The tonkotsu (red version) is fine if a little bland - there’s no particular depth of flavour (even if you opt for maximum richness), the portioning of meat is relatively frugal and it is unclear what the difference between thin and thick noodles at this establishment is given that everyone seems to be given the same thin noodles anyway. The extractor in the kitchen is in need of a clean (noting that this is quite readily visible to customers) as does the extension cable running across the top of the counter next to kitchen which staff seem to use for charging phones etc. as it has a significant accumulation of black dirt/grime/grease. There isn’t really any excuse for such visible and easily reachable items to have not been cleaned - especially when one is eye level for diners on the left hand side of the bar.
Similar sloppiness is seen in the apportionment of water / chopsticks etc. If you need to bother another couple or diner to get chopsticks or water whilst reaching around the plastic divider between covers, it’s not good design - just add a container for chopsticks to each cover along with a small jug of water rather than only providing one set between every two tables.
Service is slow, silent and rude. The staff seem to really dislike their jobs.
If the restaurant is going to say that it doesn’t take cards, it should at least have cash in the till ready to give change. It’s bizarre that an hour after opening, the restaurant had not actually put any notes in the till and only had coins.
