第一道菜分上下兩層,第一層係涼拌魷魚,加入左black pepper和日本海膽。魷魚係刺身,口感會有嚼勁。而第二層會見到煙霧彌漫嘅感覺,入面其實係yellowfin tuna tartare,加入左日本白海膽和mushroom broth和mayo,吞拿魚充滿鮨香又有海膽嘅鮮甜。


配搭西西里Wiegner嘅白酒,帶點微酸和果香。

龍蝦採用新鮮法國南部Brittany藍龍蝦,加上italian salad,矜貴黑魚籽和香脆嘅kale葉做裝飾,分左三份放落波浪形嘅白色碟度。醬汁則左龍蝦頭煮成嘅龍蝦汁,龍蝦味道相當新鮮又鮮甜,又黑魚籽又令到鮮味提升到另外一個層次。第二款酒Mozia' Grillo味道會比較light和refreshing,同鮮味嘅龍蝦配搭得好好。

第三道菜係一道濃湯,加入左多款海鮮製成,中間有要顆白色嘅魚肉球,湯底非常濃郁鮮甜。配搭嘅Bressan橙酒,橙紅色嘅酒身相當迷人,味道充滿果香和帶少許焦糖嘅味道。

cod和sea bream,帶魚肉嘅鮮甜同烏魚子嘅咸香形成一個強烈對比。第四款嘅I Favati Terrantica Etichetta Nera有果香味如apple and bear又有少許果仁嘅味道。

店員向我展示未煮嘅Carabineros red prawn ,顏色橙紅色又通透,足足有兩隻手掌咁長。接著廚師會返回廚房加上海鹽做調味,最後會加上秘製醬汁(用蝦頭和蝦醬 ),更加突顯紅蝦嘅鮮甜味。配搭Tenuta Stella嘅紅酒,有cherry嘅味道又有橡木嘅香氣,味道非常優雅。

最後甜品充係Sorrentina cream 泡芙,加入檸檬,口感同味道都比較輕盈和清新。配搭我最鍾意嘅Moscato,金黃嘅顏色又有蜜糖嘅味道,同泡芙配搭就完美。

雖然食左三個鐘,但係完全唔覺得時間嘅流逝,一道比一道有驚喜,又有醉人嘅黃昏和夜景,實在好浪漫。

Lunch with friends at sky-dining level 101... I didn't know what to expect but definitely not this.  We enjoyed the 6-course meal by chef romeo and were thoroughly impressed.. .especially by the carbineros prawn! It was bigger than my hand. The level of skill that went into the meal is incredibly obvious. The view and the staff certainly made the experience very enjoyable too. Good to enjoy for a special occasion, your friends will be so impressed with your choice

出自法國布列塔尼的藍龍蝦外殼就好似藍寶石噤💎,身份十分矜貴罕有!加上不易捕獲,而且法國人本身又喜歡食用,所以一直以來都甚少出口,只會喺香港貴價餐廳出現。我一向覺得好食嘅海鮮,用蒸嘅方法就最能保持原汁原味,藍龍蝦肉質嫩滑,細膩而甜美,沾上以蝦頭煮食嘅醬汁,配上焦糖洋蔥,新鮮嘅蔬菜粒同魚子醬,層次豐富而相輔相成,完美體驗咗意大利浪漫細膩嘅特點!

西班牙紅蝦是野生深海蝦,生長在水深500m-2000m的大西洋東部至地中海深海中,以海藻和豐富的礦物質為食糧,體型一般有15-25cm長.Carabineros是最大的紅蝦. 紅蝦質素相對西班牙最頂級和最有名,所以叫作西班牙大緋紅蝦!超級IG able! 紅蝦嘅size同一支叉差唔多長度,簡簡單單用海鹽焗,配上蝦頭蝦膏同蕃茄煮食嘅醬汁,伴碟有自家製嘅蛋黃醬,濃郁香氣撲鼻,蝦身非常之鮮嫩,生熟程度控制得啱啱好,十分之好味,出色!

唯一嘅一支紅酒,帶藍莓黑加倫子味,都係比較容易入口,微甜微酸嘅口感

Sorrentina cream puff with Amalfi lemon

乳酪泡芙,配上檸檬醬中和膩度。用上阿瑪菲檸檬,在意大利生長在阿瑪菲海岸,厚皮常用於甜點,帶濃郁檸檬香氣,完美為餐飯作結。
