今日同朋友去深水埗買嘢,順便去麵屋丸京食拉麵。環境都幾好,有吧檯同二人座位,都算寬敞,不會逼仄。呢間麵啲分量好多,還好彈牙,口感一流。真叉燒啲肉係肥瘦適中,用慢火煮嘢,還切得薄薄一片,味道好似火腿,好特別。普通叉燒就係普通肉味,但肉嘅口感是好,新鮮肉嫩。總有我最中意啲流心蛋,蛋黃黃燦燦好正。湯底我哋叫左清湯同濃湯。清湯湯底清清甜甜,濃湯比較油膩。假如喜歡重口味,桌檯有蒜蓉,辣椒醬供選擇調味。餃子係自家製,現包現煎,好新鮮,味道都好。

出黎買完野順便食個晏先返去,拉麵控朋友話要食拉麵,就到左麵屋丸京,兩點半入座唔使等,店內都有六、七個食客㗎,估唔到平日下午都幾有人氣喎。坐低左張二人枱,枱上有餐具,調味料等,仲有冰水一壺,各樣野都好乾淨,摸落無黏手,衞生做得好落完單就望下廚房個邊,得兩個店員,見佢地又煎又炸又淥麵,好忙呀。點左極上拉麵(清湯)&丸京拉麵(濃湯),個賣相幾正,梗係要打個卡先朋友嘅極上,叉燒六片再加溏心蛋,成個碗被叉燒掩蓋,哈哈。清湯底很鮮味,味濃但不覺膩,好正。自己碗丸京,用得店名的招牌拉麵喎,好期待呀,同樣被六片叉燒掩蓋住,但就分別係叉燒同真叉燒,試下有咩分別先。呢碗要左濃湯,入口勁重豬骨味,飲落會黏口添呀,好濃郁好正!真叉燒望落微微粉紅色,用慢煮方式,入口軟嫩富肉味,感覺有點像火腿,好味。普通叉燒有火灸香,相對真叉燒稍稍有點鞋口,但都係好好味嘅。麵條掛湯有彈性,不錯。朋友再加左碟餃子,煎得香脆,皮薄餡料鮮味,正呀~完食,好味好味

真叉燒因為係慢煮,煮得冇普通叉燒咁熟,食落更嫩口。普通叉燒邊位微焦,食落比較香。色澤方面,真叉燒較鮮紅,普通叉燒較白。
濃郁嘅蝦湯底,食落好香。加上脆蝦乾🦐,食落更有口感。因為湯底夠濃,濃稠得足以依附在麵條之上,形成「掛麵」效果。

有6塊普通叉燒,鋪喺麵上成一朵花嘅形狀。同丸京拉麵一樣都有蛋同筍。溏心蛋做到有流心效果,味道一流!😋店員推薦朋友食到咁上下可以加辣椒醬,唔會太辣,又幾好味喎~😋

丸京拉麵分別有傳統叉燒加慢煮叉燒,傳統叉燒雖然冇慢煮叉燒咁有入口即溶既感覺,但煎香了外層則多了一份嘅肉香。而蝦湯真係非常好,飲得出用咗好多蝦煮,非常香濃,同配合櫻花蝦,使到成碗拉麵都非常好食,麵條掛湯能力亦做得好好,份量都好夠。

我諗很多人都同我一樣,見到menu上寫住真叉燒, 會諗究竟乜嘢係真叉燒呢?當我一路諗,一路自言自語,店員就走嚟同我講,真叉燒就係慢煮叉燒,咁認真做叉燒拉麵,一定要試下啦有兩款拉麵都有真叉燒, 分別是丸京拉麵和真叉燒拉麵, 丸京拉麵($100)有三片真叉燒和三片普通叉燒, 真叉燒拉麵($108)就全部都係真叉燒,加$12可以轉醬油蝦湯大大片的叉燒非常吸睛, 而慢煮總是和肉鮮細嫩扯上關係, 果然真拉麵的肉質細滑, 切得又夠薄, 有入口溶化的感覺,和普通叉燒確實有些差別再講湯底,超級濃厚,另加$12轉醬油蝦湯又的確值得,很多的櫻花蝦,非常鮮味,造就了非常鮮濃的湯底連同糖心蛋也值得欣賞, 不單是煮得剛好真糖心,顏色充滿光澤,蛋味濃郁香甜,發現原來係用靚蛋,唔怪得知啦
