去咗上環行吓,朋友話俾我知原來上環街市有一間專賣粿品嘅小店,於是心思思去睇吓。一上到去,見到粿品好整齊咁放晒出門口,排得好靚。老闆話點三個先有得幫我地整熱,我哋隨便點左三個,兩個咸嘅,係韭菜同埋蘿白絲。仲有一個甜的,黑芝麻皮同埋綠豆蓉餡。粿品以半煎炸返熱。先試韭菜,味都唔錯,皮都好薄。不過原來蘿蔔絲更香,因為裏面加咗蝦米,感覺就好似蘿蔔酥餅裏面嘅餡一樣。最後試甜嘅,師傅好似用咗少少腐皮擺喺底都煎,綠豆蓉好香綠豆味,而且唔算太甜。整體來講茶粿整得好味。大推。

黑色嘅係黑桃粿,個餡係黑芝麻加綠豆,甜甜地幾好食。白色嘅有韭菜粿,蘿蔔粿,椰菜粿同芋頭粿。呢幾隻都係咸粿,尤其係韭菜粿煎得特別香。其餘兩隻菜粿都幾好,因為蔬菜嘅鮮甜味滲落啲皮度。

We ordered the pan-fried sponge cucumber to start. It is a famous chiuchow dish, with the sponge cucumber shredded and then mixed with the grounded dried potato powder, shrimp and egg to create a batter, then pan-fried till golden brown and crispy. This is my favorite of the dishes ordered, good in taste and even though a bit oily, got the crispy outside while a chewy texture from the potato powder. With a few drops of fish sauce added the savory flavors further enhanced the overall taste. A wonderful dish in my opinion.

Then we have the Chiuchow stir-fried noodle. The noodle style is a bit similar to the Cantonese rice noodle but it is made from wheat. There are a lot of green onion, bean sprouts added, plus some mushroom, shrimp and shredded pork included. It has a simple flavor and so generally we have to add some chili paste. Also it is quite oily too. Not a must-try in my opinion.

Last of course we had to try the 'goh', and since they need to order at least three pieces, we have a mix of turnip, chives and sesame. The first two are savory ones while the last one is sweet. The texture is something interesting, got a good bite and chewiness. If you didn't try it before it is definitely worth exploring. The ingredients inside are decent, with the chives being the best as it got an intense flavors. But still because it is pan-fried some might find it a bit too oily.

The place is not meant for you to sit long and enjoy, rather a eat-and-go so don't expect to the comfortable, but at the same time it is relatively clean and bright. Things are also more 'self-serviced' like you need to get your own utensils, your cup and tea and so on. An experience for the younger generation or someone from overseas might not have, but it doesn't mean the service is bad.

The price for the above is $118, so overall the price is very reasonable in today's standard. My overall rating is 48/100.

一個個鹹粿甜粿就這樣放在店面對出的桌上,這兒衛生好、空調足,待了好一會兒都沒有昆蟲在縈繞,大可放心。這不是店的全部出品,她還有製潮式糖水如清心丸綠豆沙,還有如炒粿條的主食,但以店品來說,還是件裝的粿品較為有名。粿條是利用條形的「粿汁」,而粿品是「粿汁」加入粘米粉、澄麵等加入筋性而成的糕點,都是同出一「粿」。

鹹甜粿大都是$6/個,只是有零星的款式因餡料特別而貴一點 (如鮮筍粿 $12/個)。跟一個蛋撻和砵仔糕的價錢相若,價錢親民又不失特色,有心意得來又不會太「行貨」。潮州人喜歡造粿,形狀、餡料各異,亦有因大時大節而做的華麗版和這類樸實家常的版本。這令我想起日本的和菓子 (わがし),跟潮州粿一樣都能體現民族的巧手工藝,不過偏心的說,日本的和菓子好看但不好吃,我吃過的是只是一堆顏色鮮艷的甜糰子,沒口感沒味道層次的,潮州粿應該好一點吧。

鹹粿的皮較甜粿的實在,象牙白的不透餡不明澄;形狀較規則的,像月餅般倒模製成,不如甜的渾圓和軟身 - 軟身得我相信是有意搓成圓圓的,但一個接著一個的排疊著,軟軟黏黏的維持不了原狀。想起躺在沙發上動也不想動的傭懶狀態,任由地心吸力把軟軟的身軀附著。

