蛋包飯一直都是小弟甚欣賞的日本食制。曾去過幾處做蛋包飯蠻有水準的地方如Niji Bistro及Panda等,之後一路在等更出色的小店出現。前陣子聽許多食友說這裡的出品很好,不過由於向隅者衆多的關係,若不預早訂座的話就很難吃得到。這一次小弟趁著平日下午剛開店的非繁忙時間到來,我想應沒大問題了吧?除了普通的蛋包飯之外,聽聞一道芝士流心漢堡扒也是名物之一。在點菜時看到隔鄰檯點的,看起來的確很是對勁,心裡也就猶豫起來了。不過自己這趟是專程為招牌蛋包飯而來,若不點的話,究不是白來了?掙扎了一會後,最後還是叫了它,加上一個牛肉燴汁伴食....Lunch Set除了蛋包飯這主角外,其餘的配菜是做得甚出色的 ---- 好像這道簡簡單單的粟米湯,入口夠熱騰騰的味亦極香甜。喝之時想起愛corn soup的太太。如她在的話必然要追加兩三碗才行,就算是加錢亦在所不惜....沙律並不是很求其的奉上如撈雜碎般的各款菜類而是一道較少見的以南瓜及松子作料的。南瓜蓉很清甜;松子則脆卜卜的,再加上用醋浸過帶微酸的紅蘿蔔絲,結合來吃是起著很好的化學作用,將之預先雪凍後再拿出來品嚐,實乃消暑妙品也....我想許多朋友亦略知日

我想許多朋友亦略知日式蛋包奄列飯是有兩派做法 ---- 一是真正的用雞蛋包裹著加了茄醬炒過的米飯,另一款則是用蛋蓋在飯面的。這裡的是採用了後者的做法。吃落蛋的而且確無花無假的既有蛋香而又滑溜得很
,查實光是看到那流出來的蛋汁以及鮮黃的顏色已是先聲奪人了,愛蛋之人確是不可錯過的;茄汁炒飯相反卻是略嫌味調得太酸了
;飯本身用的是略帶韌性的日本米,缺點是弄得有點過濕而變得糊糊的。這種像是在吃糊仔飯的口感,自己一向是甚討厭
;燴汁微有肉香且帶酸,很令人開胃,但若以燴汁再與茄汁飯拌勻的話,結果就是濕撻撻的一片了
....

蛋與醬汁做得很好,但米飯就太不濟

這兒的凍咖啡甚輕易便能攫取別人的歡心的,原因乃在於連冰塊本身也是用咖啡弄成的,就算是喝至最後亦不會變淡。這一種貼心的製法,想不讓人支持也難了

漢堡肉混入了不少洋蔥,多了一層口感,減低了肥膩感。牛肉味都算香濃,扒也做得夠鬆軟,肉汁做得不錯,加了茄汁,所以帶一點酸味,但配上有薯粒的薯蓉就很吸引。

少不了的是奄列飯,也要了伴肉汁。

一大塊金黃色的奄列放在茄汁炒飯上,賣相很可愛。相比用蛋包著飯,小妹更喜歡這種做法,因為當切開蛋,蛋汁流到在飯上,拌著吃更有一番滋味!

炒飯帶有少許肉粒,微酸很濕潤,小妹倒覺得與蛋汁很匹配,可能跟我喜歡吃”軟”飯有關
。蛋本身調味不多,所以要用肉汁伴著吃就剛好,一客飯的份量也不少,吃下吃下都撐了!

For some odd reason,小妹一直心思思想要一杯酒,最後還是要了杯Gin Lime(雖然明顯跟奄列飯不配)。老實說這裡的drink menu比food menu更豐富,日式小店的風格也很適合朋友們飯後繼續吹水~小妹相信在不久的將來,當這店紅起來,香港會有更多奄列飯的後起之秀!

12點半等左九個字先有位, 叫左野食成2點半先有野食, 幾好食都係假的。滑蛋係好滑; 但30小時炆牛幾舊幾水得個「稔」字毫無味道實在叫人流淚。更加唔使講D野飲...尤其係因為等左咁耐...尤其係因為遲我地起碼半粒鐘先入座既其他兩枱顧客叫左同我地一樣既野食都可以比我地早15 分鐘有得食!WAITER係咁SAY SORRY, 但好好的星期六午飯乜穩都無晒。結果食左半粒鐘就閃人!諗諗下....係啦!佢仲俾少個沙律我添呀!激鬼氣! 但我已經向完全無同佢追ORDER 既心情下走人!!

