有朋友Carry, 用他們的信用卡去享受文華廳的特價晚宴, 常說這些特價菜水準有打折扣, 當然這套餐並没有鮑參翅肚, 但菜式也算有誠意, 特別是主廚黃師傅及其團隊就街邊及大排檔菜式昇華, 像是位上的雞煲以優雅的陶壺盛載, 以鮑汁及天白菇伴煮, 雞肉嫩滑帶油香, 濃香之餘也能吃到食材的鮮味, 不是任何菜式以麻辣煮成才算惹味.高貴的菜式也有, 乳豬的芝麻皮公整而沒有裂香, 氣泡細密, 脂肉層薄但層次分明, 上面加上魚子醬除了更有鹹香味外, 也有脆卜卜的口感, 和外皮也頗夾. 星斑起肉成斑球, 簡單炒起, 加上海鮮醬, 口感比蒸法紥實, 條理分明, 鮮味同樣十足. 陳皮紅豆沙的陳皮甘香不差過鏞記, 紅豆起沙細滑, 簡單菜式更見其功力.Man Wah is one of the eldest Cantonese restaurants at HK for almost 50 years. The roasted sucking pig is so crispy and adding caviar on it resulted in rich taste. The chicken pot is not spicy but with rich fresh taste. Of coz the outlook is much luxurious.
