Venison 一個display 得好豐富嘅牛肉他他. 基本上每一道菜都有小葉用黎裝飾(小葉!🌱),喺呢度就唔詳細講。奶白色既係pickled蘿蔔,令到菜式嘅味道更加concrete. 第一次食tartare配開心果同埋南瓜籽,tartare有一層cold oil,而且餐廳用aged ox 去整,所以食落唔係嫩口/ 入口即溶既感覺,係有啲嚼勁

作為一個中意茶既人,每杯drink我都好期待😌玄米茶+柚子 聞落飲落都好smoky. 同牛係超夾. 雖然柚子中和到之後嘅custard,但因為佢帶acidity and sparkling,反而覺得呢一杯同seaweed Custard唔太夾

可以話係成餐飯唯一完完整整見到嘅meat. The waitress said after roasting, the duck will be rested 12 hrs to absorb back the juice; other than the sauce on top, the Beetroot 係第三個層次. 可惜鴨同紅菜頭都唔係我特別fancy既食材,冇太大感覺

老友請食生日飯,訂了這間連續幾年獲米芝連推介,主打用有機食材做的新派fusion 菜。這裡不但環境舒適安寧,食材和廚師的手藝都新穎有趣,菜式不但充滿創意,而且賣相富藝術感。午餐除了餐前小食外,前菜、主菜和甜品每道菜式也提供3個選擇,而份量也恰到好處,每上一道菜,服務員都耐心地給我們介紹食材和烹調方法,給我們帶來視覺和味覺上的享受。上甜品的時候,更給我送上驚喜——插上蠟燭的一塊蛋糕和附着全餐廳員工簽名的祝福卡!

車厘茄都是自家種植,中間圍著的手打醬帶有少許海鮮腥味,沖淡本身車厘茄那種強烈的果甜,平衡得不錯也是開胃之選

最近新換上的House Roll,面層抹上薄薄的蜂蜜再配搭牛油來吃,簡單又好吃

特意加錢來試試的北海道帶子,同大家一般食到嘅日本帶子好唔同,望落去好似啫喱,但咬落去口感爽滑彈牙之餘,同時食得出帶子嘅鮮味,更令人意外嘅地方係佢配上自家秘製青口x發酵白蘆筍醬汁,令成道菜特顯示海鮮嘅鮮味

𓂅 Main / butter poached salmon with cucumber, potato and roe in mussel cream
三文魚本就是Ready-to-eat的狀態所以只是輕輕烤過面層,底下的半熟口感嫰滑,伴碟的醬汁加上了魚子增添咬口同魚腥,也挺讓人印象深刻

𓂅 Dessert / roasted chicory root custard tart with taiwan vanilla ice cream and molasses
以超好吃的甜品作一餐的總結,撻帶少許芝麻那種沙沙的口感,原諒我沒吃過chicory root不知道如何形容才好,而伴碟的雲尼拿雪糕真的好好好好吃🤍 面層塗上啡色、味道似是蜜糖的Syrup,甜度跟奶香適中,絕對令人回味無窮

p.s. 當日來慶生還有另一件生日蛋糕,雖然味道還是比不上menu上的,但誠意滿分呢!

朝鲜蓟的一种,口感滑溜似土豆,但没有土豆的淀粉感。羊奶芝士以一己之力扛起了所有调味,也许是松露布丁味道太突出,这两道都觉得有点寡淡。

食材和味道都挺好,就是外表太朴实了。鱼肉细嫩微弹,带着柔润的奶香,泡沫打得不错,漫出蘑菇的鲜味和蒜香,垫在鱼下面的土豆块有点硬。

黄油海盐面包卷随着第二道主菜一起上桌,没明白用意何在,虽然好吃,但更想念过去的苏打面包。烤热后面包表皮油亮发脆,内里柔软似棉被,奶香浓郁喷张,黑糖黄油依然封神。

14天熟成鸭肉刷上百花蜜烘烤,肉香更加奔放,口感更加紧致,柔韧到能飙汁。颜色如红酒一样深邃的酱汁是鸭骨熬出来的,可谓浓缩了鲜味的精华,但跟大部分法餐酱汁相比它完全不腻,红菜头的点缀又很清新。

