比平時刺鼻,同個醬唔係太夾
落得太多反而影響左成碟既味道
少番D就可以保持住吊味既作用

咁既價格又送埋豆漿真係好抵食

入到去坐低侍者便問我來過這裡沒有因我第一次來他便粗略介紹幾款招牌美食本想一試什麼汕頭魚丸的我己被攪亂了胡亂點了個撈麵坦白說那種橙啡色並不吸引而我所嗅到的又不太"香"噢 ! 己不抱期望我把蘿蔔上的葱花加上去感覺好點食落口居然讓我想到肉醬意粉這不就是中式的肉醬意粉嗎 ?其實入口味道不錯有幾種調味只是無法用突出來形容調味品之間互相蓋過對方味道太可惜 ...+$5的白蘿蔔反而有驚喜怪不得賣到斷巿了那個浸在雪白魚湯中魚味鮮甜味道突出又適中蘿蔔煮得諗軟又爽口 吃完良久沒有異常口喝應該無味精調味天然

When they came they had a slightly golden surface which was good because they were not burnt.
They had a really delicate taste and it was slightly sweet. I did not use the sweet chili sauce on it because I felt that vinegar or chili oil was a better complement.
The major let down was that the pan frying oil or the pan that was used had a rancid oil taste which really ruined the cuttlefish egg because the oil taste was very prominent.
As for the texture, it was so soft and foamy but if you compare it to marshmallow it does not melt in your mouth and it is firmer. The texture is really similar to those Japanese white pillows at 三河屋 MIKAWAYA and Issei Nabe.
Cuttlefish eggs are much bigger compared to fish roe, they are liquid filled sacks, which are grounded to make these!
As this is a rare item there are no other cuttlefish eggs in Hong Kong that I can compare to, so I do not know if that was how they were meant to taste.

Although the restaurant calls them noodles, they are basically fishball slices cut into really thin long slices like noodles.
The taste and texture is the same as fishball slices.
It is basically fine if you don't think of them as noodles and the thin stalked celery they used had a really strong taste grassy taste.

魚餃也是不錯的, 豬肉夠鮮, 細細粒很乾身而並非平時雪藏1下湯就不停滲油的那種。

麵和丸類製品都很讚, 唯一美中不足是湯很重師傅… 喝完超級口渴…
如果是真魚湯就會更好!!! 或是,, 下次不好再喝湯了。

位處於太子地段的潮汕魚蛋店"蒂蒂香",記得上趟是與同樣嚐吃如命的鄧sir一塊兒來,兩個人能吃能試的畢竟十分有限。今次再重臨時變了現在的一家三口,太太的食量固然是有一定的水平,再加上一見魚蛋便抓狂的小兒,看來今次可以多試好幾款東西了....主攻的仍是一眾魚類的製品。先來一碗魚餃魚扎粉,前者外層的燕皮看及食得出用上了不少魚肉去混和製作,入口帶點韌性且存魚鮮香。餡內的豬肉件是無添加之外有肉香及鮮且有咬勁,十分不俗;後者依舊是沒有塞入平常在外頭吃到常見的紅蘿蔔及西芹條,只是用上純魚肉搓成的外皮包入豬肉饀而已。儘管味道因而變得單調但勝在以無花無假真材實料的肉鮮香來突出自己;粉有點碎濕濕的但尚見滑溜;湯底色雖見少許混濁但味卻自然鮮甜....想不到這裡的墨丸也做得不錯 --- 有咬口爽勁之餘亦是能吃到不少的墨魚粒在內,夠足料味亦濃郁。畫龍點睛的一着是丸內是下了不少碎碎的芹菜粒,這從而就能吊出墨魚的應有鮮味來,是對版的;身為主角魚丸雖咬落爽口彈牙但嗒落魚味及鮮度卻沒想像中的強,對之是有點失望的....自己要的同樣是魚丸以及魚餃,與小友及太座吃的最大的分別便是要了魚麵。麵的質感尚算爽彈但魚味及香是稍為欠

這個晚上去開旺角, 回家前想買些好味的魚丸給老公吃.本來想買這店隔鄰的魚蛋舖的墨魚丸及魚蛋, 因為上次試過不錯, 可惜被這間舖的宣傳吸引, 又話X SAN 推介, 已經唔太信他的推介, 因為有數次頗失望的經驗, 但這店標榜潮州第一, 潮州出名魚蛋係人都知,買了四分一斤魚蛋, 四分一斤魚皮餃, 嘩, 要一百元一斤, 很貴, 所以抱有很大的期望, 怎料又是大失所望.魚蛋真是彈牙, 但味道麻麻, 鹹了點, 有少少魚骨, 不夠純淨.魚皮餃外皮不滑, 味道一般, 內裡有魚及豬肉混的饀.中國名牌魚蛋真比不上我們香港的, 我上星期吃的長洲魚蛋,無論質, 味, 口感, 都優勝很多.我都係做回港人愛港貨吧!今次是第一次, 也應是最後一次, NO NEXT TIME!吃後還整晚口渴, 因有味精, 香港的靚魚蛋那會用味精!OPENRICE, 這是本人真心評價, NO BIAS!!

