相當大份的Galette,用料雖然簡單,就是芝士火腿加個蛋,一目瞭然,但配搭起來卻已足夠美味!這家的Galette餅皮做得相當可口,焦脆得來完全不苦,口味上絕對比LA Creperie來得好!更別提在氣氛上比它優勝百倍!(在LA Creperie吃平日午餐感覺跟打仗沒分別!)這片Galette真是相當美味又飽肚!滋味喔!

甜品Crepe也是大大一塊!用上簡單的焦糖漿已經相當可口!Crepe皮相當軟韌,很有嚼勁Homemade Caramel Sauce味道十分好,濃甜美味,吃完真是相當滿足!

總括來說,中環這間Fleur de Sel真是很好的法式Galette Lunch之選,除了地點不太就腳外,其他如環境、服務、食品、價格都相當好,我是真的頗意外午市時段竟然只有兩桌客人到訪,實在不解…Anyway,對我卻不是壞事,讓我慢活了一個寫意悠閒的午餐~

Speculoos crepe with vanilla ice cream (sprinkled with crushed speculoos) ~$80
To be honest $80 is really expensive for a crepe considering how it's really just eggs, flour, sugar, and whatever condiment they pile on it. Sigh. As with many other things. Okay it's really eggy biscuits taking a flatter, bigger form, with toppings. Meh. Eggy biscuits cost $20 max per batch. 

By way of background, the idea of a speculoos crepe appealed to me at all only because G introduced me to the wonderful and amazing realm of speculoos (by buying me a jar of cookie butter from Trader Joe's). Thanks, G.


The crepe was around two 10 cents coins thick and quite even. Tasted sufficiently sweet standing alone. No crisp edges because it wasn't thin enough, but it's alright because the topping was tasty. A thick, guilt-inducing spread of speculoos on half of the crepe; quite sweet but slightly savoury at the same time; kinda like peanut butter but sweeter, and spiced with, among others, cinnamon and nutmeg. The lone scoop of vanilla ice cream was not too sweet or thick which helped to cut the sweetness. Only vanilla would've worked, out of the conventional ice cream flavours. Chocolate would've been too rich. The speculoos sprinkles added an extra grainy texture to the otherwise doughy dessert. Not that it was necessary - didn't care much for texture because it was too yummy.


Late night desserts...once in a blue moon. Glad I shared it with you, E.  

Conclusion
Won't mind returning to try some other crepes, maybe the savoury ones. But I feel indifferent towards the creperies in town - the more well-known ones being La Creperie and Fleur de Sel. La Creperie has a wider selection of food I think, and a longer establishment. I was equally happy with my experiences at both restaurants.

朱古力醬,好吃!如再多d可以食真d,因為甜餅比咸餅厚身,需要更多的漿汁伴食。
幸好咸餅是薄薄的麥餅,兩個人吃三片,總算清得晒。再加甜一塊(雖沒topping)真大滿足。

最後附送的甜品,選了朱古力口味。簡單的在crepe上淋上朱古力醬,切開九份均分,每片都沾上不少份量,加上餅皮柔軟非常,吃下不會有乾啃的感覺。一份三人分享,輕輕地滿足了我們的甜牙齒。

I loved the Fleur de Sel in CWB. Unfortunately I live quite far from CWB and getting there is a hassle. So imagine my joy when they opened one in SoHo! I have to say this one seems to be a bit better than the original, not sure why. It is also quite a bit emptier, again, not sure why. I have to say this one seems to be a bit better than the original, not sure why. It is also quite a bit emptier, again, not sure why. Delicious, reasonably priced, authentic French crepes in SoHo, it really should be quite full on a Saturday night.
Either way, every time I've been here, I've had great friendly service, waiters who aren't too busy or uptight to have a small chat and make recommendations or answer questions, and thoroughly enjoyed the whole dining experience, though admittedly the windows could be a bit more soundproof.

The last time I was there we tried a Truffle crepe and a French May special, the Bourguignonne, snails and lardons. Both were delicious (though I think leaving out the optional camembert from the Truffe would be a good idea as it is heavy and tasty enough as it is, and will save you $20 in the process). The Bourguignonne did not skimp on the escargots, and was very well cooked. The dessert crepes were amazing as always, the special French May choice was one with pannacotta and red fruits (I forget the name), unusually tied up into a bundle with some type of string candy. The fresh, tangy-ness of the fruit went perfectly with the sweet whipped cream and chocolate crepe. I hope to see this one staying on the menu after the French May is over.