是不是真的選上用牛面肉,老實說我不太吃得出來。但牛肉的確燉得頗軟腍,肉汁也做得很不錯,有肉味之餘還帶點紅酒的香氣,著實不錯。這客牛面肉免費配備麵包,但如果要飯的話則要另加費用了。

不過,後來看到食友的相片,明顯地我們今天的份量是減少了,而且牛肉大部份都是肉碎,以這個價錢吃今天的貨色,定價有點過高了。

最後,是Homemade Cheese Hamburg,漢堡混入了不少洋蔥,漢堡上再鋪上一層芝士,熱力使得芝士溶化,輕輕用刀一切,香氣四溢。

漢堡做得還算結實,爽口的洋蔥還帶有點點辛辣,配合芝士的味道還算不錯,喜歡濃味的也可點配肉醬汁。旁邊的茄汁意粉是大配角,十分快餐店的感覺,份量也不多,當作填飽肚子用就算了。

這一次的與秀同行,個人覺得最精彩的還是奄列飯的蛋。其他方面不是不好,但感覺還可以更進一步,可能也和廚房人手不足有關。

如果你對日本有思鄉情結,想一止蛋包飯/奄列飯的毒癮,秀殿應該可以成為你的良藥。

侍應安排我坐在近窗的吧枱位置..

等了瞬間, 先來一碗雜菜湯..
size 很少, 只吃了雜菜 : 西芹, 洋蔥...還有甚麼..已經忘記了...
味道偏酸, 湯不濃稠, 平庸得很...


環顧四周, 尚有6 位客人在等候食物..
看見廚房裡的女廚師忙得不可開交...不過仍然掛著笑臉...
完全樂在其中...

跟一些只顧皺著眉頭, 目露兇光的廚師相比...起碼心理質素好..
才會造出美味的食物來...

前後只是等了10分鐘, 我的飯便烹調好了..比預期快..
沙律伴隨飯一起送來,
沙律看樣子已不是薯仔沙律, 而是類似kfc 的菜絲沙律..份量很少..
賣相亦很粗製濫造...

omelette 蛋的size很大...
吃了一口, 有蛋香之餘還很嫩滑..
個人覺得比 coco 優勝...

飯本身已混入醬汁, 吃了一口...味帶酸, 肉味只能隱約感受到..
至於飯粒...真估不到..居然跟coco 一樣, 真是太淋了..
完全沒有口感...像用多了水煲出來的飯,無牙婆絕對有能力吃

整個飯只有2-3 顆牛肉碎..真是要用"碎"字來形容, 不留心吃可能會忽略了...


唉..3 個失敗之處:
1. 凡飯配上濃汁, 質感實不應該過淋...變得糊糊的..

2. 蛋包飯只有2 款, 一款已經是蕃茄汁..
另一款就不應該又是帶酸的汁...兩者口味太接近..
亦把用心煮成的牛肉汁白白浪費了, 只吃到 "酸"...
讓不喜歡吃酸的客人沒有選擇


3. 加上餐湯又是酸, 沙律又是酸..

味道變得納悶兼單調...

希望在設計主菜與配菜時能有點改進..
明白到因人手關係, lunch time 只供應set..
但對我這些只喜歡吃主菜的客人..就少點選擇了..

由於人手有限,上菜速度需時,大家要有心理準備,不過以吃快餐的標準來這裡用餐。我們的第一道小食,是豬肉醬麵包。豬肉醬其實不俗的,不會只得個凍字,而是仍保持點肉的味道,塗麵包吃是幾適合的。可是麵包多是很多「窿窿」,操作起來不太方便。

到了主食,打頭陣的是流心芝士漢堡扒配意粉。芝士成份未算很豐富,流心程度亦有欠壯觀,但漢堡扒本身是挺不錯的,肉汁豐盈,質感鬆軟,重點更是在於那肉汁。至於意粉,份量不多,也只是謹合格的配角。

再者是三十小時燉牛肉,亦是我期待的一味。這花心機花時間的項目,牛肉鬆化得無話可說,即使沒牙齒的老婆婆也可以放心享用。而且,不是得個腍字,肉味十分濃郁,是值得返兜的一款。又由於肉汁了得,那紅蘿蔔及西蘭花也顯得吸引。

終於到了兩款主角 – 奄列飯。先講配蕃茄汁的那款,用刀破開奄列,蛋汁尚算豐盈,滑溜亦帶點蛋香,米飯則有點咬口,組合微酸的茄汁,味道是可以,但跟心目中的預期,仍是有點距離。