不恥下問,跟店員說要六個後,請教一下是否能即食。他說可以代為煎香四個以上就行,遂拿了我挑的六個進店,約五分鐘後送上金黃、油香洋溢的一盒。煎香後的甜粿,再不是半透明狀和軟身的,或許像新年吃的年糕蘸了蛋漿才煎,裹上薄脆的蛋漿後形狀得以保持,粿亦不會相互的黏著。看那粿邊翹起的微焦部分,多誘人。

當然是拿去大部分的粿才見到驚人的油量,不只令紙全泛油光,油量多得把盒傾側會看到流出的油 (見相中綠色箭咀的地方)。我很少買煎釀三寶,但我猜都不會多油到如斯境地,把這些油抹在鍋中我應該可以煎隻漂亮的蛋。先不談粿的手工,就是這後製部分有點失望,如果油多得能在粿底躺著,放進口應該是油比粿先碰到口腔的。即使不是在瘦身,不談卡路里的都會談口感吧。油膩如此,成了掩瑜的瑕。

稍為用紙巾吸走多餘的油分,雖是不切實際的求心安之舉,油分還是乖乖的吸收了。見表面不在泛油光,用膠叉又舞弄不了,索性豪邁的用手捏。綿綿的絲連,是如此稱心的具筋性。跟年糕一樣在粘米粉之上加入澄麵,筋性為米香添上口感,多嚼幾秒才咽下,米香得以待多好幾秒。入口軟滑,比平時吃的燒餅要厚、要軟綿 (我喜歡吃奇趣餅家的燒餅);手上的是芋泥粿,芋泥壓得細膩,偶而吃到幾粒較大和「生水」的芋粒,無損粉感,更具真正芋頭的草青味。甜度適中,因煎香而添上一抹鹹香。若果不是過於油膩,這實在是沒什麼可挑剔的。

路上細想著黑桃是什麼,沒有問谷哥。黑桃是合桃的諧音?倒不是,其實是黑芝麻皮,裹著綠豆餡。盒中有純綠豆餡的,跟這個用上不同的粿皮而已。未煎時像雞屎藤茶果、帶黑點的綠沉,煎後多了一襲黃金戰衣,少了那份澄淨的透亮,變成淡灰,更像黑芝麻味道的小點心。甜度較芋泥的高些,主要是至濃郁芳香的黑芝麻而來。筋性依然,綠豆蓉夠清香,混入芝麻香較芋泥的特別和具風味。

味道和粿皮的筋性是無容置疑的好,就是油分重得嚇人,避油膩食物的要注意一下。把粿品煎香的確是神來之筆,那鼓油香令人難以忘懷,但總不能連放進口的慾望都抹殺了,除非你瞎著我的眼吧。本身很喜歡吃具筋性的食物,嬤嬤鄉下有一味只裹片糖粒的鹹湯圓,我很愛吃,就算連片糖用光了而剩下粉糰,我都叫嬤嬤把粉糰全都搓成無餡的湯圓,單是吃著軟綿的熟粉糰,都覺得很痛快,我就是那麼喜歡嚼。相比西方的mochi,懂得在粘米粉、水之上加入澄麵,嚼勁奇佳,這惟中國人的大智慧。

原來有栗子、冬菇及豬肉,還有一種特別的餡料 - 豆沙!

什麼?豬肉和豆沙配在一起?味道豈不是怪怪的?
加上我不是特別喜愛豆沙類製品,所以事前擔心自己會受不了
沒想到,這個配搭味道很特別呢!
C先生說曾記糭有個特別的吃法,就是把糭子的餡料拿出來,然來把糯米及餡料拌在一起
這樣的話才不會單方面嚐到豆沙或豬肉冬菇,亦不會出現偏鹹或偏甜的問題

質地有彈性,不是入口即溶的類型
口感煙煙韌韌,C先生說這是「豬網油」,用來包著豆沙
豬網油是豬肚外的脂肪,原來是豬的一部分

今年想嘗試曾記糉的話,可先向曾記預訂
但預訂後最好不要「走數」,畢竟這是人手製作,「走數」的話會浪費了店員的心血呢

身為潮州人,必定食過潮州粿品!店家非常有性格,我試過去幾次都無開,又或者中秋端午等中國節日,佢地會造糕點月餅,非常繁忙,所以呢啲時間有時會不設堂食,即唔會幫你煎!但每次我經過都係好忍唔住黎食,無他,因為佢真係好食!粿有咸有甜,我自己就偏愛咸粿!香港食過最好食嘅,非曾記粿品莫屬!皮薄,在處理韮菜嘅味道亦非常突出(本人是韮菜控),咸度剛好,令人想一食再食,另外芋頭粿我同樣喜愛,而且佢地煎嘅火喉剛好,不竟煎再幾廿年,所以我好喜歡堂食!之後再配埋一配清心丸,perfect!