And of course you must have some cidre with the crepes, it really enhances the flavour and counteracts the richness.

For a 2 person meal with 4 crepes and 2 cups of cider, we spent $530, extremely reasonable.

To sum up, Fleur de Sel Central makes for a great romantic dinner or even just with friends. The food is priced right and tastes great, the atmosphere is very nice, the service is friendly, and the location is convenient.

*the phone will usually be answered in French in my experience, but don't let that put you off since they speak perfectly good English too.

先來味道相對較淡的開始Tofu,Pan Fried Tofu,Spinach,Sundried Tomatoes & Emmental Cheese,$92。這款像是平行四邊形的薄餅上放了煎香的豆腐、蕃茄乾及菠菜,豆腐切成特別形狀,賣相特別。薄餅皮質感略帶微脆,濕腍程度沒上次吃的那麼高,也還可接受。吃下也有蕎麥香,但並不算十分濃烈,跟著淡淡的豆腐及菠菜,配上Emmental Cheese,味不會太濃太搶,是款口味不錯的素食薄餅。

然後是Le French GourMay餐單內的三款口味,Oeuf Meurette,Poached Egg,Mushrooms,Bacon,Croutons,Burgundy Red Wine Sauce,$98。以水煮蛋作薄餅配料,吃時把蛋切開,鮮黃色的蛋黃漿緩緩流出,滲於薄餅上。而Meurette是一種加入了紅酒來煮成的濃縮醬汁,把它淋在蛋及薄餅上,把蛋白表面都染紅,又為薄餅帶來深紅色。吃起來蛋香中帶著酒甜,還有蘑菇、火腿及芝士的鹹香,味道層次甚豐富。

吃過鹹薄餅,然後便是甜吃Crêpe,Le Neige,Chocolate Crêpe,Marshmallow,Vanilla Ice Cream,Coconut Rapped Chocolate Sauce,$72。深啡色的薄餅皮加入了朱古力粉來造,吃起來質感柔軟,又帶濃郁的朱古力味,配上香甜的棉花糖、雲尼拿雪糕及椰絲朱古力醬,甜而不溜。

最後還有Crêpe a la bannane et au caramel beurre sale,首先本人十分喜愛焦糖,同時亦超愛吃LA Creperie的焦糖薄餅,而且也要試試這裡的焦糖口味。薄餅沾滿甜膩焦糖醬,味還算不錯,但可以再更焦香一點,才能突顯焦甜。而整體甜吃的薄餅皮質感也柔軟,而LA Creperie的吃起來會多一點韌度。

今天吃的薄餅比上次在銅鑼灣店吃時,質感都好吃得多,雖然薄餅皮的麥香好像未及在法國吃的般濃烈,但其配料、配搭、醬汁等,所創出來的口味也特別,味道來說挺不錯。客人若在五月及六月來到中環的Fleur de Sel,選吃三個鹹或甜薄餅,便會多送一個甜Crêpe。

The cheese is semi-stinky and famous for not being allowed on the trains in France. This came with some Lyon Rosette saucisson and potatoes beneath. The cheese taste is not overly ripe today, which made it more approachable. The thinnish layer of galette is still a bit obvious here. ~ 7/10

I really liked the vision and new recipes presented here by the Chef.
On the other hand, I find the buckwheat galette base to be a little thin and can do with more buckwheat influece. The sweet crepes were much better but more elastic. I think I liked the recipes the most here, but the base crepes can see room for adjustment for now. But within this month, you will experience some Burgundy based meals in the meanwhile..

