到左方糯米粿,是肥姨姨推介,淡淡紫色賣相,餡料卻是糯米飯,有蝦米碎、蔥花,香味十足,不過每件粿品份量頗大,所以建議分享,方能吃到不同口味。

右方咸綠豆蓉粿,從賣相可以看到淡黃色綠豆蓉,豆蓉幼滑微咸,如果為甜食,筆者會更為喜愛。
下方甜芋泥粿,芋頭蓉幼滑清香,甜點外皮較為煙韌,類似湯圓外皮,十分有咬口,筆者吃得滋味,值得推介。

筆者本想點清心果綠豆爽作甜點,幸得肥姨姨提點,加白果份量會較多,適合筆者等三人分享,此甜點可為此午餐畫上完美句號,鵝黃色糖水底,白果、清心丸、綠豆均能清浙可見,糖水微甜,小小一碗實灰不夠筆者慢慢品嚐,唯有再外帶一碗,回家繼續享受。

另外,筆者再另點甜食黑桃粿和芋泥粿外帶回家,每件以腐皮作底,經香煎過後,賣相呈金黃色之外,外皮香脆,而內裹餡料十足之餘煙煙韌韌,有咬口。

家庭式作業在香港已經近快式微,今次有機會到此一嚐,富有人情味的肥姨姨在這頓午餐為筆者等帶來很好的回憶,看到不少老街坊即使搬離上環區亦都專程而來,閒話家常一番,如此,足以看到他們的吸引力,更不要以為他們的服務態度差,他們只是比起大型連鎖食店多了一份人情味而已。

蝦亦好大隻, 係真鮮蝦, 唔係蝦米仔.
 
因為獨自去偷食, 食唔晒鮮蝦水瓜烙 - "7個鐘後"變咗晚餐 , 用微波爐翻叮, 無油滴滴之餘, 香味仍在! (當然即食好味啲).

最其貌不揚的一款,凸凹不平的表面令筆者聯想到充滿提子果仁的朱古力條,但當煎香後較咬一口就改觀了,當軟熟粿條混入了大量肥大肉厚的香脆花生後就形成每口軟中帶脆的過癮,本身帶鹹香的花生令整體吃起來絕不乏味。

由於甫過了中秋時節,對月餅的甜膩記憶猶新,因為對甜粿興趣不大,4種款式中揀了綠豆蓉,以腐皮衣包裹著甜粿皮呈淡黃油亮,是由糯米粉製造,煙韌帶點甜,綠豆蓉幼滑細緻,清香可口,很喜歡煎後的薄薄腐皮變得乾乾韌性,營造出一咬即破的特別口感。

是全家人最心愛也是最快售罄的款式,以雞蛋、韭菜和粿條加入醬油同炒,香氣四溢。每條粿條除了外微脆內軟糯,還吸收了韭菜雞蛋的精華,最重要是粿條外層平均沾上一份那份黑醬油濃惹中帶甜香的誘惑,感覺像在吃炒蘿蔔糕,也類似星加坡的炒粿條,27元一盒不算便宜,但想到是心機之作仍覺值得。
Other Info. : 當初對這傳統潮食認識不深,甚至連它的味道如 何亦毫無頭緒,大概是因為本身不喜歡粉糰狀的舊式食物,怕它粘牙、怕它乏味。若你肯吃下第一口,就會明白那份細膩口感和它的平實賣相各走極端,吃到是全人手製作的心血,吃到是五十多年來老店的製粿經驗,吃到是正宗潮州傳統粿品的特色,也是潮州節慶的歷史與文化啊!

(782)西環行山之後,來到上環皇后街市,尋找這間人氣店,試試這裡有名的粿品。一個人選擇了蘿白粿,韮菜粿及家鄉粿什。蘿白粿,賣相不美,煎到皮香軟糯口感不錯,蘿白不夠香甜,有點腍。韮菜粿,粿皮煎到破裂,韮菜外露,韮菜餡味道卻比蘿白好。家鄉粿什,有粿皮,腩肉,豆腐泡及豬肚,鹵水湯底,這是以鹵水為主角的潮州雜食,味道是OK的,然而個人不太欣賞。今餐感覺沒有想像中好,餐後漫步往西環站,再乘車歸家去。

韮菜粿,粿皮煎到破裂,韮菜外露,韮菜餡味道卻比蘿白好。

家鄉粿什,有粿皮,腩肉,豆腐泡及豬肚,鹵水湯底,

這是以鹵水為主角的潮州雜食,味道是OK的,然而個人不太欣賞。

今餐感覺沒有想像中好,餐後漫步往西環站,再乘車歸家去。

到西環工作,三點幾搞掂便坐叮叮到上環嘆個中式tea。剛過午餐不久,個肚仲好頂,一心諗住食兩個,但堂食要買三個才替你煎,於是買了咸 (韮菜+芋頭),甜 (芋泥)。喜歡咸粿皮,脆脆的,咸芋頭算是足料,叫人給我甜鼓油,豈料拿來的是一支不甜不咸的鼓油。咸韮菜的餡料很少,甜芋泥皮似年糕黏黏的,味道如預期無驚喜。

