I used to live in Japan and have visited the country approximately 500 times over past 32 years. I have enjoyed a lot of good ramen and no doubt this place in IFC would be in the top 10% of ramen places in Japan. But I have never been to a ramen or soba shop in Japan that did not respect the “Customer is God” mantra that every Japanese restauranteur learns from their first prep cook job.Simple thing: they have a pepper ramen on the menu so we know they — like 99.999% of restaurants on earth —

Simple thing: they have a pepper ramen on the menu so we know they — like 99.999% of restaurants on earth — in fact have pepper in the kitchen. However if you want a little to dip your gyoza in on the site, “I’m afraid that will be quite impossible”.

This place thinks that because they have a Michelin star, that they know better than the customer.

This is the first Japanese place — certainly casual / ramen joint — that prioritizes their own sensibilities over those of God
