西環的餐廳感覺上以意大利菜及日本菜佔多數。因是日下午剛和同事吃過意菜,所以晚餐以日本料理作搜索目標。信州日本料理在爹核士街的一角,鄰近食肆臨立。餐廳內裡四正,裝潢平實。雖然只是一個平日時晴時雨的夜晚,但餐廳早已預訂滿座,座處難免有點擠擁。餐廳是綜合型日本料理,同時提供不同種類的日本美食,刺身、壽司、天婦羅、爐端燒... 林林種種選擇繁多。為免傷腦筋,最後將難題交予料理長,來過廚師發辦 Omakase。最先送上的是旬前菜三點,由左至右分別是鬼爪螺、螢光魷魚及蟹柳。鬼爪螺口感帶爽,味道比預期清淡。螢光魷魚是時令小品,小巧嫩口帶點辣。蟹柳雖以酸醋啫喱引味,但食味普通。日本季節生蠔產自日本北海道赤崎,口感乾爽,不論蠔香及海水味道皆屬輕盈。在鮮蠔的上方,灑上秘製的醬汁調味,微微帶辣風味佳。刺身盛內含油甘魚、鱆紅魚、鯛魚、牡丹蝦及呑拿魚腩五款精選刺身。油甘魚一如其名油潤甘香。鱆紅魚味道爽鮮,亮點在於果香味辛的柚子芥末。鯛魚是三款魚生片中最爽甜之選。牡丹蝦體型雖較小巧,但無阻其濃郁甜味的發揮。平時吃 Omakase 多數會連牡丹蝦頭也會作適當的烹調處理,但此店沒有相關安排實在有點可惜。呑拿魚腩是最肥
