Aqua was in the winner round of Restaurant Week Spring 2019 for its view. Didn’t have much expectation for the food, but still I was quite disappointed. To start with, I got this Smoked Salmon, 64 Degree Egg with cauliflower puree and dill oil. The smoked salmon was very ordinary, and I couldn’t figure out a way to eat the 64 degree egg as in what should I do with the runny egg yolk? There was no toast to eat with, so I kinda mix it with the cauliflower puree to eat it. Oh well, you couldn’t actually intake liquid food with just fork and knife, so I left pretty much 90% of the egg yolk on the plate…

Main was this Grilled Pork Ribs with Japanese Vegetables and Barley. The pork ribs were so bony! You need to work hard with your knife and forks in order to get the tiny bit of meat off the bone to eat. I wasn’t sure if the ribs were grilled or just soaked with salty barbecued sauce, which made the ribs really salty…The only good thing about this dish was the barley. Er….

越來越不喜歡太稀啦啦的蛋黃,這天的溫泉蛋卻是剛好,香濃半流心的蛋汁,無論是淨食還是蘸點麵包,都十分可口!底下的椰菜花菜蓉、煙三文魚及刁草油,也是個清鮮不膩的美好配搭。

主菜也有三份選擇,起初不知道份量如此巨大,還多選了兩份 Side dish (+$30@),其實完全不需要。先吃 Grilled pork ribs with Japanese vegetables & barley 燒豬肋骨配日本押麥,豬肋骨不會很乾、肉味又香,但更可口是口感近似薏米、但更爽滑的日本押麥,好好吃~

另一 Mussels, asparagus & shiitake mushroom risotto with pesto 青口露筍意大利燴飯配野菌 也甚有口感,又有豐富菌香及海鮮香氣,令人忍不住一口接一口吃。配菜的 Sauteed Spinach 用的菠菜夠嫩,加上提子及松子也很美味,薯蓉就有點太飽,不得不放棄了~

I have never felt compelled to leave any review before but today I felt that I had to after my lunch at Aqua. Part of the pork ribs I was served was so raw, there was still blood so I spoke to the waitress about it, after about 5 minutes, her manager Rohit came over. Rohit remarked that their chef recommends that the pork be served medium rare, and that I could have it well done if I like. But I explained to Rohit that this wasn't a matter or preference of doneness but a matter of raw pork, but

Part of the pork ribs I was served was so raw, there was still blood so I spoke to the waitress about it, after about 5 minutes, her manager Rohit came over. 

Rohit remarked that their chef recommends that the pork be served medium rare, and that I could have it well done if I like. 

But I explained to Rohit that this wasn't a matter or preference of doneness but a matter of raw pork, but Rohit again reiterate that they serve their pork medium rare but said he can have the chef cook it again - well done if I like. 

Obviously he didn't apologise because he was indifferent to the raw pork I just ate being an issue. 

Rohit's indifference really suggests that the matter has more to do with my preference than the fact that the pork was raw, I obviously found that indifference condescending but I don't think being rude or condescending solves anything. 

I took the photo, avoided the pork, finished my desert, asked for his name card and paid the bill. 

I don't want and don't require anything compensatory from you or the restaurant, I had a bad meal and a bad experience, but these things happen. 

But Rohit if you're able to see this, I really like my pork pink, but your pork wasn't pink it was raw and raw pork is really dangerous. And when you're dealing with somebody that just bit into a piece of pork you served that was still bleeding, a little empathy would go a long way.

火炙油甘魚及鮭魚朝鮮醬海草沙律,賣相精緻,不捨得食,黑與艷色對比,熟與生交感,爽與腍交織,深黑坑紋長方型碟盛載,一片橙色三文魚(鮮,還欠三文魚獨有油脂味),一片淺粉油甘魚(無燒過焦香味,表面只微過火),劃一度韓汁(不辣,甜味),灑上微黄乾蒜粒(硬脆),加一點香草(青草味,味覺上點睛), 滿足貪婪眼睛。