第二款是Bourguignonne,這一款三角形的Crêpe,上面鋪上了菠菜、煙肉、蘑菇、法國蝸牛,上面則是加入了白酒來調煮的法國特色醬汁,有點像Carbonara的味道,卻因加有白酒而輕帶酒香,另一邊廂醬汁調得很濃,濃稠黏黏的感覺和法國蝸牛是很好的配搭,是三款法國五月特式Crêpe中個人最愛的一款。

本是圓形的Crêpe,放上炒香薯仔、風乾火腿後,四邊短摺包裹,就成為這四方形的Epoisse。Epoisses cheese則是在吃之前才加上去的,其芝士香在打開盒的一剎那已經深深感受到。

這款Crêpe雖沒有任何醬汁相伴,但單憑Epoisses cheese和從里昂來的美味風乾火腿,兩者那無形的張力,已經足夠讓我等芝士控滿足好一陣子了。

幸福,可以很簡單,來一件甜的Crêpe就可以。La Neige,是大廚在遊日時看著雪景時所啟發出來的。把朱古力融入班戟餅底之中,灑上椰絲、綿花糖、雪糕,營造出雪的意境,只是看,已經深深感受到那甜蜜的味道了。

賣相好,味道也好。餅底充滿著朱古力的香味,效果比單純麥味的討好得多,一眾配角都甜而不膩,使得朱古力味更見突出。果然,朱古力就是情侶間最甜蜜的魔法之藥。

從之前兩款甜的Crêpe已經感覺甜蜜滿瀉?吃罷最後一款La Speculos才是真正的甜蜜大圓滿!La Speculos用的Speculoos是比利時一種餅乾,帶有肉桂和豆蔻的味道,所以十分適合用來做成甜品

La Speculos就在Crêpe上塗上這特製的Speculoos醬料,質感有點花生醬的影子,味道則是肉桂和豆蔻。雪糕球上也有灑上Speculoos粉,看似米糠布甸,整個Crêpe都充斥著Speculoos的味道,卻又不會只感覺到肉桂的甜味,很有特色。

斜坡上的幸福Crêpe,使我的法國的回憶再度被勾起,五月,是屬於法國的。明年五月,可否親身再到一次法國,再一次近距離感受一下法國人的浪漫情懷呢?

看看餐牌, 這裡主打的就是法式班戟, 款式還真是多. 像咸食班戟 (Savoury Galettes) 巳有接近廿款左右, 由CLASSIC一點的像是火腿蛋芝士口味, 到大廚設計新穎一點甚至加有黑松露口味的都不缺, 更會照顧素食者有幾款蔬菜口味的, 價格由HKD$79到最貴加有鵝肝的HKD$152都有. 而甜食班戟(Crêpe) 亦同有廿款口味之多, 除了有基本的朱古力或雪糕口味, 更居然找到用KINDER出奇蛋, 金莎或三角朱古力的款式, 價格比咸食的較便宜, 由HKD$41到加到BAILEY的HKD$92不等.

而這裡平日一至五LUNCH時間也有套餐供應, 包括一份沙律+一件Galettes+咖啡或甜品只需HKD$88, 大胃口一點的可以來一份Galettes+一份Crêpe+咖啡也只是HKD$108, 算起來較單點划算得多.

不說不知原來法國人吃班戟時很愛配上apple cider (有氣蘋果酒)來喝, 因此店內亦有供應幾款不同口味的cider. 除了有最傳統的蘋果口味, 還有梨味, dry cider或是用來配Crêpe的sweet cider口味. 酒精度只有2.5%, 最高含量的dry cider也只有5%. 宅女試了傳統一點的apple cider, 其實入口比較像有氣蘋果汁, 酒味相對較低. 我想來吃一件班戟配一杯的話應該也不會醉吧.

一大片的班戟上餡料擺放得滿滿的, 而且也是花過心思, 賣相吸引. 不過最搶鏡的還是放在頂頭的一隻半熟煮蛋了! 一切開時鮮黃色的蛋汁緩緩的流出來混進底下的配料內, 未吃巳口水直流了. 而底下的配料其實不算多, 只有蘑菇, 煙肉和炸面包. 但最令大家驚喜的還是用上了Burgundy Red Wine 來做成醬汁. 如果對酒有認識的朋友應該也會知道Burgundy是法國生產最昂貴的葡萄酒的地方, 但真的想不到用紅酒來配班戟原來亦非常對味.
班戟不算薄, 吃起來帶點微微脆口, 配上紅酒汁吃, 入口不覺有酒精味, 帶點香甜但吃起來很有酒香, 加上蛋汁的豐厚和香脆的面包塊, 口感豐富, 大家一致讚好.

