Recently my husband and I were honored to be invited to the soft opening of Rogan’s first overseas outpost in Causeway Bay, Hong Kong. Presented at an intimate 12-seater chef’s table, the evening consisted of an 18-dishes tasting menu with matching wines or drinks, selected by the chef and his team that day.
The meal began with an amuse-bouche of in-season ingredients like pumpkin, nashi pear and carrots, followed by a crisp cream cheese wafer laid with fermented puree tasting of the essence of maitake, sprinkled over with yeast. The standout dish shall be the raw, cubed beef glistened with coal oil, paired with oyster mushroom. The seafood dishes like the snapper wrapped in kohlrabi slice, sea urchin custard, crab & celtuce salad were all fantastic, while the chicken & squid crisps was particularly memorable for its sumptuous taste of the ocean. The codfish was packed with the five most interesting flavors, laid with a cabbage and black garlic sauce. From the luscious side of the menu comes a tender piece of dry aged wagyu roasted perfectly and complimented with a savory ragout.
The brilliance of Rogan’s cooking could also be found in something as humble as vegetables in the form of a grilled salad with Westcombe cheese, followed by salt baked celeriac with whey.
The meal ended with an array of sensational dessert dishes including the yellow beetroot sorbet, earl grey & chocolate cake, caramelized apple, however, the most superb creation would be the burnt milk in a stout & chestnut dressing.

The evening was encompassed by the brilliance of Rogan’s gastronomic wizardry and a deep sense of place and authenticity through the extraordinary culinary expression and dining atmosphere. One could always find an excuse to revisit Rogan’s Aulis in no time.
