Ma On Shan is kinda notoriously a food desert. People in the community might be very welcoming for the new mall Kings Wing Plaza in Shek Mun station. Among the restaurant cluster, Explorer Fusion Restaurant is the striking one because of the modern Japanese style. My friend and I ordered à la carte for more choices and were satisfied. Nice presentation with rose avocado circling the assorted sashimi pieces in the middle of the lettuce and Italian cherry tomato pieces. House dressing is black vinegar. Appropriate portion as a starter.

(Deluxe explorer sashimi tuna fatty $498)
Tuna fatty, Canadian sea urchin, scallop, yellow tail fatty, botan ebi (i.e. shrimp), salmon fatty. 2 slices each except 4 slices of tuna fatty. The delicate sashimi is of high quality overall. Especially appreciate the sweet urchin and shrimp as well as the seared tuna which is slightly cooked on the edge and raw inside. Could work better on bone extraction since my friend tasted a tiny one.

The sashimi sets are classified according to the Chinese Three Friends of Winter歲寒三友 the pine, bamboo, and plum松竹梅. Sometimes the pine, bamboo, and plum symbolize the class of Japanese cuisine in descending order, and vice versa occasionally. Thus it would be better to read the price directly.

Quite delicious. Crunchy potato wedges with slightly spicy homemade bolognese sauce. Unbreaded chicken wings, tossed in classic buttery pepper hot sauce, dipped with a tinge of ketchup to avoid the deep frying mess. Named buffalo because such cookery was first started in Buffalo, New York.

Salmon is by nature a healthy and flaky fish with light flavor. The taste is accentuated by slow-cook grilling technique. Smoky, flaky and moist.

(Blueberry cheese cake. Free)
I craved for something sweet after injecting much fish oil. Four layers of mild cheese and sponge cakes are topped with blueberry jam, sided with blueberry and pitaya. The greasiness mouthfeel then got mitigated.
