好有驚喜

由於我係星期日過嚟 但係人流都比較少

先黎個凍盤潮式凍龍蝦, 平時既龍蝦多數清蒸或者刺身, 呢個煮熟之後再雪返凍佢,
原來鮮味道更加濃郁, 而且肉質飽滿結紮實, 更覺彈牙, 確實不錯.

終於等到開放晚市堂食, 急不及待跟舊同事聚一聚, 公司附近的既潮式酒家, 平時食都唔錯, 今次試下晚市先.太耐無堂食晚市, 今晚一於豪一豪佢, 侍應介紹將近失傳既潮式名菜, 叫堂灼響螺片, 係潮州菜既手工名貴菜式. 響螺都好大隻, 手臂咁長, 侍應先比我地望下, 之後再拎入廚房打爛佢, 隔左一陣, 螺肉已經片好一片片, 每片都好肥大肉厚, 斤兩十足. 跟手就響面前幫你灼, 沙煲入面仲放左雞, 火腿等等既上湯, 輕輕既一灼, 大約八鈔左右, 來回拖拉, 熟度剛好, 即刻上碟.一放入口, 口感極爽脆, 無加任何調味, 濃郁既海鮮清甜味慢慢滲出, 非常新鮮, 令人一食難忘.另外仲食左凍花蟹, 又係夠大隻, 橙紅外殼賣相不俗. 凍蟹咬落一絲絲既肉質, 扎實夠鮮甜.

響螺都好大隻, 手臂咁長, 侍應先比我地望下, 之後再拎入廚房打爛佢, 隔左一陣, 螺肉已經片好一片片, 每片都好肥大肉厚, 斤兩十足.

跟手就響面前幫你灼, 沙煲入面仲放左雞, 火腿等等既上湯, 輕輕既一灼, 大約八鈔左右, 來回拖拉, 熟度剛好, 即刻上碟.
一放入口, 口感極爽脆, 無加任何調味, 濃郁既海鮮清甜味慢慢滲出, 非常新鮮, 令人一食難忘.

添財雞亦即是鹽焗雞。師傅把雞隻各部份切件後再拼砌整齊才奉上,可見賣相美觀且富有心機。潮式做法的特色是雞皮膠質較多,味道滑溜鮮香,肉質鹹香軟嫩,雞味濃郁。

總結而言,餐廳設計裝潢較為簡約樸素,內裡可見櫃上放滿各款擺設和字畫裝飾,環境方面舒適整潔,乾淨衛生,菜餚製作用心,味道正宗可口,是品嚐潮州菜的好地方。
