Starters

Our meal commenced with the Mizuna Salad, a delightful and crisp starter that set a light and refreshing tone for the courses ahead. The greens were vibrant and fresh, dressed with a subtle vinaigrette that enhanced their natural flavors without overpowering them.

Adding a touch of indulgence, we opted for the Hokkaido Scallop (at extra price). The scallop was expertly seared, boasting a perfect balance of sweetness and salinity. Its tender, melt-in-the-mouth texture underscored the quality of the seafood and the skill in its preparation.


Main Course

For the main event, I selected the Australian Wagyu Ribeye, a 140-gram cut of beef that did not disappoint. Cooked to perfection, the ribeye was rich and buttery, with a marbling that provided a luxurious, melt-in-the-mouth experience. The subtle seasoning allowed the natural flavors of the Wagyu to shine, making each bite a testament to its superior quality.

The Grilled Seasonal Vegetables served alongside were a delightful accompaniment. They were charred to perfection, adding a smoky depth that balanced the richness of the ribeye beautifully.


Sides

The Garlic Fried Rice was an aromatic and flavorful addition to the meal. Each grain was infused with a delicate garlic essence, providing a satisfying and fragrant complement to the main dishes.

The Miso Soup was a comforting classic, offering a warm, umami-rich broth that soothed the palate. The accompanying Pickles provided a tangy and refreshing contrast, serving as an effective palate cleanser.


Dessert

To round off the meal, we enjoyed the Yuzu Sorbet, a light and refreshing dessert that provided a perfect end to the lunch. The sorbet's tangy and slightly sweet notes of yuzu cleansed the palate, leaving a lingering sense of freshness.


Beverages

While we did not sample the Crown Super Deluxe Private Label Ginjo Sake, the wine selections on offer were tempting. The Fume Blanc from Ferrari-Carano, Sonoma County 2019 and the Costieres de Nimes from Chateau Haute Bergerade, Rhone Valley 2020 both appeared to be excellent choices to enhance the meal.

Just want to talk about the skill of the chefs. When serving the dishes, he was very uncertain and made many mistakes, the foods were not evenly divided. The most failure was that the assistant chef had a towel on hand which was usually used for wiping the iron plate and the spatula. When he used the towel for wiping, the towel touched the foods many times. This was really unacceptable….

食到呢度已經開始飽,飲啖湯暖暖胃。湯冇乜特別,只係有好有輕微蝦膏味; 炒飯粒粒分明,香口,調味啱啱好。蔬菜有三樣: 雞髀菇、菠菜、紫蘿蔔,分別點柚子+日式醬油、麻醬😌 其實crown既蔬菜幾有驚喜,始終大部份鐵板燒餐廳menu都係牛加海鮮,炒飯加麵豉湯,反而睇佢哋用咩蔬菜去配搭整個鐵板燒餐可以欣賞到師傅嘅心思和用心☺️☺️☺️

我有啲surprise大部分人嚟食飯就只係食飯傾偈,師傅喺席前烹調但好多外國人冇點欣賞。其實鐵板燒就好似omakase,我覺得就算唔想太多交流,只想靜靜地食餐飯,都可以細心欣賞師傅嘅功夫。我都好感受到師傅煮嘢食嘅熱誠…令到我同本本都有興趣煮下嘢食🤪🤪

回說鮭魚,最好當然吃到野生的啦 —— 春夏間北海道來的「時不知鮭」和秋天的「秋鮭」,都是妙品。日本人頗有詩意,認為春夏到來的鮭忘記了時間,稱牠們「時不知鮭」。野生鮭肉色黯淡,沒有大家都覺得漂亮的 bright orange,也幾乎沒有脂肪, 中間一間一間的白色脂肪欠奉,但吃過包你覺得三文魚有另一個境界。

【 Tokushima Tomato 】徳島番茄,酸中帶甜,清新爛漫,本身已經是水果一般,糖度不低,縱然清甜,又淡然低調。番茄一般都帶一點草青之味,台灣人加入梅粉,辟去那陣不是每一人都喜歡的草味,是 ingenious  之舉。這裡嗎,其實日本水果一樣的番茄草味已經很低,加點 crystal salt,那樣令番茄更加甜美吧?誠然加點鹽巴,令番茄味道更 sharp,十分好吃。

【 Foie Gras 】Foie gras 用京味噌醃過,小妹眉頭一皺,以為濃上加濃,會吃不下咽,那知,京味噌味道溫和,subtle 而甜美,大大 complementary to foie gras。說實話,小妹對這個配搭,覺得美得無言了啊,可以說是電影「反轉再反轉」,高潮中的高潮喔。這是其中小妹吃過最好吃的 foie gras dish —— 記住這個 comment 是跟 Tour d’Argent 、『うかい亭』這個級數的餐廳去比,完全是 my compliments to the chef 啊。

