It is a signature dish that originated in Beijing, serving mostly the skin and little meat and known for its crispy and amber skin. The skin is so brittle that it shatters like an eggshell inside your mouth! And yet the flesh underneath is so moist and tender, nothing too overwhelming with a hint of sweetness. It's definitely a must try and the best dish to introduce to your foreign friends !
Not only their signature dishes are amazing but also the cold dish, soup and dessert
I personally recommended the Fish Maw Soup with Common Morels and Whelk Head ( rich but soothing for the summer, nothing too heavy, full of collagen!) ,Honey-smoked Pampano ( relatively rare , the pampano is perfectly fried with crispy and chewy bones , with the honey masked the oiliness flavour ), and pumpkin cake with red bean paste ( cute petite cake, chewy and not too sweet ).
