-flounder
It’s a rather plain,fresh and crunchy sashimi
But the sour jelly wrapped inside added texture and lifted the umami of the fish


-Hokkaido scallop
Perfectly cut into bite size
The scallops are equally sprinkled with charcoal salt To balance with the flavour


-isaki
Don get it wrong
It’s not truffle on top but seaweed sauce
Providing a freshness to the sashimi
As the fish is originally slightly clingy
Add some soy sauce if you prefer a stronger flavour


-aka kamasu
Slightly torched to reduce the oiliness
And lifted up the flavours


-Shima Aji
Extremely thick and fat but delicate
With oil splashing out and filling your gums
A very fulfilling option to have in the sashimi platter

-Akami
the center of the tuna's body
This cut has the least fat out of the whole fish
If you don't really like fatty tuna, this is the best choice
