潮汕菜, 間唔中都會好想去吃, 想起打冷、凍鵝片、已經食指大動. 早前與好友去到位於尖沙咀金馬倫道的金凡, 好熱鬧! 有像大排檔般的氣氛, 但就有冷氣, 坐得舒適.  等待美食期間, 我們喝金凡自家製的檸檬特飲, 唔是死甜, 酸度及甜度好平衡, 值得encore.小吃點了潮洲獨有的金不換炒薄殼, 這小吃…令人又愛又恨, 肉沒多, 但佐酒一流, 金不換的味道突出, 啜殼就是樂趣.韮菜鵝紅, 要吃就要吃鵝紅, 微辣的, 好過癮!要惹味的菜式, 必數椒鹽墨魚, 脆漿夠薄, 墨魚肉仍然爽滑. 叫人期待的有玻璃乳鴿, 一向對乳鴿沒太大熱衷, 然而這個皮脆似炸子雞、多汁肉滑兼帶少少甜, 確實有驚喜~ 好澎湃~ 全枱人, 無不讚嘆!!! 第一次見咁大碟的生醃有羔蟹, 從色澤看來, 已經很新鮮.  隻隻爆膏、啫喱狀的肉質彈牙、醬汁咸度又剛剛好, 吃得好開心! 最誇張是蟹蓋, 多膏到食極都有! 若有興趣的話, 則需預訂啊~ 潮汕脆皮咕嚕肉, 有菠蘿的菜式, 特別讓人喜歡~ 有新鮮的香甜菠蘿食, 咕嚕肉都幾鬆化, 唔錯~潮洲菜不少得滷水錦繡拼盤, 這份也很大. 鵝肝幾油潤, 介乎粉與爽之間; 豆腐看來很普通, 但吸了醬汁又夠滑; 另外有爽彈鵝腸、爽滑墨魚及鵝片, 堅正!欖菜豆醬炒時蔬, 翠綠爽口, 調味可以濃些少, 但整體也好味.從未看過一個餐館做芝麻雞放如此多份量的呀!!! 芝麻多得誇張, 皮薄脆而肉嫩, 好香, 充滿肉汁, 吃起來特別好味.鼠殼粿拼奇脆丸子 兩者同樣吸引! 先說粿, 就像糯米糍, 但外皮較煙韌, 咬下也是軟糯; 奇脆丸子內有奶皇, 與粿相比, 絕不遜色~ continue reading

由細到大都好鍾意食潮州菜,當年蝸居屯門時,接太太放學都差不多10點打後,好多時都會去打冷,兩個人不外乎一碗韭菜豬紅,一條大眼雞,一碟蜆肉,兩碗白粥,在路邊的寒風中,說說笑笑閒話家常,溫馨滿滿的。家陣坊間已很小見路邊店,但潮州菜早已登堂入室,百花齊放。今次同幾位朋友在尖沙咀飯聚,店內燈火通明,衛生情況不錯,而且有廂房,如果怕給別人打擾,都是一個好選擇。前菜普寧炸豆腐($88)潮州菜中好少機會失手菜色,雖然未至於外脆內軟,但記得蘸點一下豆醬,鮮味會更加提升。韭菜鵝紅($98)鵝紅好入味,軟彈的質感好好,韭菜份量可以多些少更好,因為個人喜好沾滿了汁液的韭菜。炸大腸($128)當然無順德菜館做得好,但已經不錯,夠香口同脆。生醃螄蚶($138)老老實實,真係好多人未必夠膽食生醃菜色,尤其是係螄蚶,不過偶爾食一兩隻都無妨,味道又幾鮮。鹵水錦繡盒(鵝片、鵝肝、鵝腸、墨魚)($518)可以一口氣食均鵝片、鵝肝、鵝腸、墨魚、豆腐及紅腸,不想每樣點一整碟的朋友,拼盤未嘗不是一個好選擇,滷得啱啱好,而鵝肝同鵝腸更是個人愛好,肥美軟滑,正。龍頭魚煎蠔仔餅($ 188)龍頭魚其實係白飯魚,炸得又的確夠鑊氣,外脆內軟,澆點魚露,更加是佐酒良伴。芝麻雞一隻(預訂$398)雞皮的確勁脆,灑上芝麻更香口,雞肉亦不覺老,有水準。紅米牛肋骨($488)炆煮得夠稔,肉味濃郁,尤其是筋膜位油香滿滿,佐酒一流。鐵板XO醬魚標魚扣($188)真係要儲好多條魚先可以炒到一碟,夠鑊氣,魚標有嚼口,有XO醬加持好惹味。火焰鹽燒海螺($402/ 9位)絕對是抵食及必食出品,螺肉勁大隻,柔韌有嚼勁,每口都有酒香,就連尾位都好入味。避風塘炒蟹($680/約1斤)賣相好澎湃,蟹肉亦帶有陣陣辛辣味道,炸蒜勁香口,真係好想拌白粥食。 continue reading

