以一個人頭那麼大的冰座來盛裝蟹餅,賣相非常突出。我有點興趣想知怎樣把蟹肉放進冰內,據店員說,是放了蟹餅,然後才倒上水,似乎需要一些技巧。說回蟹餅,蟹肉用上阿拉斯加蟹腳肉,再撈入沙律醬,除此之外,還有芒果和牛油果碎,令整道菜爽口而帶著軟腍,味道也增添酸甜。至於冰座的作用,則以觀感為主,極其量亦令蟹餅保持涼快多一陣。

French Duck Magret (香煎法國鴨胸) ($288)

鴨胸煎成半熟而保持肉汁豐富,肉質就略為韌了點,可能是厚切的關係,但肉味則仍然濃郁。

飲過又吃過後,心情也變好起來。這刻什麼也不想,只想趁週末好好休息一下,然後才好好地想想自己的未來路向。

因為一直住麗景,所以反而一直無上黎AVA(因為太近,覺得食飯訓覺都同一棟樓解決實在太頹),某一日終於的起心肝book台,七點上黎,算係半滿啦。海景其實都已經被高樓遮擋得七七八八。叫了一隻春雞和一條sea bass,水準不錯,但未至於驚喜。服務態度簡直好到爆。八點開始陸陸續續有人order玫瑰花雪糕,個廚師就會上黎起你面前整,都幾得意。玫瑰味道濃郁,值得稱讚。其實都係食gimmick,睇得開心,收貨啦!朵玫瑰花好香,但入口很苦,配甜蜜蜜的雲尼拿玫瑰水雪糕,都算頗為合拍。

  聽說珍珠雞含有比一般雞種更高的氨基酸蛋白質之類,對人體健康有助益。而在AVA的健康菜譜之中就有低溫慢煮法國珍珠雞,作為蛋白質擔當。細滑香腍,不是平常雞肉的那種乾韌,肉味豐足,沒有太多脂肪,無膩感。淨肉無骨,更方便品嚐箇中美味,醃製時加入香草,帶出清清香氣。另配以藜麥及小蘿蔔莎莎,均是清新食材,加上溫度微涼,作為前菜頭盤恰如其分。

  由意大利普利亞入口,出乎意料的意大利紅蝦刺身薄片。晶瑩剔透的紅蝦,也許是我少見多怪,以前吃到的大多是煎香單吃,煮熟伴意粉。刺身時亦未有片得如此薄身,薄得透徹,可見當中的橙紅紋路。鮮味甜美,但切成薄片後,味道沒那麼突出,來得味清,可口而低調。

  之前看友人一嚐同酒店的自助餐時的照片,正正就出現了加大版的蟹肉雙重奏。不過在AVA的時候,就變回正常大小,藏身於尖尖的冰球之中。頓時想起動漫裏那些被封印多年的珍貴之物,但我們不需要千辛萬苦解除封印。觸手可及的阿拉斯加蟹腳肉清甜微爽,配上芒果等水果鋪層疊起。層次豐富,待至綿身的藍蟹肉再度出現時,兩者味道不會重疊,保有自身特色。

  沒有一直堅持走健康的路線,把室溫上的甘筍芫茜薑湯推給友人。還是奶味重,稠身濃郁的海鮮周打湯比較適合我口味。雖然頗鹹口,但海鮮的香味沒有被掩蓋,聽聞有用到魚蝦蜆蟹。多味集合之下就難怪了,正中更點上甜綿的蝦肉,再添海洋氣息。

  一眼相中的自家製海膽意大利幼蛋麵果然單憑香氣就讓人大喜。頂端盛起真.海膽,不捨得,但都要與意粉拌勻來吃。海膽甜味意外地突出,沒有被奶味濃郁,且帶鹹香的忌廉汁專美。自家製的蛋麵幼身微粉,不易斷爛,很會附汁,缺點是容易讓人膩滯。幸好份量剛好,邊吃邊聊,當中有少許停頓,就不怕被這邪惡東西攻陷。

  要清新些少,就要一嚐這健康菜譜中的自家製東方小麥意大利麵。用上Kamut wheat製作,意粉麥香更重,沒有平時的順滑細緻,但來得硬身富嚼勁。意粉配上各式海鮮,如紅鰹魚肉及八爪魚,吃起來沒有吃肉那麼重負擔。紅通通的醬汁,又是我們熟悉的酸甜茄味,配合健康的主題。

  這一盤香潤豐盛的就是香煎法國鴨胸,泛起油光,閃閃亮亮的很誘人。烤至邊位帶焦,油脂豐腴盈潤,斜切,厚薄適中。肉香不俗,沒有太重腥味,富嚼勁的鴨胸肉煎得香口,吃一件已經教人十分滿足。伴上蔬菜清新一點,如果黑醋醬可以再多些少,酸酸甜甜,更是去膩。

