10/10 The star the night. Every Cantonese restaurant serves barbecued pork and this is definitely my style. Rich honey favor with a bit 燶邊 but tender inside. Awesome dish to showcase the team's gastronomic mastery of knowledge and experience based on traditional and simple recipes. 花雕蟹鉗 𝑺𝒕𝒆𝒂𝒎𝒆𝒅 𝒄𝒓𝒂𝒃 𝒄𝒍𝒂𝒘 𝒘𝒊𝒕𝒉 𝑯𝒖𝒂 𝑫𝒊𝒂𝒐 𝒘𝒊𝒏𝒆
The pork is too perfect so I'm a bit disappointed with this crab claw dish. This is on the special menu. The Hua Diao taste is like nothing, not strong enough, and some alkaline water 鹼水 favor. However, the crab claw is fresh, just the sauce seasoning can be improved.

The egg custard tart is freshly made. I love the multi-layout of pastry crust while the custard part is very soft and tender. Perfect amount of sugar, also eggy. 原個椰皇海帶杞子燉鮑魚 𝑫𝒐𝒖𝒃𝒍𝒆-𝒃𝒐𝒊𝒍𝒆𝒅 𝒂𝒃𝒂𝒍𝒐𝒏𝒆 𝒔𝒐𝒖𝒑, 𝒌𝒆𝒍𝒑, 𝒈𝒐𝒋𝒊, 𝒃𝒂𝒃𝒚 𝒄𝒐𝒄𝒐𝒏𝒖𝒕
I love this soup so much! The natural sweet from coconut and abalone makes you warm and moisturized.

Above 3 dishes are above average but no surprise. Such as the fried rice is not enough “wok hei” and the fried mantis shrimp is not fresh enough. I would expect it to be delicate in this Michelin fine dine restaurant.