煎蠔餅(HK$42) 幾乎每枱人都有叫,和一般食店的一底圓形蠔餅不同,這裡是分開四塊,每塊都有手掌大小。外皮香酥,蠔仔亦富有鮮味,脆脆咸咸的比薯片還要好吃!只恨蠔仔可以再多點,就更加棒啦。也是不可不試啦!

蠔仔粥(HK$30) 也是大件夾抵吃。可惜有點兒過咸,似乎祥正出品更值得去試。

紫菜牛丸湯(HK$16) 細細碗的竟有五粒牛丸,應該是自家製的吧,size比一般慣常看到的要小,外表不平滑。雖然是其貌不揚但蠻爽口彈牙,牛味重,喜愛牛丸的人不妨試試。

食到飽飽,吃不下糖水,但又不想放過很少地方有賣的綠豆清心丸和芋泥,唯有打包回家慢慢嘆!清心丸綠豆爽(HK$13)味道清清的,卻沒甚麼甜味。清心丸煙un 好嚼頭,不過也是量少。一碗只有五、六粒,唔夠喉呀! 福果芋泥(HK$22) 夠香夠滑,但質地比較稀,福果只有三數顆(不喜白果者如我自然是暗暗竊喜), 個人比較推許九龍城佳寧娜的出品。

若果想堂吃粿品,最少叫三塊才會提供煎香的服務。咸的HK$4.5/塊,甜的HK$5.5/塊。始終得找天來試試韭菜粿,蘿蔔粿!

皮做得薄薄的韭菜粿,晶瑩剔透、呈半透明色。
將韭菜切碎製成餡料,包以薯粉製成的皮,十分香口,口感柔中帶韌。
惜已放涼了,若能熱騰騰吃則最為香口。

前兩天跟家人吃飯,臨走時分到幾件家人剛買的曾記潮州粿,老實說,本人從小就不覺得潮州粿有什麼好吃,總覺得外皮硬口感差,內餡一般。是日隨機選了兩件粿品蒸熱來吃,我知道應該用煎的才是最好的吃法,可是太懶不想開鑊,也不是多吃一點油,所以還是用蒸來翻熱椰菜蝦米粿外皮實中帶一點韌,味道不覺得怎麼好吃,椰菜蝦米內餡配搭ok,椰菜味道稍嫌有點淡,令蝦米味道更顯特出,可惜蝦米只有少少幾粒糯米飯粿外皮一樣不怎麼好吃,內裡的糯米飯綿軟但味啖,很一般…或許是我本來就不特別喜歡潮州粿,從沒覺得好吃過,這間的也不例外…

The Chiu Chow style dumplings had different types of fillings, the most famous being Chinese chives. Turnips, Cabbage, Peanuts, Red Beans and Yam were also available sometimes.

You can choose takeaway or ask them to fry it for you ($3-5 per piece
minimum order 3 pieces if you need them to fry it for you). I invariably ask them to fry it:

We ordered 1/2 a dozen of Chives dumplings and 1/2 a dozen of Turnip dumplings. Most preferred the chives.

I know it might look a bit scary for the health conscious but the soup is not as salty as you might think. It is quite aromatic and made with sweet soy sauce and garlic. The rice cakes were very filling. The pork innards and chopped pork belly were delicious as well.

The oyster cake and the shrimp cake were also famous and very delicious:

The shrimp cake with chopped gourd is a bit oilier than the oyster cake so be careful. What pleasantly surprises me every time was how big and fresh the shrimps and the oysters were. I believe they use potato starch and/or glutinous rice starch to make the mixture of the pancakes. Both the shrimp cake and the oyster cake were very chewy and crispy. Both of those are recommended.

The oyster congee and oyster pancake is a standard Chiu Chow fare. This did not disappoint as well. The oysters were pretty fresh and substantial. The fried vermicelli was dry and crisp, which is the sign of a well done vermicelli as opposed to a soggy version that most could do. It was fried together with shrimps, carrots and some spring onions. Simple but delicious.

All these food came down to $40 per person (6 persons)


This seems to be a family business and everyone working there seemed to be related to each other. They may sound a bit rough but very actually very friendly.

It's not easy to find a table though. All the restaurants in the food court seemed to have a simple way of indicating which tables belonged to them. But customers didn't need to worry about it as you could sit at any table and could order food from different restaurants as well.