【 A5 Kagoshima Wagyu Sirloin 】有時候,主角只有靚仔,好酷,得個睇字,又或者期望過高,反而沒有配角的好戲。雖然有 theatrical 的 flambé,加入烈酒不全然是 gimmick,無疑令牛肉更香,不過這裡的主角 A5 Kagoshima Wagyu sirloin,小妹覺得不過不失,肉身未夠焦香(我沒有試另一位朋友叫的 tenderloin)。小妹美食經驗仍淺,不過幸運,跟朋友前輩,倒試過一些很令人回味的鐵板燒,恕小妹說一句,今天的 sirloin 完全不入圍啦,反倒其他菜式卻很有意思,亦令人印象深刻,正是配角比主角搶鏡。

關於 doneness,朋友 D 想吃 medium rare,小妹認為太肥美的肉必須要 medium 才夠「火候」,自己叫從來不吃生過 medium 的 sirloin (tenderloin 則可以並且必須生一點)。不過張就朋友口味,又想一想,也可以讓自己試下 medium rare 的和牛 sirloin 味道。

【 說遠一點】2019年在倫敦 Hawksmoor 吃英國「草飼」牛(我們去了 Air Street 那一家),那裡的經理生怕我們要吃太生的 ribeye,一早就建議要 medium,說英國草飼牛肉質太生不適合,那正合小妹心意呢。也想講一下,不少人愛玉米飼養的牛,又有一派認為 corn-fed 「營養過度」,牛隻生長不自然,牛本來不是吃草的嗎?Grass-fed 才是王道。小妹並非牛肉專家,不過吃過 Hawksmoor 的 grass-fed beef,肉質是較紮實(比美國牛肉更有質感),肉味也濃郁,小妹起碼認同 grass-fed 能養出質量極佳的牛。

要數小妹吃過驚艷的鐵板燒,必要說在銀座『五明』吃秋田牛 tenderloin,那位大師傅把牛柳放在鐵板不太熱處,先慢慢溫暖一下,才以大熱去煎到肉面焦香,那外香內軟,切開後燈光下看到的是 edge to edge dark red,纏綿的肉香是小妹吃過其中一個最好的鐵板燒牛肉。 

現在 teppanyaki 越趨複雜,例如『うかい亭』(鵜飼亭) ,有一道「大龍鳳」鹽焗鮑魚,看得十分過癮(而且亦很美味),其他菜式都有法國菜的影子。可以說,今天雖然菜式只是「豪華」,未算精緻。

【 蒜片、山葵、鹽巴】鐵板燒牛肉當然少不了蒜片。講蒜片,很多年前去神戶『和黑』北野坂店,那裡的大廚是一片一片去煎的,小妹瞪大眼睛,一來覺得神乎其技,二來心想要搞多久才可吃?後來『和黑』改了和其他鐵板燒店一樣一大堆去半煎炸,之後又改回一片一片地去做。個人覺得這樣作蒜片當然花時間,卻是很好的 theatricality。話說回頭 Crown Super Deluxe 的蒜片厚薄適中,也炸得香脆,調味也剛好,沒有得投訴既。

牛肉配 wasabi 和鹽巴,現在是主流並公認的「美食之方」。小妹對此食法並無異議,只是我認為牛肉加鹽巴已經足夠,或者沾一點醬油才佐以 wasabi,個人喜好。

【 Wagyu Garlic Fried Rice、Pickles 】普通炒飯和漬物。牛肉頗焦香(如果不用牛肉粒,而用肥到漏的純牛膏煎到「牛油渣」一樣就更佳啦),飯乾身夠火候,味道亦不差,但不是 big wow 之作。還有對餐廳並未提供小匙,要知道炒飯粒粒分明,不像日本白飯有黏性可以用筷子挾起,此等小地方,期望餐廳注意。

【 Lobster Miso Soup 】一個小湯品去完成一個 menu,不單美味和諧,那湯除了龍蝦鮮美,更有深刻的「茶香」,有種茶漬け的底蘊,構成豐富的層次,形成的味道 profile,小妺驚嘆不爾,是很燦爛的 finale。

(一)Deluxe Menu 沒有甜品和咖啡,當然小妹並不在乎那杯咖啡,要喝咖啡,行返落去 Coco Espresso、Cupping Room、Knockbox,任君選擇,只係覺得奇怪,為何結尾如此 「abrupt」,沒有見過這樣的 set menu。

(二)吃寿司也好,鐵板燒也好,當然不是單單吃眼前的菜式,還有看鐵板後為我們烹調的師傅,要知道日本一級鐵板燒的師傅,使用器具,烹調食物,都流水行雲 (小妹不是說 Benihana 那種雜技,而是看得出來游刃有餘真正的手藝),是日的午餐,食物味道還是不錯的,但是師傅手藝看上去雖絕不 rusty,卻有點 awkward。

【 總結】那是吃得很開心的一餐,雖然如上所述,並非盡皆完美。以電影來說,「商業元素」高,但中間有些驚奇位,「結局」的味噌汁令人欣慰,easygoing 間有 Art House 之韻味,總的來說,味道整體來說「平易近人」,份量也是中,還是滿意的。當然用這個價錢 $1,488 + free flow sparkling water $98 + 10% service charge,$1,750 一位,沒有開酒,以現時日圓匯價算算,可以到東京吃最好的鐵板燒了啦。至於小妹會否再來?當然會啦,Crown Super Deluxe 的酒牌不錯,我還是要來的試下紅酒喔。
