Here's a rundown:Broth: The broth was easily the best aspect of the pho. It was hot, not-greasy, meaty, well-spiced with ginger and anise, perfectly salted, and not over sweet. I think it could have done with a little more sugar, and it was lacking a certain depth (hard to describe). But still very good. ANoodles: A common flaw, there were too many noodles, and they were the thin, flat, mushy kind. After a few sips of broth, there was just a big pile of noodles in the bowl. That might fly if the

Extras: There was basil, onion, spring onion, and a few bean sprouts. These came in the soup and you didn't get to add them. I didn't find any cilantro or chilis, and there was no lime to enrich the broth with citrusy flavors. There was some watery sriracha on the table that had a decently bold, fermented sriracha flavor. Above-average offerings, but could've been better. B+
Meat: The beef balls were lacking in both flavor and firmness. The raw beef was an excellent cut, not fatty at all and great meaty mouthfeel. Not anything to write home about taste-wise, but not bad either. C+ on the beef balls, A on the raw beef.
Overall impression: If the soup had better noodles and a lime wedge, and if I ordered just the raw beef pho (no beef balls), this would be an A soup. As it stands, I'm giving it a B.
We also had some spring rolls. I've had them way worse (at Cadogan Pho, for instance, they're soaked in grease), but these were pretty greasy and tasteless. I'm cursing myself for not going for the rice-paper rolls. C
I give this place a B. I'll probably come back, given its proximity to my new home. I suspect with some better ordering on my part, it might make it up to a B+. I don't think it'll ever be A for me.
題外話/補充資料:
The waitstaff was very friendly and even came to the rescue when we almost left some important documents there. Had to resort to (my extremely limited) Cantonese when asking for the check though, but that's a pretty standard hazard (and obviously no one's fault but mine).
