Back to my favourite omakase place Gassan again for dinner on my birthday. Everything was on top notch as always and I still feel surprised even though this is my fifth visit..🥂Nouten 腦天First piece here was already outstanding. It’s my first time trying Nouten. It’s from the tuna’s head and not many pieces could be found in one tuna. The chef first minced it and wrapped it with rice and seaweed. 🥂Madara Shirako 鱈魚白子
Added yuzu sour sauce, very smooth in taste and refreshing.
🥂Ika 昌烏賊
Sliced to noodles-like with Perilla flowers and sea urchin sauce to elevate its flavour.
🥂Oyster 長井真蠔
It’s more to the briny side than the metallic taste which I liked.
🥂White Geoduck 白象拔丰
Had this here before. Simply added lime juice and seaweed salt was fantastic enough.
🥂Grilled Bonito 本鰹魚
Had this here before too. Added sesame on top with some fried scallions on the side helped balance the fattiness of the fish.
🥂Awabi 磯煮鮑魚
Always can’t resist abalone with liver sauce. The 小蕪 on the side tasted like white carrot.
🥂Toro Sawara with Ranou Egg 拖羅鰆配無菌雞蛋
Though it has the same name as toro but it’s a different type of fish and it’s my first time to try. Its fattiness and freshness could still be comparable to toro.

🥂Hotaru Ika 螢光魷魚
It was grilled to ease the fishy taste.
🥂Hokkigai 北極貝
Cooked in seafood soup and came with a IGable fire, its taste was fresh and bouncy. The chef helped us to pour the soup into a cup after we finished the hokkigai and the soup was really sweet and rich.
🥂Kasugo 春子鯛
First try on this. It’s actually a baby tai fish that’s not as fatty as tai but still gives its unique flavour and texture.

Added ginger on top to elevate its flavour.

🥂Sakuramasu 櫻鱒
Similar to salmon, just more fatty.

🥂Slow-cooked Angler Fish Liver 慢煮鮟鱇魚肝
Creamy and silky but I know not everyone loves this kind of texture.

🥂Chutoro 中拖羅
Never get disappointed with the quality of toro here. Packed with umami as always.

🥂Akami Zuke 醬油漬赤身
Something less fatty to welcome the surprises coming next.

🥂Kama Toro 吞拿魚鮫
Known to be the jaw and gill area of the tuna, it’s one of the scarcest flesh from tuna as only two pieces could be cut from one tuna. It was incredibly strong and fatty. Its fat just exploded in your mouth and gave a really nice after taste.

🥂Toro Tendon拖羅筋
Again, my first try. Didn’t expect toro tendon could still be that tender and flavoursome as I normally hate to find tendons from any fish. But if it’s made properly, it definitely gives you surprises.
🥂Uni 小川海膽
The chef suggested to have this uni without rice. No one can resist this generous portion and filled with umami.

🥂Mackerel Roll 鯖魚卷
Mackerel is now in season. Added ginger, sugar and perilla leaves, never thought it could taste that good. Incredibly fatty on the fish itself and the crispy seaweed gave a really nice texture after all.

🥂Akamutsu赤睦
Another fatty one that you can’t complain for.

🥂Tamagoyaki 玉子燒
Signature tamagoyaki from Gassan.

🥂A5 Wagyu
Paired with bamboo roots and black truffle sauce, the wagyu was tender and grilled to a beautiful pink colour. Their cooked dish was amazingly done too.

They kindly prepared us a mango Napoleon cake for me. So sweet of them.

No matter how many times I have come, I still feel fully satisfied when leave. Thanks for a lovely evening on my birthday.