經常聽朋友說這街市很多好木東西吃, 今天路過,終於有機會一試。 點了蘿蔔, 糯米和甜芋泥三個口味, 不一會便上菜了。 粿餅不大, 煎至金黃微暖, 外形不規則的, 分不出口味來。 隨便吃, 是蘿蔔粿餅, 蘿蔔一絲絲的煮得軟棉, 口感不錯, 外皮比較厚而且偏硬, 沒什麼味道,整體普普通通, 我還是比較喜歡吃蘿蔔糕。糯米的外皮也是偏硬沒什麼味道, 配著同樣淡淡的糯米, 除了很飽沒其他的。甜芋泥比較好, 芋泥香滑不過甜, 配搭上粿餅皮還不錯。 整體沒什麼大驚喜, 同層還有其他食店, 有機會再試。

每次去蓮香居吃馬拉糕,總想順道試試曾記粿品,可惜不是休息,就是碰上愛理不理的嬸嬸店員,令我們悻悻然不知從何入手。這天趁聖誕假期繼續反其道而行吃中餐,專程來碰碰運氣。中午時分店外放滿粿品,店員今天心情好像不錯,而且我們比較明確知道可以坐哪桌。一輪密集的大量粿品外賣後,店員好心說我們已等很久給我們下單。我們選了現吃最低消費三件煎粿:韮菜、蘿蔔和糯米餡,還有家鄉炒麫線和炒潮式糕粿。本想吃芋泥,不過店員提醒是非常甜的,我們於是改選她推介的綠豆邊白果清心丸。這店生意很好,外帶的顧客粿品總是買很多。潮式炒麫線先來,麫線粗幼不一,比想像中清淡,簡單配料有肉絲、冬菇、韮菜、蝦仁等,配桌上的紅色鹹醬剛好。然後是煎粿,米造的外皮非常吸油,雖然煎粿的技巧高超,但一口咬下還是油晃晃的。韮菜粿煎過後韮菜更鮮香,香口又好吃。因爲芋頭粿賣完而選的糯米粿,米與米的組合味道想不到沒有重覆的感覺,帶一點五香味,反而比韮菜粿少一點油膩。最後的蘿蔔粿怪怪的,好像將蘿蔔糕拆開來吃,不太喜歡。忙碌的店員還是漏掉了我們的炒糕粿,呆等時觀察店員的倒米對答也不失趣味。例如有人問店員他們今天甚麽時候休店好趕及光顧,那店員便說快要休息了。

這店生意很好,外帶的顧客粿品總是買很多。潮式炒麫線先來,麫線粗幼不一,比想像中清淡,簡單配料有肉絲、冬菇、韮菜、蝦仁等,配桌上的紅色鹹醬剛好。然後是煎粿,米造的外皮非常吸油,雖然煎粿的技巧高超,但一口咬下還是油晃晃的。韮菜粿煎過後韮菜更鮮香,香口又好吃。因爲芋頭粿賣完而選的糯米粿,米與米的組合味道想不到沒有重覆的感覺,帶一點五香味,反而比韮菜粿少一點油膩。最後的蘿蔔粿怪怪的,好像將蘿蔔糕拆開來吃,不太喜歡。

忙碌的店員還是漏掉了我們的炒糕粿,呆等時觀察店員的倒米對答也不失趣味。例如有人問店員他們今天甚麽時候休店好趕及光顧,那店員便說快要休息了。如有客人不聽店員說點很多款食物,店員便說你真的很餓耶。至於甜品,清心丸煮太久太軟了,其餘正常,整體不太甜,下次還是想挑戰吃芋泥,或是甜芋泥粿。

炒糕粿終於來了,看網上的照片頗吸引,原來是有點糊糊的,料頭只有芽菜、雞蛋和一點韮菜。吃著吃著像沒有蘿蔔的炒糕,顏色深但米糕本身沒甚麽味道,不很習慣。有機會的話想多試幾款粿。
