I was walking inside Lab Concept today and noticed that a new noodle shop has just opened. It apparently replaced the Marks & Spencer grocery shop which was situated here for years. I gave this shop a try because I saw that many of the businessmen and women were giving it a go.This shop gives a different vibe in comparison to the other food shops in this mall. This shop gives a different vibe in comparison to the other food shops in this mall.

While queuing, the front-of-the-house lady was calling out to the customers in line how many people she needs to fill the shop and since I was just by myself, I was directed in after just 3 minutes of waiting. I glanced at the corner of my eye and saw the frustration the other people had in line, they probably had been waiting for a long time to be called in. As I was ushered in, I noticed they use couches at the very corners of the space and uses a long table, the kind you see in bars, but modernized a little to fit this establishment's image.

I like their stools. Old-school kind.

I was offered the long table. On it, they have frosted glass so that you wouldn't see clearly how the diner in front of you is eating and whatnot. Their tables are neat and organized with everything you need, with the exception of napkins of course. They need more pencils in my opinion though. A four-man seating table and there was only one pencil on a stack of menu sheets to tick on? Yeah, a few more pencils won't hurt the owner's budget.

Their menu is offered in both English and in Chinese. There are noodle bowls that have been set for you if you can't decide what to eat. In my case, I chose the "Make your own" kind. You follow the steps until you get to the soup choices. You can also add drinks for an additional fee. In the end, I chose spicy minced meat and raddishes paired with potato noodles on their signature broth ($48).

I passed my order to one of the staffs and with a thank you, he left. I then looked around and noticed that all the staffs were super being, considering it's Day 1 for all of them. I saw the manager or the owner of the shop paying close attention to which order goes to which table by telling the floor staffs where they should go to. As the chef had finished preparing a bowl, the manager or the owner would tell and point to the staff where they should go to. It's funny though that each table doesn't even have a number tag so that makes it hard for the staffs. The staff who took my order came back actually and reconfirmed what I wanted on my bowl. After he left for the second time, I couldn't decide whether they're taught to become accurately efficient or annoyingly incompetent. I don't think the patrons would make a mistake at ticking within the box, if there were some, then it's the patrons' fault for being rude. Otherwise, the staff could use that extra time to help bring the noodles bowls quicker.

There are 5 to 6 floor staff, 5 chefs, and 2 cashiers plus the owner/manager. The wait for getting a bowl of noodles was long. After passing the 10 minute mark, my mind will usually be thinking what I'll be getting will probably be delicious. I then noticed that there was an incident when a floor staff had come to deliver a bowl to a lady but she declined that bowl so all the staffs, I mean, everyone including the chefs was huddling and looking at the receipt chit wondering about it because it says it goes to that table but the lady rejected it. In the end, they took back the bowl and the manager/owner personally apologized to the lady for the inconvenience.

Their organization is nice and neat.

My bowl finally arrived after a long and understandable wait and to my disappointment, it was a little sparse than what I had imagined it to be. It contained their standard toppings: chives, parsley, bean sprouts, tofu skin and then what I had ordered: potato noodles, raddishes, spicy minced meat, and their signature broth.

The noodles were squiggly-shaped. I'm usually used to the straight-shaped ones so this is a first for me.

Their raddishes were good. It didn't become mush inside my mouth. It's firm but to my personal preferences, it lacked a little flavor push.

The tofu skin was very good. This was my most favorite out of everything that was chosen. It had that missing flavor push that my raddishes needed, in my opinion.

And as for the spicy minced meat. It was few and it blended with my soup. I still managed to separate their flavors though. The spicy minced meat wasn't spicy at all even with a 1 chili mark, I could add chili found at my disposal but chose not to because I didn't want to ruin the soup. I honestly didn't feel the meat being the meat to fill me up. I should have ordered a different standard topping like maybe cuttlefish balls or tofu, or perhaps added one more standard to my meal to last the day. The broth, despite looking oily, was good and healthy. They use chicken broth. The soup consist of bean sprouts, cilantro, lemon juice, ginger, 5 spice and other standard seasonings.

I'm not sure if this was a meal worth eating. I feel that I could eat a more hearty meal in Causeway Bay.