另一款的奄列飯是配以牛肉燴汁,蛋的質素都是不相伯仲,不再重複,但配以牛肉汁之後,層次明顯豐富得多,因此大家都認為此款更為出色。

夠了,又是吃甜的時候,四種口味的雪糕全部給我們吃勻。柚子味的質感軟綿,感覺清新,當中又混入了柚子皮,很是對辦;雲尼拿的則稍為太甜;黑芝麻的味道濃郁;綠茶味也很清醇。

雖然等候的時間是長了一點,但食物質素和服務也是可以,而且大家食吓傾吓,又是十分開心,對此店的印象是正面的。

He said in English, with his heavy accent, that “many people walk in and no reservation. So I asked if it was wise to go at 2 pm. He then said the last order is at around 2 o’clock and they may not have a table for us. I was surprised that this guy did not sound he wanted us to go at all.

At 1230 hours, we walked into the restaurant. The place was very small, but it was not even half full. There was an emptied table for 4, and 2 small tables for 2 were also vacant at the far end. A young man behind the bar asked how many of us and I said 4. He then said no table. I asked him what happened to those emptied tables. Then a man who appeared to be the boss came to me and said in English, with heavy accent, that all tables were reserved for customers. I told him that I called earlier this morning and I was told that they did not accept reservation. He then repeated no table. Aided by his body language, his attitude held no reservation that he wanted us to leave. Then he simply ignored us and walked away. I was too shocked to react and I asked the young guy behind the bar that I was told this place would not accept reservation, and customers just walk in and try their luck. Now we came all the way from Central only finding out that there was no table for us because we did not make a reservation. This guy’s answer really blew us out of the water. He said those empty tables were reserved a month ago. Then even him ignored us and walked away.

This place may supply good food. However, very few customers are willing to accept good food but no service. If the owner thinks that he is already making good business and no new comers are required, then he is making a big mistake. This was the first time we visited this place, and certainly is also our last time as well. I will also share my terrible experience with my relatives, friends, and colleagues so that they won’t be treated unreasonably.

眼見的蛋漿十分金黃,半融的蛋汁顯得十分幼滑
再俯前一聞,但蛋香似乎未夠濃郁
奄列入口是滿口濕潤的口感,質地軟綿
再吃底層的炒飯,原來是用喼汁炒過的,帶點微酸
伴飯的牛肉汁,味道也十分香濃,牛香配上酸酸的炒飯,十分美味
唯一不足的是蛋香略欠,炒飯和醬汁的濃香有點喧賓奪主之感

而是芝士只會在漢堡面上融化(那又為什麼叫流心呢?有點莫名其妙)

除了肉,還加入了大量的洋蒽粒
入口肉質鬆軟,口感十分豐富,若牛味可以再香濃一點就十全十美了
伴飯的肉醬也十分香口,這裡的醬汁確是做得很不錯

值得一讚,正當漢堡扒準備上枱時,侍者發覺芝士未處於半融狀態
其實我們也收貨的,不過侍者仍堅持拿回廚房再造
這種日廚專注專業,力求完美的廚藝精神,的確值得學習

最後是整個午餐的戲肉所在 – 三十小時燉牛肉
是午市套餐中最昂貴的一客,道理就在於其以牛骨及大量蔬菜熬製而成的肉汁
熬製三日的肉汁,入口鮮甜濃郁,單以這伴飯已贏盡掌聲
最精彩的還未止於此,其經過三十小時慢燉的牛肉,入口是極其的鬆化軟腍,肉味也十分濃郁
一客有約五至六粒,份量不是很多,但以質取勝!

想不到一心來品嚐奄列飯,會有那麼多的意外驚喜
其中以其慢燉牛腍肉更是不可錯過
服務質素就有如一般傳統日店的細心誠懇
雖是套餐,也只是即點即製的,所以人多的話等候時間會比較長一點
但等待的是美饌,值得的!

建議先訂枱!