极速冷冻芝士碎搭配无花果酱和麦脆做成的清口甜点,雪花一样纷纷扬扬铺在碗中,入口即化的轻盈质地也很像伸出舌头舔雪,但感觉吃了个寂寞。

蜂花洋甘菊小蛋糕搭配草莓汁,终于来了个造型诱人的,搅打奶油中融合了薄荷,甜蜜与清爽的优雅平衡。

【Off-menu的海盐焦糖慕斯】
都准备结账了没想到还有彩蛋,外形像一块加厚版的金币巧克力,搭配原汁原味的苹果茸和苹果汁,可盐可甜还带点俏皮的微酸,瞬间和寻常可见的海盐焦糖慕斯拉开差距了。

时隔一年再次造访,氛围依然舒适放松,虽然就是灯光餐桌餐具拍不出高级感。上菜比较慢,态度挺热情,水杯里从来不会少于二分之一,但桌边服务的细节还可以多注意。临走时被送了四周年的伴手礼,提了一路小多肉和巧克力曲奇。

仔細睇你會見到scallop上面有一層white asparagus (google: 白蘆筍只在春天收成,相當稀有,因而又有「皇子蔬菜」的美譽)所造既薄膜,令到scallop帶點爽甜又帶點garlic oil既煙薰。老實講今餐最難忘係佢,要加錢但好值得點!

Roganic剛在香港開張的時候, 主打的除了Farm-to-Table的本土蔬菜作食材外, 相當抵食, 連加一也只需要三百元的三道菜Lunch Set也深得我心. 時移世易, 地址不變, 但通貨膨脹關係, 現在午餐也要五百多元起跳. 吃了多次, 還是覺得它的鴨胸在香港Fine Dining界的處理, 是One of The Best. 外皮香脆帶焦糖層, 肉質比一般的嫩, 纖維幼細而沒有筋, 皮肉間脂香甘淳, 配上花醋和Jus結合的Dressing, 鮮香中又不會太膩.除了鴨胸, 它的麵包也很得我歡心, 由開張到現在也沒有Sourdough的份, 而且焗得很酥香, 內裡口感鬆軟的傳統軟包, 再加上帶有焦糖香味的牛油, 味道直接而純粹. 頭盤的蕃茄內裏是由蠔打成的Cream, 同樣是清新和濃烈中取得不錯的平衡. 加點的帶子刺身配上buttermilk和野蒜組合而成的凍湯, 口感彈牙, 味道比想像的更柔和, 被頭盤的蠔香稍微蓋過, 有少少可惜. 甜品是菊苣撻, 由烤菊苣製作而成的Custard, 味道是咖啡和黑朱古力的結合, 甘苦帶焦香, 少了一般朱古力撻的膩度, 味道有趣之餘, 感覺更

除了鴨胸, 它的麵包也很得我歡心, 由開張到現在也沒有Sourdough的份, 而且焗得很酥香, 內裡口感鬆軟的傳統軟包, 再加上帶有焦糖香味的牛油, 味道直接而純粹. 頭盤的蕃茄內裏是由蠔打成的Cream, 同樣是清新和濃烈中取得不錯的平衡. 加點的帶子刺身配上buttermilk和野蒜組合而成的凍湯, 口感彈牙, 味道比想像的更柔和, 被頭盤的蠔香稍微蓋過, 有少少可惜. 甜品是菊苣撻, 由烤菊苣製作而成的Custard, 味道是咖啡和黑朱古力的結合, 甘苦帶焦香, 少了一般朱古力撻的膩度, 味道有趣之餘, 感覺更健康.

Roganic has been at CWB for long time and it has become a star restaurant once it opened. The fine dining cuisine here is more healthier and she can change your perception that Britain has no good food. The most impressive one is the duck breast and roasted chicory tart that cannot easily found at other fine dining places.

在香港食fine dinning有好多,但要好食又要價錢合理(晚餐$1000左右一位),選擇真係唔多。呢間餐廳,可以係其中一個選擇。Roganic 的晚餐一個set,每位$1000左右。份量係食得飽,男仔食完唔怕要去食個拉麵填飽個肚。素食人士可以提早同餐廳講,佢哋都會盡量安排差唔多味道的素食食材取代原本的食材,令素食人士都有個full dinning experience。因為fine dinning,個menu 未必一樣,所以我都唔多講,但個面包同牛油都好正。另外,餐廳有自己種菜,所以食材都新鮮的。如果冇食過fine dining, 呢個都算入門的餐廳。
