灣仔華南的牛腩是我倆宵夜的首選, 雖說其價錢媲美九記, 而又有不少人的批評, 但至少我倆吃過幾次的經歷也是不錯的. 連皮肥腩外皮爽彈, 而且脂香肉稔, 比九記的肉乾味道和口感好得多. 最近再去, 之前因家事要戒食牛肉, 於是我老婆點了魚丸撈麵, 而我就點了星洲炒米.魚丸撈麵的麵身夠爽, 碗底並沒有水汪汪, 證明身瀝水做足, 沒有鹼水味. 通菜份量不少, 而是顏色保持翠綠, 沒有啞黑, 吃起來同樣爽脆. 魚丸魚鮮夠, 口感軟糯, 沒有其他填充物, 相類似的風味, 是搬到西環夏銘記的魚丸. 星洲炒米外表色水偏淺, 還以為味道很淡, 一吃起來, 香而帶微辣, 然後辣勁緩緩從喉嚨滲出, 夠爽夠過癮. 米粉炒得乾爽而不沾油, 吃起來並不油膩, 配料簡單, 反正這不主角. 雖然辣勁和辣香很吸引, 探索價二百多元的辣椒醬, 真的令我卻步呢!Wah Lam is. Wah Lam is. Famous for her beef brisket at Wan Chai. However I and my wife cannot eat beef recently because of family issue. The fish ball stirred noodles are nice as the texture of fish ball is soft and full of fresh taste from fish. The noodles are firm in texture and no water leaved on the surface which is essential for a perfect Cantonese style stirred noodles. Her chili oil is her signature as well. When fried with the rice noodles, it can be mouth drooling even other ingredients are not tasteful at all.