上來這款果真是非常大堆頭, 材料用上法國的蝸牛, 還加有蘑菇, 煙肉, 菠菜, 以白酒汁做成. 單看那堆滿滿的蝸牛巳令人食指大動了! 蝸牛粒粒都很飽滿肉質十分彈牙, 混著濃稠的白酒汁同吃口感十分CREAMY, 味道的確是非常濃郁, 宅女一向重口味, 因此特別喜愛這個, 亦是令我最滿意的一款班戟.

這款材料雖然用上最少的, 但相對地亦是令人最飽肚的一款. 班戟內包著堆得滿滿的薯仔粒, 上方再有幾片Rosette de Lyon風乾火腿, 最後加在表面的幾塊來自法國的Epoisse芝士才來點睛之作. Epoisse芝士同樣屬較重口味, 芝味比較濃郁, 跟底下的薯仔粒吃起來很配, 加上火腿咸咸香香的, 不知怎的覺得這個班戟很剛強, 很適合胃口大一點的男士們.

如果說剛剛的EPOISSE是男士口味的班戟, 那麼這款豆腐必定是愛健康的女仕們的心頭好. 材料用上菠菜, 蕃茄乾, 豆腐和emmental cheese. 豆腐煎得香脆而且更做成餐廳的logo, 十分特別, 底下的有菠菜吃起來比較清淡, 不過配上味道濃一點的蕃茄乾又剛好能平衡得到. 芝士用了富奶香味的emmental芝士, 濃度不會過強, 跟這個較清的班戟同吃, 清新得來亦很夠味. 最近流行green Monday, 不妨來試試這個素菜班戟也不錯呢.

這款亦是宅女另一個心頭好. 脆脆的班戟包著火腿, emmental 芝士和camembert芝士, 表面更有隻流心蛋黃和一圈黑松露醬, 香氣撲鼻, 十分吸引. 這款除了有黑松露之外, 重點當然用了雙重的芝士來製作, 有帶奶香的emmental跟軟心的camembert芝士吃起來味道十分濃香, 芝士味不會過於強烈恰到好處. 而切開蛋黃讓蛋汁流入火腿和芝士中間, 吃起來味道更豐富, 而且大片的餅身跟配料吃又不會太膩. 吃著吃著宅女奢侈地想如果這款可以每天早餐都吃到便太好了!!

吃完Savoury Galettes, 當然也要來些甜的Crêpe了.

上來一碟看見大大片的朱古力班戟卷成一個小袋子的, 造型非常特別呢. 原來內裡亦別有洞天, 裝著的是一大個冰凍的雲尼拿雪糕! 班戟皮吃起來較軟身但富朱古力味, 配上內裡奶味香甜的雪糕相當對味, 旁邊更有法式奶酪和雜莓醬, 前者配上同吃多了幾分豐厚感, 後者酸酸甜甜的令整個甜點更富層次感.

這款材料也是十分簡單, 但味道出來是三款之中最特別也是最有驚喜的. 班戟和雲尼拿雪糕上洒滿了啡色的餅碎, 看似沒什麼特別, 但一問之下原來餅碎是用上了比利時的Speculoos餅做成的, 這款餅乾用上肉桂和豆蔻等材料做成, 但吃起來味道不會過於強烈. 班戟中間亦塗滿了由這個Speculoos餅磨成的醬, 看起來像花生醬不過入口更香更帶有輕微的肉桂香. 宅女本身不多愛肉桂, 但也覺得這款味道十分特別, 可以一吃再吃.

這款用上朱古力做成的班戟 再加上大量的朱古力醬, 喜歡朱古力的朋友見到必家大喜. 上方還加有不少棉花糖和一大球雲尼拿雪糕, 不只小朋友, 連我們大朋友看到也興奮無比!! 朱古力班戟想不到又幾濃郁而且不會乾巴巴, 配上朱古力醬和雪糕吃十分滋味. 中間鋪了適量的椰絲吃起來更添口感. 宅女本身不太愛椰絲但因為下的量不算多所以也覺得不錯. 這款屬甜度較高的班戟, 不過喜歡朱古力的朋友吃完必會滿足.