喜歡吃海鮮的朋友,約齊朋友一起去金凡潮汕菜就對了,潮汕人喜歡吃海鮮,更以烹調海鮮見長,海螺、生醃蟹、魚標魚雲魚扣等等,就等我帶大家用五感體驗一下潮汕菜啦﹗先來個大受歡迎的滷水錦繡盒,滷水味鮮香醇厚,滷得入味;鵝肝每件都好完整,口感細嫩油潤、鵝腸爽脆、鵝片肉嫩有油香、爽滑墨魚片及嫩滑的滷水豆腐,瞬間已被清碟。涼伴魚皮,微麻辣加上爽彈口感,就連平日不吃魚皮的我也吃不停。韮菜鵝紅,帶點微辣,加上爽彈又香口的椒鹽鮮魷,佐酒一流。朋友們更特意點了S-Class Original Beer原漿啤酒,加上用靴型啤酒杯來飲用,特別開心﹗重頭戲一定是生醃有羔蟹,每隻都有大量橙黃色的蟹膏,入口嫩滑回甘,肉質則如啫喱般,吸滿醬汁,鹹鮮有序,記得必須要預訂啊﹗火焰鹽燒海螺(8位),上桌後澆上酒點火,既可帶出海螺自身的鮮甜味道,同時又帶有酒香,美味﹗再來一道令鄰桌都忍不住偷望的菜式,除了鐵板的吱吱喳喳,還有其撲鼻的香氣,鐵板XO醬魚標魚扣,爽滑惹味。最挑起我好奇心的,是這碟玻璃乳鴿2隻,我以為乳豬才有玻璃皮,想不到乳鴿也能做到呢﹗皮脆肉嫩又有肉汁,美味﹗一輪熱氣美食後,來杯金凡自家製的檸檬特飲,清甜帶微酸,好解膩呢﹗  continue reading

同一班朋友打完羽毛球,附近搵咗間潮州菜館一試,真係有啲驚喜!一入去,環境好舒服,裝潢簡單但有味道,令人感覺好放鬆,完全唔似喺繁忙都市中。店員服務態度超好,親切得超有人情味!講返食嘢,炸蠔餅真係好正!外脆內嫩,咬一口就好似開咗一扇海洋之窗,蠔味十足,食完一口又想再嚟一口,根本停唔落嚟,真係食到我想唱歌!炸大腸雖然冇內餡,但外皮炸得酥脆,口感意想不到,食到我忍唔住笑出聲,心諗:「咁好味,點解唔早啲嚟?」椒鹽九肚魚都好好味,香脆可口,調味剛剛好,唔會太鹹,食到我連骨都想吞落肚,真係好似食緊一場海鮮派對!至於魚膘雖然有啲硬,但味道都幾好,店員知道呢點後,仲主動送咗甜品俾我哋,真係好有心,食完甜品仲可以甜蜜蜜咁離開,心情好到不得了,簡直係「食得開心,心情好」!最令我驚喜嘅係咕嚕肉,外面酥酥脆脆,裡面又軟,酸甜醬汁包住每一塊肉,真係食得好開心,完全唔想停手,心諗:「咁好味,唔食完唔返家!」整體嚟講,呢間潮州菜館無論係菜品定服務都好滿意,真係值得一試!即使夜晚臨近餐廳關門時間去都無問題,係聚餐嘅好地方,肯定會再返嚟,仲要帶埋朋友一齊嚟,大家一齊開心食,開心到笑到肚痛! continue reading
