A Michelin-rated local noodle and congee joint. The signature noodles here and you should get it for your first visit. They follow the traditional way with bite size wonton and just right amount of noodles. The eating order should be one sip of soup before anything, then one wonton followed with a strand of noodle. Supposingly, you would finish everything with the perfect 1:1 wonton to noodle ratio.
The noodles were a bit strong in alkaline for my visit which I was quite disappointed😶 This is probably the biggest challenge and the single most important element of making a good wonton noodle. But adding few drops of vinegar changed the entire narrative. The umami from the prawn and the fish emerged and I could finally enjoy the broth. Texture-wise, it was absolutely the kind of hardness and chewiness I love. The wonton was superb with bouncy prawn and paper-thin skin. Absolutely a Michelin-level one👍🏼
Also ordered the 𝐑𝐢𝐜𝐞 𝐍𝐨𝐨𝐝𝐥𝐞 𝐑𝐨𝐥𝐥 𝐅𝐢𝐥𝐥𝐞𝐝 𝐰𝐢𝐭𝐡 𝐓𝐰𝐢𝐬𝐭𝐞𝐝 𝐂𝐫𝐮𝐥𝐥𝐞𝐫炸兩. This one was very delicious with smooth rice noodle roll and crispy fried dough stick (油炸鬼). You will never regret to get one🤤