買了四分一斤魚蛋, 四分一斤魚皮餃, 嘩, 要一百元一斤, 很貴,
所以抱有很大的期望, 怎料又是大失所望.

魚蛋真是彈牙, 但味道麻麻, 鹹了點, 有少少魚骨, 不夠純淨.
魚皮餃外皮不滑, 味道一般, 內裡有魚及豬肉混的饀.

中國名牌魚蛋真比不上我們香港的, 我上星期吃的長洲魚蛋,
無論質, 味, 口感, 都優勝很多.

我都係做回港人愛港貨吧!

今次是第一次, 也應是最後一次, NO NEXT TIME!

吃後還整晚口渴, 因有味精, 香港的靚魚蛋那會用味精!

魚餃魚麵($45)- 一向很愛這個配搭, 兩種"魚", "魚魚"得水(笑~), 市面上的粉麵鋪很多都因需時及成本原因而不肯自製魚皮餃,而來貨往往都是質素參差, 那些魚皮餃咬一下去是一口肥豬油的, 很恐怖. 這裡的魚餃是自製的, 個子小小, 一口一個很方便, 魚餃的皮有魚的鮮味, 頗為真材實料. 豬肉餡肥瘦有致, 不是一面倒的"肥", 不會弄致一口油. 另外豬肉餡之內竟然夾雜了蝦肉? 在別家沒有試過加了蝦肉啊! 感覺更矜貴, 更爽口. 魚麵又是自製的, 比較特別的地方是用刀切的, 每一條也是長短粗幼不一, 不像別家用機器唧出來, 而且又有生粉糊糊的在粘在魚麵上(說的是隔一條街的香XX魚旦粉,噓!!!), 吃下去的質地好像幼條狀的白魚旦, 沒有白魚旦那麼彈牙, 卻多了一點柔軟.

雜錦河($45, 魚卷加$3)- 有魚餃, 魚丸, 墨丸, 魚卷, 肉札, 雖然材料豐富, 但是索價45大元一碗, 料多實屬份內事. 魚丸彈牙有魚味, 但是吃不出和其他麵店的白魚旦有什麼分別, 還以為味道一定很驚艷, 失望! 墨丸一吃就知道是自製的, 凹凹凸凸, 小小個子, 沒有街外吃的肥豬肉味, 只有自然的墨魚味, 不俗! 魚卷很正斗, 用腐皮包裹鯪魚肉, 新鮮即炸, 腐皮卜卜脆. 鯪魚肉彈牙鮮美, 香氣逼人, 這裡的呀姐極力推介. 呀姐又說店子的河粉亦是與別不同的, 但是吃下去並不覺得與其他的有什麼分別.

值得一提的是這裡的阿姐人很好, 會主動介紹客人有什麼好吃, 做起事來快手快腳但不擾客人, 在粉麵店的標準中實屬難得. 說起"難得"兩字真是不勝唏噓, 良好的服務本是應份的, 但在香港的餐飲業竟然用上"難得"這個形容詞, 唉~~~

左邊的是魚餃。餃皮用魚漿製成,入口是繃實的,尤其是摺叠的位置更為明顯,但單從餃皮的厚度分析,厚度尚可,雖不薄但也不算厚,有待檢討。餡料是淡粉紅的豬肉,質感鬆軟、帶點油脂香氣,達到標準之作。

右邊的是墨魚丸。墨魚味不重、但丸內的爽脆墨魚粒、芳香的唐芹與及油香反而是焦點所在,可惜實在未懂得欣賞其彈牙的墨魚膠,個人認為彈得可以用生硬來形容。

魚卷反而是最感滿意的。魚卷外皮軟中富彈性,妥貼的包卷著嫩滑粉紅的豬肉餡,豬肉散發著恰好的油脂香氣,除了已結業的謝記魚扎,相信蒂蒂香的魚卷會是我的第二所愛。

白白的魚麵上散佈著大小不一的氣孔,入口啖啖爽口,完全沒有半點麵條的影子,像在吃著一束一束的魚片。

左手邊的是肉扎,近年在港似乎已少見了。質地爽爽的跟越南扎肉差不遠,由於切得較厚身,口感更強,最可取的是充滿了豬肉香氣,水準絕佳。

肚子確實飽了,但心靈未能得到滿足,希望能尋找到打動心靈的代表作,翻看餐牌不如來碗必食之選的胡椒豬肚湯。

湯面浮著多塊豬肚,細找下只有煮得溶化的酸菜。喝一口,老公點了一下頭,胡椒味濃烈、豬肚份量不少,豬肚軟綿中有咬口,不過過鹹是美中不足,鹹度該是不難控制的環節,相信待調節後,一碗售價僅15元而質量不俗的胡椒豬肚湯,必受食客歡迎。