日本溫泉蛋配椰菜花菜蓉煙三文魚香草,似肥肥的錦鯉, 薄薄嘅蛋白包著橙黃色蛋黃, 像魚頭,炅熠熠蛋白是鳞身,香草( 刁草 dill)是魚鰭,翻起橙色三文魚片,像魚尾擺動淺起白色浪花( 椰菜蓉同埋椰菜), 輕移隻碟,條魚就游, 擺緊尾,又係唔捨得,佛家話要捨德,真好難!
蛋始终要破,流心,像花辦綻放,流出蜜汁,我像蜜蜂採花蜜,蛋特别大,蛋黄比例比蛋白還多,順滑度高,味道有本身的特質,就像研究所指每個少女都有自己香味, 不可言喻,但當與香滑不得了的牛油香味椰菜蓉(初以為薯容),丁點兒刁草油又是另一翻滋味!三文魚雖鮮滑, 煙燻欠奉!

燒豬肋骨配日本押麥,非我所想,無燒烤味,開刀切開就知實而鞋,有油脂部份好些,配燒汁,甜甜地無特別,街市檔一字骨還有肉香,較喜歡嚼意米,大大粒,配彩色燈籠椒碎,淡而帶菜甜。

青口露筍意大利燴飯配野菌,黑白配組合,青口黑色売(肉帶咸,滑而海鮮味),飯粒大而白滑,芝士味好濃,米係熟不會腍(曾經試過太生或腍,這次恰到好處)與珍珠菌一齊嚼,平衡重口味,露荀腍咗點及略少。

白朱古力奶凍配芒果及熱情果,橙黄花花配搭,熱情果不見綜影,是否加入扭花忌廉~變酸忌廉,橙色芒果粒,奶凍不說都不知有白朱古力成份,總之此組香滑,又不膩,不太甜,括到底!

黑芝麻雪糕,舌頭一點,冷一冷, 舔一舔 ,感受芝麻香襲擊, 有勞味蕾 ,不太甜及香滑。

加$20有餐茶, 當然要加啦 ! Starbucks 一杯咖啡都$36,用金色磁杯上枱,我最愛金金銀銀,閃閃發亮,帶出專貴氣派~cappuccino 滑,濃濃咖啡香氣飄進心霏,奶與啡,不會互相爭寵!

頭盆只要加$88,就有4隻生蠔,醫師說不能食生冷,寒濕,無奈!

太陽星的光,引領我去太空館看流星雨及潛入深海,許願及探險!

亞洲七大夜景餐廳!環境真的是沒話說了~早早的預定了位子!前一天餐廳會來電確認訂位~之前就听說餐廳全程為英語服務!沒想到,真的是沒一個會說中文的,雖然菜單有中文,但對於我們英語不怎麼好地小伙伴,還是希望能有中文服務,會更貼心舒適些!原以為,這只是一家吃環境的餐廳,可是沒想到菜品的出品卻還都挺好的!香煎鵝肝真的肥而不膩,香氣四溢,打底的薏米意外的好吃~黑松露醬天婦羅,天婦羅炸的一點不油~醬汁味道也不錯!薄燒和牛肉,牛肉雪花分明,在燒燙的石器上只需短短幾秒時間,入口即化!超讚~鱈魚鮮嫩肥美,調味鹹中帶甜,恰到好處!黑松露烤蔬菜南瓜,超大片的黑松露,以及烤的非常好吃的蔬菜!滿滿的幸福感~總體來說,還是非常值得體驗的餐廳!有機會來香港的小伙伴千萬別錯過啊!

同ICC比較,位於北京道的Aqua高度上明顯有一段距離,雖然ICC有一種高高在上騰雲駕霧的感覺 ,但是維港景物就顯得比較渺小,相反Aqua的高度 就正好融入城市景物當中,有另外一種美尤其是在晚上華燈初上的時候。但是Aqua和頂級餐廳相比明顯力有不逮 ,就例如紅酒鴨胸 ,跟我在VEA所吃的 血鴨有技術上的明顯差異。當然,若然你從未試過VEA的血鴨 aqua的便己經是上品。而 香煎 鵝肝 跟我在田舍家吃的都是有一段距離 田舍家的 比較有口感 ,柔潤嫩滑, 又香又酥 ,份數還比較大。如果你對食沒有太高的要求 ,容易沉醉在美景當中 ,aqua的級數雖然不是頂級 , 但索價 不到二千蚊一位,已經足夠滿足一般白領的要求。

