我很喜歡鐵壺,總覺得很酷。聽聞有種行業是專門去日本鄉郊一帶收買破舊的南部鐵器,這應該是個非常有趣的工作。大都淮揚跟其他用白瓷茶壺的中菜廳不一樣,他們選用更有質感的鐵壺,印象中除了這兒,Pinot Duck採用的鑄鐵壺也很有特色。用這樣的茶壺來喝茶,心情也就自然更愉悅了。

這個北京田鴨跟一般的更仔細和體貼,涼伴的蜜瓜絲、紫蘿蔔絲和青瓜絲的大小粗幼均一,切片均稱亦証明了師傅的刀工不賴。眼前涼伴的配搭,為平時的單調加入清新的口感,juicy的瓜果亦可減低烤鴨的油膩感。有時在外邊的餐廳吃北京田鴨,店方把薄薄的餅皮堆疊起來,然後要拿起來吃時就不好撕,結果不是一口氣纏了好幾片,便是直接把餅皮給撕破了,挺狼狽的。大都淮揚的做法是以牛油紙把荷葉餅層層分隔,吃的時候便方便得多。個人覺得,如果論鴨皮的味道,似乎不及沙田18,但這裡的皮更透薄,而且表面在光線透射下沒有半點惱人的黑毛頭,師傅肯定花了很多功夫去處理,這點實在非常難得。

吃完烤鴨便開始吃點心,這兒的蝦餃有兩款選擇,普通版的「大都蝦餃皇」($65/四件),價錢跟一般中菜廳差不多,特別版的「生剥海中蝦餃」則每件要$68,我們選擇了這款。它的造型展現出鮮蝦的模樣,為賣相的餃,師傅巧妙地用回鮮蝦本身的觸鬚,再加上卷曲效果,有種像二撇雞大叔的搞笑感。橘色的餃皮從頭到尾由面至底包住整隻比中指還要長的大蝦,內裡除了蝦肉和膏味,並無豬肉或尖筍等其他添加。由於size比較巨型,女士可能要擘大口吃才成。

淮揚灌湯小籠包也是這兒的招牌菜之一,它的大小、摺紋,以至是頂部的排氣孔都彷彿是劃一的size,帶點旋轉的形態優美而且非常工整均稱。用筷子把小籠包夾起時,拉緊的皮顯露出透薄,內裡盛着湯的肉餡,溫熱不燙,用來調味的黑醋更是酸辣當中帶點鮮甜。

午餐的尾聲,我們選擇了兩款的甜品。第一款是像真度極高的桂味糯米糍,$60只有兩顆,因為外殼表面呈現荔枝獨有的凹凸坑紋,驟眼看的話還真以為店方送來了飯後水果。更令我們驚訝的是,當我們剥開表面紅色的白朱古力外殼,內裡用透明啫喱做的荔枝果肉也相當神似,因為加入了荔枝肉,所以份外香甜。如果外殼的白朱古力可以減甜一點,相信會更加出色。

最後的一道甜品叫「竹葉青」,賣相可愛之餘,味道亦汲叫人失望。不過,這款甜品是每位$60,所以要注意清楚哦。石板上的三枝矮小的青竹,其實是以特薄的海綿蛋糕皮包裹,入面再注入香軟的忌廉,口感也有點像布甸,奶味雖然重但味道還是太甜。主角熊貓的身體內藏有流沙custard,但椰絲和糯米的味道太香,蓋了吉士原有的味道。

不得不提,這兒的服務非常細心,食物水準也相當創新有驚喜。店方雖然用上陳年普洱等靚茶,但茶錢卻不過是每位$20。我們今日只吃了幾款點心,希望下次晚市可以再來,品嚐一下賣相和刀工同樣出眾的「一枝獨秀」及「文思豆腐羹」。持AE的朋友更可獨享 75折,實在是非常抵吃,不過要注意午市是14:30 截單哦。2014年,四月曾經深深的為明閣着迷,今年嘛,我一定選大都淮揚喇~

Dated back to Pre-Chinese New Year dinner with my dear and auntie. Chinese restaurant decorated in the combination of traditional and modern touch, of which it is dimmed like a western bar. Its fame of delicacy, presentation and hand-craft of the chef.

Tea charges per person or per pot, ranges from 20ish to a hundred. Started with appetizer of honey-glazed ham (right portion of sweetness and the ham is at the right tenderness) , stewed pork (with the right portion of fat and meat, and not-too-oily saucing) broth fungi and vegetable, diced and minced duck in chrysanthemum (absolutely hand-crafty, and the diced goose served with egg wedge), chinese rice cake and spring onion stir-noodle.

