We have a favourite place in Beijing for dumplings. It is called Mr Shi's and is a local landmark. The bar is set very high for us, so we are always happy when we get something approaching that level.We came here based on a recommendation from a friend and soon sat down in the small hole-in-the-wall joint. We came here based on a recommendation from a friend and soon sat down in the small hole-in-the-wall joint. We ordered boiled dumplings of two varieties - pork and fennel and pork and coriander. The ladies started to make the dumplings the moment we ordered.
As soon as they finished making them, they were sent to the lady at the front to boil. After a few more minutes, they came to us in two bowls. As we were about to eat, one lady came over and showed us how to eat them 'correctly'. SO each time, we used her method. Bite a hole (like with a xiaolongbao), drip in some chili oil and black vinegar, then devour.
They were really good. Chewy wrapper filled with beautifully flavoured pork. Both kinds were great, but the fennel ones were really good.
So, the kitchen at the back looks a little scary and the place is a little cramped, but they produce high quality, made-to-order dumplings cooked in the style of your choosing. We will definitely go back and try more of their offerings.