但是Aqua和頂級餐廳相比明顯力有不逮 ,就例如紅酒鴨胸 ,跟我在VEA所吃的 血鴨有技術上的明顯差異。當然,若然你從未試過VEA的血鴨 aqua的便己經是上品。

而 香煎 鵝肝 跟我在田舍家吃的都是有一段距離 田舍家的 比較有口感 ,柔潤嫩滑, 又香又酥 ,份數還比較大。

如果你對食沒有太高的要求 ,容易沉醉在美景當中 ,aqua的級數雖然不是頂級 , 但索價 不到二千蚊一位,已經足夠滿足一般白領的要求。

今年遲了幾天訂枱,雖然也搶到了靠窗的前排座位 ⋯⋯ 但只是餐廳最側、靠向九龍公園徑的轉角位餐枱,並非面向維港的最靚景觀。所有高級餐廳都喜歡將燈光調暗,睇餐牌本來已經相當辛苦;「Aqua」為了更加突顯維港夜景的觀賞價值,燈光比較其他高級餐廳更暗淡 ⋯⋯ 結果就是要倚靠手機的夜光照明功能才能夠睇餐牌及點菜!

餐牌仍然分為意大利菜及日本菜兩部份。其中,壽司刺身價錢直逼高級日本料理;但環境實在完全唔協調,而且也見不到壽司師傅及刺身吧,覺得完全唔值。聖誕特別套餐雖然款式多,但其中正正包括了刺身;加上菜式不太適合小公主,所以最終選擇 a la carte。

但和牛的選材就相當好,即使在暗淡燈光下,仍然可以見到薄切和牛的雪花脂肪;牛肉非常軟滑、又有濃濃牛脂香氣,接近入口即溶。幾肯定是真真正正日本國產黃牛,雖然未至於 A5 級數,但仍然與和牛 Shabu-shabu 聯想起來。

去骨黑毛豬鞍扒充滿豚肉脂肪香氣,肉質軟腍,廚師預先切片雖然方便二人分享,但卻少了鋸扒的𣈱快;而另一半則似是肋排拆成粗肉絲後、再壓成粗長條煎香。雖然兩者外型都似豬鞍扒,但前者就好吃很多,是真正的豬鞍;後者始終是預先烤好的豬肋排再拆肉,豬肋排肉質較為粗糙,拆成肉絲後味道及口感更差。這道黑毛豬鞍兩食,一半好食、一半唔好食,好難俾分。

牛扒肉味唔濃郁,但卻有油脂香氣,肉質亦很柔軟,咬落油花滲入口腔 ⋯⋯ 唔係好似以肉汁豐富、肉味濃郁的美國安格斯牛扒,反而真係有啲似日本和牛,只是並非頂級和牛。莫非廚房真的搞錯單?

講食物味道,未算出色,只是平均水準以上;難怪即使服務、環境、景觀等其他各方面條件都達到了五星級要求,而且也是《米芝蓮》偏好的西餐廳,仍然未能獲頒星星。只不過,若果只着眼於生意角度,「Aqua」可能也不在意錦上添花的《米之蓮》星星;只是眼前的無敵維港夜景,已有足夠條件吸引本地人及外地遊客!

自從成為Wooloomooloo的老客戶後,頂樓露台酒吧就很少嚐鮮了,但是日子久了也覺得無趣。於是開始搜索新的地方。這家榮獲世界十佳夜景餐廳,漸漸讓我更加喜歡尖沙咀了,我對香港的所有需求,夜景,購物,美食,這裡都能找到,而過海的港島,反而覺得更加擁擠和壓抑,只要在尖沙咀這邊看看就好。這家Aqua是日式西餐融合菜,建議一定用英文預定靠窗位置,否則沒有去的必要,即使有一個人900的HKD最低消費,也絕對值得一去。
