Emmer always caught my eye after it replaced Petit Cafe, and I was excited to try it for dinner. Fun fact: it’s by the same guys behind Beef & Liberty hamburger restaurant! The 11-inch pizzas are cooked in a rotating steel oven, and the dough is super fluffy but also chewy in the right places, and naturally low-gluten.
