmas were nice and crunchy. Putting the leek inside the spicy sauce could enhance the taste.
Level 50 was just as spicy but now the sauce had more umami - possibly because they've added spring onions and minced garlic and perhaps they've used a stronger type of fish stock than they did previously. I'm happy with this.
Chichen Tataki: Not many placed in Hong Kong do it. Essentially chicken sashimi. The difference is that the chicken is seared (or boiled) very briefly before being served. This was good. Just as good, if not better, than those served at Ippou or at Ippaiya. The chicken had umami and the tempreture was just right - not too warm and not too cold. I'm very happy with this.
As I tried another sochu, I also ordered two pieces of "Supreme Karaage" and "Gansu" (Fried Fish Cake). The "Supreme Karaage" was crunchy and tasty. The chicken meat was succulent. Great with beer or sochu.
The "Gansu" (no photo available) had an interesting texture which somewhat reminded me of a Japanese croquette but with fish filling. Also good with my sochu.
All these for HK$366, which I regard as quite reasonable.
The Japanese boss was very friendly. Everyone else was just as friendly.
Definitely a place I'd return to for drinks and casual dining. The hall of fame is still here - next time I may try level 150!