感謝店方邀請令宅女吃了一個豐富又特別的班戟餐.
最後還讓我們入廚房了解班戟的製作過程, 得知店內所用的班戟機都是從法國運來的, 製作的確非常認真, 實在令我們大開眼界.
店內的班戟水準大致不錯, 尤其當中有幾款味道令人難忘, 宅女也打算下次再去番吃.
而最近店方也在做優惠, 由現在起到6月底, 買3個班戟即送1個甜班戟, 只限中環這家店.
宅女巳計劃好, 雖然今年未儲到錢去法國, 但一於下次拉埋大爺再來吃, 齊齊來感受一番法式風情, 吃個法式班戟, 就幻想當是自己去了一趟法國也挺不錯呢~哈哈!

Oeuf Meurette ($98)。這款薄餅的賣相很特別,中間白色圓圓的東西看起來像雪糕,一時間也聯想不到是poached egg,雞蛋切開的時候不算是流心,蛋黃顏色比較淡,蛋白的部分挺厚,不過那個紅酒醬汁做得非常好,所以就算配料只是簡單的蘑菇和煙肉,都已經很好吃。我認為這是三個special之中絕不能錯過的一款。

Epoisses($125)。薄餅裡面有芝士、薯仔粒和幾片來自里昂的風乾火腿,大量的薯仔粒其實都幾飽肚,而風乾火腿油脂豐富又富咸香,很好吃,但最讓我們著迷的是那盒來自法國的Epoisses cheese,芝士味超濃郁,入口軟滑,味道久久不散,雖然主廚著不要加太多以免搶味,但我們還是忍不住吃了不少呢。

La Neige ($72)。主廚邀請我們到廚房看著整個製作過程,還介紹用來製作crepe的熱盤子是由法國運來的。La Neige在法國代表雪,這是他某次去滑雪的時候突然有靈感而設計的一個crepe,朱古力的餅皮,配搭雲呢拿雪糕、棉花糖和加入椰絲的朱古力醬,簡單好吃。

La Speculos ($72)。可能是因為之前兩個都是朱古力餅皮配雲呢拿雪糕,因此顯得這個crepe比較特別,但平心而論,這款crepe的確是三款之中最最好吃的。Speculoos是一種餅乾,帶點甜味,有點像甜版消化餅,主廚把餅乾弄碎再灑在crepe上,加上一球雲呢拿雪糕,看似普通的但味道超夾,大家都讚不絕口。

由即日起至6月30日,餐廳推出Buy-3-Get-1-Free的超值優惠,點三個crepe就免費可以得到一個extra的甜crepe做甜品,可以選朱古力、焦糖或牛油砂糖口味,但只限中環分店。另外法國五月的menu只會在五、六月推出,如果想吃的朋友一定要趁早,否則就會錯過呢!

吃完上面那個,喜歡cheese的我意猶未盡,又選了一款有cheese的來吃,而goat cheese較cow/boffalo更重味,分量也不少,並且用了蔬果卷起cheese,濃重中夾雜了清新的味道,口感多了一份清爽,處理手法很不錯。菠菜與bacon的搭配並不陌生,一葷一素,相得益彰,cherry tomato視覺與味覺上都是點綴。整體來説這款更加重口味一些。

La Calvados ($72): Cinnamon, Calvados with apples and a touch of cream
有驚喜的甜味Crepe,關鍵就在calvados上。這種法國產的apple brandy香味濃郁,又不會太重酒味,很合適用來做甜品,配上vanilla ice cream的牛乳香甜,非常好味。中間的pear也用酒浸泡過,吸足了象棋,又有自身的清爽,再加上cinnamon,味道更豐富,彼此閒也很融合。

This was caramelized pears with lavender, creme brulee ice cream and chocolate sauce.
You could visually see the lavender buds too.
I do not like lavender but with the pear it tasted surprisingly nice. I suspect the ice-cream was Haagan Daz's creme brulee ice-cream.

This was caramelized onions, anchovies, black olives and fresh tomatoes (cherry tomatoes).
It was good because the crepe base was not burnt, it was crispy and slightly soft in the middle.
The cheese was grated really finely and parts where it melted made the crepe nice and savoury.
Overall I really liked the pizza ingredients on the crepe but without the tomato sauce.

我覺得血橙汁比橙汁甜,所以她跟我一樣選擇!