  青檸蘋果蛋糕配核桃及希臘乳酪算是比較特別的配搭了。因為一直看過嚐過配酸乳的甜品,通常是直接混合作原材,很明顯不是這一種。然而,作為醬汁去配的,一般是本身甜度比較高的甜品,用來中和甜膩感。這款高身厚實的青檸蘋果蛋糕甜度恰到好處,表面帶點果肉的自然清酸,味道清淡。配上原本沒有什麼甜味,以酸為主的希臘乳酪就來得更為偏酸少甜,清新醒胃,可惜不算驚喜。

  壓軸出場,友人精明地預訂了玫瑰花雪糕。此時談起,原來有朋友試過沒有預訂,即場想點菜時才發現吃不到,明明近在咫尺。還以為是將玫瑰花瓣及花水等添加至雪糕之中,一球盛起的雪糕杯。怎料師傅推來一張擺滿架生的長枱,在我們注目之時,開始邊解說邊動手。煙霧瀰漫之間,只見師傅不斷作攪拌動作,然後,一大球圓圓的雪糕展現眼前。再拿起一支原好的玫瑰花速凍,時間到了,輕輕的掐碎,我們見證著花瓣的飄零,墜落。
  雪糕溶得甚快,本味不算甜,帶奶香,更有淡淡玫瑰花香氣。質感是意外地少冰感,亦算細滑香潤,配上旁邊酸勁十足的莓醬,清新自然。剛才灑上的玫瑰花瓣添上更重的玫瑰香,賣相亦更加的典雅瑰麗。
  雖然大家都各有各忙,但是難得聚頭,打開話匣子,談個不停。可惜夜已漸深,平日晚上,怎麼聊都得要有分寸。最後揮手說再見,也沒有什麼不捨,只要存活在世上,總有相見的機會嘛。

意粉雖小 (只有三、四口),但誠意爆棚。

意粉軟硬適中、非常彈牙,配上新鮮蕃茄醬已很美味。然後加上鮮味紅鰹魚,為意粉再添魚鮮,惹味十足。

吃過沙律、湯及頭盤,肚子還是有點空虛感。主菜雜錦烤雞拼盤是share dish,有點擔心不夠飽⋯⋯ 幸好,看似很小的拼盤,份量夠我倆有餘。

5安士的澳洲Beef Strip Loin以medium rare處理。外表燒得香脆,內𥚃肉質軟嫩juicy,牛肉味道蠻濃郁。

Lamb Loin同樣外脆內軟,肉質軟熟、口感嫩滑。羊味香濃,而且一點也不羶。👍

燒春雞的肉質結實,比想像中多肉、嫩滑。於整餐飯來說,是一道令人滿意的驚喜之作。

酥皮有點黐口,不算鬆化。但勝在自家製的吉士醬creamy、甜度適中,配上野生車厘子蜜餞,作為一餐總結也算不錯。

總括而言,這餐飯的CP值一般。服務不及一般酒店餐廳。房內無waiter,經常要走出大廳才找到,更遑論主動幫您斟酒收碟。

食物質素只是一般,加上失色的「維港景色」,這個價格可以有更多選擇。

Dessert was awful,deep fried puff that was probably made hours ago topped w/ overly sweet cream and berries. Plated w/ mini chunks of canned pineapples in heavy syrup🙄

The best thing on the table was the bread and flavored butter...

We ordered the sashimi platter for 2. From the look of it, it didn't look fresh. When I ate it, I found the salmon was ok but the tuna was still frozen in the middle. I basically spit it out. Would order the seafood platter next time.

In terms of service, the receptionist was an Indian lady. She was super helpful and kind enough to proactively show us 2 tables in different areas of the restaurant so that I could take my pick. It was very thoughtful of her. Service was attentive in general with servers refilling water and taking finished dishes away proactively and frequently but all the servers looked tired, cold and not particularly passionate. Would be great if the servers can be as friendly and passionate as the receptionist lady.

接下來的這個煙燻澳洲牛里脊肉就正是剛剛在第二屆美國之味亞洲廚藝得了獎的菜色, 看似一條粗壯的肉腸, 但切開來原來是澳洲牛的里脊肉, 即脊椎骨的內側位置, 此部份的肉雖然肥脂較少, 但肉質特別嫩, 而這裡大廚只把肉配上橙汁及脆米片同吃, 里脊肉中央還是帶了點點粉紅色澤, 吃起來肉味的確香濃, 雖然沒多脂肪, 但口感軟棉得來甚有嚼勁, 非常適合不愛肥脂但愛上級肉的朋友.

西式湯的周打湯永遠是宅女最愛的其中一款湯. 不過這晚上來的海鮮周打湯跟平日喝到的無論賣相跟味道都跟以前喝過的有點不同. 乳白色的湯頭上放上一排海鮮加上蔬菜, 當中除了有蝦更有不少蟹肉, 配料非常豐富, 而且周打湯更是用藍蟹慢烤過後再用蔬菜濃湯來燉煮, 出來的湯質感非常CREAMY, 而且也夠濃稠, 味道豐厚得來很有蟹的鮮香. 雖然這個湯價錢不算便宜, 但配料夠多, 幾乎巳經是一道前菜了.

