I don't think picture can speak for itself in most cuisine, in particular, Japanese... but this time, I think I have to surrender... as my words can't add enough value to the nice food offered here... We were both hungry, and the chef presenting this lovely steaming egg is just perfect... by the look of it, you can see that it is not just an usual one... the little scollop in it, and the fungi put in the the thick soup on the top has made it so refreshing, yet not too rich in taste... good start... 
Hairy Crab with its Yolk

... and by the second dish the chef is presenting, I was totally conquered... how can we expect this rich hairy crab meat was mixed with its rich taste yolk and it can still be in nice shape... Taste was wonderful, so rich and so fresh, mixed with the mild taste of crab meat... just warming my heart to longfor more nice food...

Deep Sea Yellow Tail... can't lose in any case... so fatty,as you can see, the texture was so tender, and rich in oil texture... I love it... not too strong, but so satisfactory...

 Then it comes to the general big shrimp sushi... but when you look closer, it's not common either... the texture this time is not tender, but with some spongy feeling... and the little touch of the special homemade sauce add the extra fresh taste on it.

O- Toro, which is another dish cannot go wrong... especially, in the fine dining place like this, the temperature is so great that we won't find any error here... this is real tender, and because it is in its low room temperature, no frozen taste at tall.
Salmon Roe

Salmon roe nowadays are not easy to make, not only because it is time consuming, but the ingredient is not easy to get the prime one... here is really not bad... you can easily taste the time and effort spent in the roe... a little bit of sweet, and never too salty ... I like it.

... and I keep telling myself this evil dish can't be finished by myself, I have to share... but when the chef brings out the second one... I know that I will have to eat up my guilt, swallow my sin and enjoy this lovely, tasty... and fresh uni rice... or shall we call it a rice uni... as I can't really tell which should be the core here...  I just don't know what to say after all... this is the real Japanese uni, it's not too strong in taste, and you can find it so well mixing with the rice... and no filling at the end... evil...

But I was so wrong... the rice uni dish that I have finished is not yet the best... but this one... from the special place of Hokkaido, and it is so rare in the market, as every one of the pieces are taken fro the best uni ... and usually there is only one or two pieces in each uni can be up to this premium standard to be called the BEST in Japan... and usually, the rest 6 - 7 pieces will go to other lower category.... We are just so lucky... and can enjoy this specialuni in Hong Kong...

Finally, each of us are asked to collect this little rice roll with the special crunchy seaweed... so simple , but so rich the seaweed taste... finishing by this simple but nice dish... it is just so well presented so that our overwhelming feeling can be calm down... finally... 

Very nice dinner, and it worth every penny spent tonight... which is of course very expensive... but really a special experience overall.