Lunch Set選擇不多,我點的是香滑奄列飯定食(蕃茄汁)($98),朋友便Order了流心芝士漢堡扒定食($128)。可能日本人的用餐節奏與香港人不同,眼見餐湯明明早就預備好,卻要在點餐大約十分鐘後才緩緩送上,後來的Main Course也是在點餐大約半個多小時後才來到,幸好我倆並不趕時間,正好可以享受一下日本人的節奏。

是日餐湯是薯仔湯,薯仔煲得很蓉可惜略嫌不夠熱,由於我和友人坐於近廚房的Bar枱位置,所以喝完湯後百無聊賴,便可趁機細看「蛋包飯是怎樣煉成的」。廚師只有一名,是女廚師也是日本人,看著她熟練地把蕃茄炒飯放入模中堆出一個個完整的飯團放於碟上,然後再把煎好的流心蛋隨隨放上,放歪了,便用雙手推好那半液體狀的蛋才加上蕃茄汁,眼看著此情此境仿佛感受到她待食物如藝術品的尊重。

蛋包飯有兩類,一類是飯包在蛋內,另一類是把蛋煮至半熟,然後把流心蛋放在飯面,待上碟時才把蛋切開,讓濃郁的蛋汁流入飯粒與飯粒之間;秀殿的蛋包飯則屬後者。

主角登場後,我便急不及待用刀把流心蛋切開,不過可能我只在中間輕輕切了一刀,所以蛋汁未能如想中澎湃地湧出來,建議大家把切了一刀的流心蛋再往左右翻開,好讓藏於蛋中心的蛋汁能全部流出。至於蛋下的蕃茄炒飯個人認為太濕,沒有了炒飯的鍋氣,口感有點糊;By the way,原來炒飯裡混入了少許煙肉,不吃肉的我便只好把它們遂一挑開了。最後,蕃茄汁亦不過不失,酸酸甜甜蠻開胃,奈何鮮茄下滿是不知是油是水的液體,感覺有點肥膩。

至於朋友的流心芝士漢堡扒定食,看上去此乎份量很小但其實剛剛好。而流心芝士漢堡其實並非指漢堡扒有芝士流出,只是在漢堡上放上半溶的芝士而已。據朋友的轉述,認為漢堡扒口感不錯,雖然牛味不重但卻Juicy十足,而芝士份量亦不多,味道不會過濃。

朋友點的凍咖啡,用的也是由咖啡冷藏而成的咖啡冰,冰溶掉咖啡味還在;而我的熱檸水只有一片檸檬,但原來店主事先已搾了檸檬汁於杯內,店主的細心,值得一讚。

秀殿的坐位很少,而且侍應全是日本人,感覺就像店主為了讓日本朋友能在港有一聚腳處而開。這天下午,店內有兩三枱日本女食客,她們邊吃邊放聲大聊特聊,整個餐廳都充滿著一句又一句的日本語,東瀛味十足。不知是我大食或是日本女孩胃口小,離開時看見她們的飯都剩下了大半沒吃,而我卻把碟掃得乾乾淨淨,難怪日本女生都能那麼苗條呢!

P.S......
1) 由於店內坐位有限,有興趣去試的話,記得預早致電訂位。以這天為例,瞬眼看來店內七成位置都已擺放了Reserved的牌子,午膳途中亦有三四名食客因未有訂位而Walk-in位置又已坐滿而百走一趟。 此外,餐廳的營業時間亦很「架勢」,星期一至六的午飯時間(12:00-14:30)過後,要到晚上(18:00-22:30)才繼續營業,逢星期日休息,所以小心摸門釘!

2) 回家看回照片時發現,餐廳的Menu把「Omelet」串成 「Omlet」,不禁令我疑惑是翻譯的錯誤,抑或是真有其字呢?

Its really a kitchen hidden in CWB to be honest, I would have never realized until I was told. So went there for lunch, ordered Original Cheese Hamburg Set (limited) set first. The Soup was pumpkin soup, well balanced creaminess and pumpkin texture, but a bit too sweet. Then comes the hamburg patty. It was very good, it was crisp on the outside with melted mozzarella and a very juicy patty. You may think it is really heavy with the cheese and meat, but actually it is at light as you can get, because

1. the patty is really soft and juicy
2. there are onions in the patty that cut the greasiness
3. the sauce, which I suspect is also the demi-glace sauce, has a bit of acidity which helps to keep it balanced

oh and the sauce, it is a key player itself, it tastes different to the hamburg patty, but it doesn't over power the patty itself, so that you have more combinations in the dish.

meat X rice, meat X sauce, sauce X rice, and of course my favourite meat X sauce X rice

then since it was nicely executed my gf suggested we should order another dish. So Omelet on rice with tomato sauce.

since it wasn't ordered with the first dish and the place starts to fill up they forgot my salad and soup in this set.....


but the eggs


OMG it was f good. I have to say it is plain and simple, fried rice with egg omelet topped with bacon and tomato sauce. But it boosted the flavour of the egg really well. The egg omelet technically speaking is scrambled egg wrapped in a fried egg.

The egg itself is slightly flavoured, you can feel the smell, sweetness and smoothness of it.