蒂蒂香的魚製品全以人手製作,每日新鮮由汕頭運送至香港,理應是充滿了濃厚的鄉土風情,可能是基於對魚味的落差與那份未懂得欣賞的質感,初嚐後對大部份蒂蒂香的魚製品只有一份很奇怪,也不能理解的非人性化的感受。

When they came they had a slightly golden surface which was good because they were not burnt.
They had a really delicate taste and it was slightly sweet. I did not use the sweet chili sauce on it because I felt that vinegar or chili oil was a better complement.
The major let down was that the pan frying oil or the pan that was used because there was a rancid oil taste which really ruined the cuttlefish egg since it doesn’t have much taste, so the oil taste is very prominent.
As for the texture, it was so soft and foamy but if you compare it to marshmallow it does not melt in your mouth and it is firmer. The texture is really similar to those Japanese white pillows at 三河屋 MIKAWAYA and Issei Nabe.
Cuttlefish eggs are slightly different from roe, which are much tinier, these are liquid filled sacks, which are grounded to make these snacks!

The sauce on the noodles was quite nice, there was so much grounded sesame seeds in it and it was slightly sour. Apart from the sauce I did not like the noodles much because they were hard and chewy.

份量得好少.我先試啖湯,湯係魚湯,味道夠,再試吓滋味醬先,咩o野滋味醬呢?我食到o既係半肥瘦豬肉碎,而醬呢?我覺得有啲花生香味,男友將佢撈埋喇,佢要加啲湯o黎撈至攪得起,我又試啲手打麵,原以為手打麵會好彈牙,但唔係囉,只係爽,味道就有啲麥o既味道.好普通,咁就$30.00,唔值囉.

河粉都算滑,但標榜特級o既墨丸我就唔覺點樣特級囉,墨魚味都唔濃,只係啲肉唔’梅’,或者,’特級’兩個宇,o係呢o度唔係形容詞而係名詞,即係呢o度o既墨丸全名係’特級墨丸’,呢碗o野一樣唔值$30.00.

最後係煎墨魚卵,呢個要好耐至到,耐到我o地諗係咪漏單?o黎到,點解個樣咁o既?

有別於一般魚蛋店,它至今仍然沿用九棍魚、門鱔、牛鰍魚作為材料
做法是先將魚起肉,再打成魚漿,然後用手擠出魚丸,最後再用四十五度暖至熱水煮至熟透
因此是真正以人手打造的魚蛋,不僅費時,成本也相對提高

在這裡就說多一點用九棍魚做魚蛋的好處
因為九棍魚黏性較高,更易打成膠
這裡的魚蛋是每天朝早製作的,每日所吃的魚蛋也特別新鮮

店方也堅持不加殿粉製魚蛋,所以做出來的也比一般麵店的爽口彈牙
入口,果然名不虛傳,十分彈牙,只是魚鮮味不足,略有所失

吃落富魚香,亦沒有令人討厭的腥味

河粉亦有水準,幼身得來又微微透光
不易發脹又入口幼滑,口感不錯
清湯底亮不油膩,一問之下原來是豬骨湯底,真是喝不出,味道較為淡口

第一次吃煎墨魚卵,這款小吃在港實屬罕見
用人手將墨魚卵打足二十分鐘,撻成為漿,令其質感既軟綿又不鬆散
之後再加入紅椒和芹菜碎再煎
吃起來口感十分煙韌,入口不油膩
味道輕輕帶甜,又有點紅椒的刺激,很不錯
再蘸一點附上的酸辣醬,更覺惹味
推介大家一試

除了魚蛋和墨魚卵,聽說這裡的魚麵也不錯
下次也要找個機會來試試水準~

凍檸茶:下午茶時間係免費的.味道沒有味道只嫌茶味薄弱.味道有點過甜.但檸厚切5片,酸味突出..免費而言的確真材實料.

魚旦河:我食時侯.店內一位股東同朋友傾計.我聽到河粉是朋友介紹入貸,不會碎.不會發大.相當幼滑.是真的.河粉沒有問題.
湯底是淡淡的豬肉湯.雖則好淡.也算有甜味.淡也好過加味精.但魚旦我不覺得是彈牙.我覺得是硬.魚味亦不覺有.我明明吃魚旦.但感覺似吃無餡硬湯丸,這些品質,不要同名店比,和我幾日前在上水吃的魚旦還差百倍,這是百年名牌?

對不起!是我味覺有問題.我聽到股東對長龍魚旦店的出品是認識的.也埋怨生意淡薄.在旺角食店眾多,要突圍,要改善食物味道才行.但計服務是出色.計價錢是便宜的..若我知道味道有改善,我會俾次機會呢間店.