It feature the novelty at the expensive price.

Located near the Convention Center, Empire City Huaiyang serves high-end Chinese cuisine - specially Huaiyang cuisine which is one of the Four Great Traditions that dominate the culinary heritage of China. I haven't been to its sister restaurant Empire City Roasted Duck in K11 but both restaurants seems to pride themselves of their signature roasted Peking duck.

We ended up getting half caviar and half foie gras which arrived between layers of crispy duck skin, duck meat, fluffy bun and cucumber. The foie gras had a layer of apple jelly that was quite tart in flavor which I felt stole the attention away from the duck while the saltiness of the caviar complimented the dish better. Overall, the Peking duck was of very high quality and not fatty at all.

To be honest, I felt that the price was quite steep for the portion but it was interesting to try these unique combinations for the first time. I wouldn't say they didn't work but they also didn't elevate the flavor of the duck to a higher level so I would just stick with the original next time.

Stir-fried Minced Duck Meat with Pine Nut and Conpoy ($60 Half/$120 Whole) - now if you're wondering where the rest of the duck went after it has been skinned for us, we were able to choose from a variety of dishes that can be made of the remnant of the duck. This was highly recommended to us where the minced duck meat had been stir-fried with nuts and chili so it was deliciously spicy. Served with a choice of lettuce or sesame pastry, we opted for the pastry which we filled up with duck meat and ate it like a burrito!

Deep-fried Kurobuta Pork with Iced Fruit and Coral Shape Sugar ($238) - I love sweet and sour pork so I was most excited to try this dish actually! The Kurobuta pork was definitely camera ready as water was poured over the dry ice it was sitting on to create a smoky waterfall effect. Besides its looks, the flavor was on point as well as the pork was crispy and succulent while the iced fruits complimented the pork nicely. I just wasn't so hot on the pieces of pork that got cold from touching the ice though - I think they should separate the ice because the crispy pork is best eaten hot.

Rice Cake Dumpling with Custard in Panda Shape ($60 each) - to round off our meal, we ordered this cute panda dessert which was almost too pretty to eat! This cutie was a rice cake dumpling filled with custard which was yummy as it was like eating a custard bun. The bamboos in the back were edible too as they were cakes with bird's nest jelly inside.

貴為久久不衰的淮揚前菜,自有一番本事,本來就是平平無其的豆腐乾,經大廚之手,變成一道構圖漂亮的開胃前菜,切至長而幼之豆腐乾絲及紅蘿蔔絲,絲絲交扣似個魚網,確有刀功;乾身而不旱,微涼爽口,不鹹不淡,好一道開胃小吃!

另一道普遍的淮揚前菜,本來就是麵根,卻表面有汽孔,質感如海棉,出色之處在吸汁能力高,而調味之醬汁一向味道豐富,亦鹹亦甜,看似平常,經理推介,又確實滋味,伴以青豆粒丶木耳丶及白芝麻增加口感,是我喜歡的小吃。

刀功菜式開始,不可不嚐梳衣磨菇,有如其名,磨菇原狀切至薄片,看似密密麻麻的梳子,以蠔油醃味,單一味道,簡單直接,不會令人驚喜,卻又喜歡。

出場震撼,眾人興奮,忙於拍照,非常搶鏡!白色的酸蘿蔔切粒卷起,中央再加一棵紅色的,砌成花朵圖案,已經叫絕,但心思細膩,就是根莖亦以梳衣磨菇及木耳片組成,花支就畫在碟上,遠看如長碟上畫了一朵立體花。

雅片魚真是既未聽説更未嚐過,原來肉質仿似銀雪魚般嫩滑厚身,但吃魚頭肉不多,魚頭炸至十分酥香脆口,但魚骨郤又軟身,機乎可吃,只嫌分吃份量太少,再訪的話必定重温。

名閒遐邇,亦曾在別處嚐過,亦在電視見過大師表演,廚師就是用利刀,利用手指輕輕退位,乾淨俐落,快刀切絲,然後放在白水內,有客人點菜,就取出豆腐用上湯灼熟。

刀功細緻,難以想像!味道討好,相信是雞湯湯頭,加鮮蝦及青菜絲同煑。吃的就是刀功!

另一道刀功湯羹,原來是把豆腐切成菊花狀,難道更高,中央添一粒杞子,形態仿真度高,但顔色非黃,需加以想像,菊花豆腐非常軟弱,小羹一碰即散,未能盛著整只菊花拍照!

同樣是高湯底,但沒有蝦仁及青菜,味道不及文思豐富。
