Dissappointed with the service & cleanliness

I've always been visiting this location whenever I'm in Hong Kong.  Bit disappointed this time because the fish was not served hot, and it didn't taste fresh.  One of the servers didn't even know what Perrier is when I tried to order a bottle, and simply replied:  "and what's that?"  Its shocking when Fish & Chick is frequented by people from all ethnic backgrounds,  does not even have a Chinese name, but their staff can speak or understand No English at all?  The above mentioned was not the mos

The above mentioned was not the most horrific until I saw a moving cockroach at the bar counter crawling.  I didn't say anything but decided I was not going to go there again.  Imagine how the kitchen at the back would be when there's cockroach even at the front counter.  
題外話/補充資料： the lady at the bar counter was helpful, she tried to get me a bottle of sparkling water when I got nowhere with the male server, he was quite rude and constantly chatting with other staff standing at the bar instead of working