記得上次來也有吃過這道意粉, 味道令人印象深刻. 所以這晚絕對要再點來回味一下. 上來的一碟份量不算很多, 但都足夠1-2位用. 最吸睛的當然是頂端的兩片大海膽了!! 而底下的幼蛋麵屬自家製, 就連忌廉汁內也加了海膽進去, 吃起來滿口都是海膽的鮮甜味, 海膽濃度其實就不算很高, 不過那個醬汁非常CREAMY而且吃起來是剛剛好的感覺, 基本上這碟海膽意粉, 宅女絕對可以一人KO的.

燒春雞對於很多西餐廳來說都是非常普遍的菜色, 不過真正做得好吃的, 其實也是很講功夫的. 這裡上來的燒春雞, 當然是用上法國來的春雞, 再以木柴火烤, 出來的雞皮非常薄身而且十分香脆, 底下的油脂不多, 而且雞肉厚身得來肉質嫩滑有彈性, 中間還帶著點肉汁, 非常JUICY. 烤得出色的春雞真的不用太多花巧的東西, 巳經覺得值回票價, 這裡的出品正正就是一個很好的例子.

再來是香煎鴨胸, 本來三道主菜中宅女對這個是最沒有期待, 因為平時吃到的鴨胸都是清一色急凍出來, 很硬很乾的. 但這裡烤出來的鴨胸賣相有點像燒肉, 再入口試試, 味道竟然有點像我們中菜的燒鴨, 不過這裡的表皮香脆得來帶點煙韌, 而且肉厚多汁, 沒有我們吃到的燒鴨那麼油膩, 就算連吃兩大件都不覺得太膩.

最後上來的是一眾牛魔王期待巳久的美國牛柳! 以一個木盤盛著三塊厚厚的牛柳, 煎出來的牛柳外層焦香, 但中央仍是露出血紅色澤, 肉質非常柔軟, 肥脂不太多, 但吃起來肉味濃郁, 當中的肉汁也甚為鮮味. 其實這份看似不多的牛柳, 也有10安士, 一個人吃完後也非常夠飽.

看似是普通的朱古力慕絲, 但原來是用上了99%濃度的朱古力來做!! 未吃時還以為會很苦, 不過入口又覺得幾易接受, 苦度不太高, 反而帶著微微甘甜. 感覺不太像以99%來做, 不過質感幼滑, 味道不錯的確是事實.

來這裡吃普通一頓晚飯其實大約每人HK$300-400巳經可以吃到很飽.

而且他們時不時又會推出一些優惠, 例如某食網上的優惠券, 二人同行晚餐總計只需HK$500!! 以這個環境跟食物質素來說, 的確十分抵.

看到他們周末都有推出BRUNCH, 價錢每位只是二百多巳經可以任食頭盤, 下次一於找妹妹放假一同再來這裡試試.

香的芳香令味道錦上添花,羊肉濃而不騷。配烤蔬菜,咖啡椰菜花蓉十分豐富。

檸檬和分金寶分成兩部份, 檸檬酸甜度細膩, 吉士挺身帶有天然芳香。金寶脆脆則富牛油香味, 質感香滑

且撻底香脆, 加上水果和紅莓醬點綴更加賞心悅目。

貼心服務有如貴賓一樣, 加上高質素美食第和靚絕的環境, 一切也很完美。

我和朋友傾了一整晚也沒有被人打擾, 這裡果然是個傾計的勝地。

沒有帶上相機,也就沒有拍過Buffet table的食物,但是款式是相當多的! 除了多款沙律外,也有不少ham & cheese, 煙三文魚等,尤其喜歡吃煙三文魚,不會過鹹,而且帶有濃厚的魚油香,如果我的食量可以更大,也想多吃數片呢!

除了自助沙律及甜品外,每2位也奉送新鮮生蠔及蟹腳/ 焗生蠔配蟹肉餅,以及香煎鵝肝,還有主菜及餐飲,對於如此豐盛的午餐,友人C說想快點再來吃Brunch喎,您不怕胖嗎? 哈哈!!

由於我已經不敢再吃生蠔,所以選擇了焗蠔. 鮮嫩多汁的芝士菠菜焗蠔,絕不比生蠔失色呢! 友人說生蠔很新鮮,擠上檸汁也可見到裙邊郁動,很鮮味似的! 蟹肉餅也是啖啖肉,啱哂最怕拆蟹的我!

香煎鵝肝

不太喜歡吃鵝肝,如果不是brunch內已包括,自己也不會點來吃. 這鵝肝煎得很香脆,而且油脂豐盈,入口即溶,水準也是不俗的.

主菜方面,我們選了香煎澳洲牛里脊肉& 海鱸魚柳各2客.
