沒有菜脯的狗仔粉,如同沒有豉油的叉燒飯、沒有辣椒醬的乾炒牛河,都是粵語片時代街頭小吃的金律,否則就像沒有靈魂的軀殼。吃狗仔粉時,粘糊的湯底,淡口綿滑的粉條,如加入爽脆惹味的鹹香,感覺整碗連湯帶粉的口感層次更上層樓。這時,我們看到枱上放有兩樽咸菜脯及辣菜脯,除了鹹脆濃香的咸菜脯,那盎深紅色的辣菜甫才是重點,糅合四種辣椒粉再炒製,吃時已滿頭大汗,口水鼻涕齊流,吃完喉嚨有輕微的灼熱感覺。

傳媒(如飲食男女)幾次都有介紹,原來老闆自少嗜辣,自己開店,縱使辣菜脯成本高,每枱下六匙就虧本,依然不惜工本,親力親為。他炒辣菜脯,先切碎攪碎菜脯,越細碎越易入味。備料後把鑊燒紅,加油,油滾了再加入蒜茸爆香,但不要讓蒜茸過火,再加入辣椒碎,要不停攪拌,以免炒燶;待有辣椒香味散發,便加入菜脯炒勻炒至金黃色,再次加入辣椒粉。餐廳用的辣椒粉,則由三種辣椒粉混合,指天椒粉取其辣,紅辣粉取其色,野山椒粉取其香,比例是一比一比一,之後再加鹽快炒,兜勻攤涼即可入瓶。

辣菜脯的用料和制作,雖說是簡單,但要弄得好也不容易。一是火候,不要過久,有香味便要下另一種材料,不然很易過火有燶苦味,這時就要整鍋倒掉。二是手力,必須不停快炒讓味道均勻遊邊每粒菜脯。三是份量,不要貪心。店主當初每次只炒一斤,每日十斤,就要分十次炒,如貪快放了太多菜脯,就會沾上水氣就漿成糊。後來分店多了,老闆只有在工場內請了兩位師傅專責炒製,每日炒六十斤分到各店。

事實上,辣菜脯日日有人問價,但由於每日限量生產,剛好只够只限堂食調味,再沒多餘份量可供零售外賣。店主在傳媒訪問時說,以前不吝嗇把辣菜脯放桌上任人舀,就有人在月黑風高時連環多次順手牽羊,客人埋單後,辣菜脯卻不翼而飛,有時整瓶不見,有時剩下小匙,可說是知音偷竊賊的另類致敬 ……

火鴨翅,更是真材實料配菜豐富,以火鴨慢煮,鴨肉化絲在整碗翅湯中,粉絲 / 木耳絲 / 冬菇都好足料,分佈均勻,更有大量火鴨絲,帶出其獨有濃郁鴨香味,肉質細嫩不粗疏,沒黏著牙縫,還有尖尾透明彈牙的條條素翅(至少口感不像粉絲),且有濃郁嘅燒烤味,口感軟滑又爽脆。芡汁湯底火喉足夠,不會太重味精,不加胡椒和醋,沒有醬油味,質感對辦,濃度適中,順滑不稀淡,至少不會湯水分離,沒過份稀薄或黏稠(外面的碗仔翅,有的是加了太多粟粉 / 生粉 / 豆粉,又搞拌不均,以致翅湯變成一塊塊,有些則是加水太多,翻成水狀),湯底則醇厚入味,持久不易散。

生菜魚肉,魚肉加了馬蹄,感覺麵粉較多,以致口感偏軟腍不算彈牙,但湯底好喝,煮的時間也够長,湯上也有仿翅,不過不失。

火鴨髀也著名,我們這次叫了上脾,也很大隻。由於讓燒鴨脾浸在火鴨碗仔翅即時煲熱,等候需時十多分鐘。鴨皮淋滿了新鮮熱辣的碗仔翅,有豐富油脂,略有燒過微香微爽。皮嫩肉厚汁多,咬上啖啖肉,肉質嫩滑軟淋,鴨味香濃。

魚皮餃,不知是自制還是外購,外皮厚韌彈牙,內餡充滿肉汁,魚肉豬肉肥瘦比例剛好,口感像是 "四海" 的牌子,淋上自制沙爹辣汁,更添濃香刺激。

辣魚蛋,魚蛋口感偏軟捻,但還有輕微的咬口彈性,不算特別但過得去,但特制辣汁惹味香濃而不刺舌刺鼻,至少比魚蛋本身更出色。

總體,環境狹隘,但食物質素上乘,狗仔粉和火鴨腿都有獨色,火鴨碗仔翅都勝於同類,其他小食則不算出彩但也過得去,還是值得入選米芝蓮車胎人(必比登)名單。

Other Info. : 一入店舖店員 呀姐 就超大聲問我食咩,好急,完全5俾時間人諗,明白當店舖多人時需要快,但當時並5多人。 當我落單時,呀姐態度差又超大聲, 叫完1轉,食緊粉仔時見到可加3蚊有豬油渣,所以再次叫呀姐,呀姐一黎,又係好兇,算,人地都係打工,所以都無理佢,所以快速叫,同佢講加3蚊要豬油渣,呀姐又兇話加咩3蚊姐,要就5蚊1袋。。我完全5明白,明明有3蚊加,我就照同佢講3蚊就可以,呀姐就5好禮貌地👿加俾我! 所以下次再想食都係外賣。。算😢😢

路過深水埗,很久都沒有幫親過十八座狗仔粉,雖然食了早餐,也一於捧下場先今次叫了一個細火鴨翅,加了小小勁辣菜甫,已覺很辣。翅底很濃味,勁多鴨肉,食起上來啖啖肉,yummy 呀順帶一提,四寶現在沒有了雙拼,只得大及細雜燴啊

今次叫了一個細火鴨翅,加了小小勁辣菜甫,已覺很辣。翅底很濃味,勁多鴨肉,食起上來啖啖肉,yummy 呀

順帶一提,四寶現在沒有了雙拼,只得大及細雜燴啊

話說我唔知咩係狗仔粉,行過見到十八座狗仔粉即刻想到既係十八座大王(離題)好好奇狗仔粉係咩就行入去叫左碗大粉狗魚皮餃,嘩!原來狗仔粉咁好味架,重手左加左好多辣涌菜(?)好惹味呀!但又辣到流鼻水,言歸正傳。狗仔粉既口感軟滑綿密,湯底因為有蝦米冬菇蔥花既關係香味十足,齒甲留香。如果加埋豬油渣會更惹味。

十八座狗仔粉🍜絕對係富有香港特色既街頭小食🤤粉仔大概一吋長,有小小腍身啲粉仔吸曬湯既味道,非常入味仲會少少漿口🍲佢既湯底係豬骨湯底入面仲有冬菇和小蝦米仲有炸過豬油渣令到成個湯都好杰作餐廳每張枱仲有兩款菜脯任添淺色既不辣帶甜味紅色既落幾粒已經好辣😋好建議鐘意食辣既朋友試下大雜燴🍲大雜燴有豬肚,豬腸,豬皮同蘿蔔上面有十八座秘製千味醬非常滋味😋大家可以去試下呢個咁有香港特別既本土小食 😚😚另外 佢既招牌火鴨翅都好出名但今次冇試到我下次試完再同大家分享😋