It is another story when you cut the omelet open and let the egg's juices to mix with the bacon and tomato sauce and the fried rice. It like ice cream and chocolate they just match on a chemical level. On a taste bud level it makes me hungry as I am typing it now, or may be because it is almost dinner time.

But if you are going to have both. You should have the omelet on rice first, then the Hamburg set.

And always book.

大家都愛喝湯, 又對是日精選的薯仔湯($42)感興趣大, 點上兩碗對分剛好。 忌廉湯不會太稠, 奶味香濃, 未見薯仔粒, 反而每口都是薯蓉, 綿密順滑, 沒有怪怪的麵粉味, 當中加入一些煙肉碎, 更富咸香油潤, 是個不俗的開始。

芥末薯仔銀魚柳沙律($45)看起來不多, 三兩口已可吃光。 薯仔切成大粒, 粉糯又帶點爽身, 又有鬆化的感覺, 滿有嚼感, 本身酸甜的蛋黃醬混入芥末籽後和銀魚柳後, 變得更誘人更有個性, 只嫌份量少了一點, 未免有點意猷未盡。

自製芝士漢堡扒($118): 一道極富日式風味的主食, 面層盡是溶化芝士, 與煎至金黃微焦的漢堡牛肉緊緊地貼著, 令人為之心動。 未吃已打上很高的底分, 入口果真鬆軟細嫩, 仍有肉汁的存在, 不會軟得像糕一樣, 彈彈的。 件碟的茄汁意粉酸度高, 煙韌有咬口, 我當然善用來拌上汁吧!

作為話題之作的蛋包飯最遲才上檯, 只因是逐分去準備去煎, 的確花上不少心機和時間, 而事實又証明我們沒有白等。索價近百的蛋包飯, 看來有點少貴, 然而吃過後總會覺得物有所值的。

蛋包飯伴牛肉汁($98): 賣相和名字有點不一樣, 奄列未有將飯藏著, 而是一件半圓形的奄列伏在炒飯上, 最引人注目的非那呈淡黃色的蛋莫屬, 從裂開的位置來看, 蛋汁似是想破皮而出一樣, 一流出便不可收拾。 牛肉醬汁就像燒肉汁一樣味道較重, 滿口肉香, 實愛濃味人士必選, 與清新的番茄醬相較, 這會是濃味一點, 但又出奇地又不會感到很口乾。

蛋包飯伴番茄醬($98)同樣擁有精巧的賣相, 心要馬上用刀切開, 蛋果是幼嫩非常, 輕輕一搖就見其在晃動, 蛋汁豐盈。 蛋味濃郁, 有陣自然的甜味, 丁點兒腥味也不覺。 番茄醬煮得較濃稠, 酸度平易近人, 跟底下的炒飯同吃簡直有幸福的感覺, 珍珠米未算煙韌好嚼, 但又不會腍得可怕。

咸胃得到大大的滿足後, 那甜胃怎麼辦? 本想到別處再吃甜品, 但見這裡有雪糕,各$30/球, 一問之下, 是日供應著四款口味, 乾脆每種味道一球好了。

柚子一向予人怡人之感,, 本以為會是雪葩的質感, 但竟如雪糕一樣軟綿, 微黏口, 果香清新不感人工, 入口細滑, 沒有絲毫苦澀味。

綠茶味也是不可缺的, 奶味與茶味有著平衡點, 不會搶去各自的風頭, 甜度得宜,
又甘苦味又不會過重, 難怪有種魔力令人吃過不停。

另一大路的黑芝麻味同樣受到大家的力推, 芝麻味香濃非常突出, 麻香充斥在口腔, 實在出色。

雲呢拿算是四者之中較普通, 但奶味挺香且真實, 甜度較其他高, 也算是清新一下。

這頓飯不經不覺吃上近三小時, 大部份時間都用在等待, 但見其出品用心巧製, 也沒有太多的怪責, 也無謂太急燥, 付上多點耐性也是應該的。

The omelet rice in Japan is one of the many I miss everytime, having tried many 'alternatives' here is finally one I would recommend, it's the top rated but the taste and texture is compatible with the standard one. It's been a long time since I wrote foodie's comment, but this little Japanese 洋食's style restaurant has inspired me to write again. The place is run by Japanese with a lady chef. I think they use local ingredients, that's why the taste is not authentic enough, but it has captured the solunof omelet rice, soft, melty with the aroma of egg, yet, the tomato sauce was too veggie taste and the rice is not chewy enough, I would it was a bit too moist, a slight twist on these would be appreciated.

Worth a they, will come again
